Yield 2

Number Of Ingredients 8

4 bone-in chicken thighs
¼ teaspoon salt, or more to taste
¼ teaspoon ground black pepper, or more to taste
6 tablespoons powdered peanut butter (such as PB2®)

⅛ teaspoon garlic powder

Steps:

  • Season chicken thighs on both sides with salt and pepper.

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Transfer chicken thighs to an oven-proof dish.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, 35 to 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

EASY THAI CHICKEN

Easy Thai Chicken image

So sticky, so tender, so moist and just packed with so much flavor. And it's an easy peasy weeknight meal, made in 30 min or less!

Provided by Chungah Rhee

Yield 8 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. Then broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with peanuts and cilantro, if desired.

BAKED BONELESS SKINLESS CHICKEN THIGHS

Baked Boneless Skinless Chicken Thighs image

In this easy recipe, a spicy rub and 30 minutes in the oven produce reliably juicy boneless skinless chicken thighs.

Provided by Vered DeLeeuw

Categories     Main Course

Time 40m

Number Of Ingredients 9

2 lb. boneless skinless chicken thighs
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon sea salt)
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • Preheat your oven to 400 degrees F.
  • Place the chicken thighs in a large bowl. Add the olive oil and spices and use your hands to coat the chicken pieces.
  • Arrange the seasoned thighs in a single layer on a rimmed baking dish, such as a 9 X 13 baking dish. If there's some residual oil and spice mixture in the bowl, brush it on top of the chicken pieces, as shown in the video below.
  • Bake until cooked through, juices run clear, and an instant-read thermometer inserted into the middle of the largest thigh reads 165ºF. In my oven, this takes about 30 minutes.

  • Slowly blend the soy sauce into the peanut butter in a jug or medium bowl, then blend in the coconut milk & stock/corn flour. Stir in the garlic, ginger, honey, rice vinegar & chilis.
  • Arrange the chicken thighs in a large baking dish (I use 9 x 12 inch), then pour the sauce all over them.
  • Cover with aluminium foil and bake for about 35 minutes or until the chicken is cooked through and the sauce bubbling and thickened a little. 10 minutes before the end of cooking time, remove the foil, spoon the sauce all over the chicken again and then return to the oven uncovered - you might need to cook longer depending on the size of your chicken thighs (see notes).

Transfer the chicken to a plate. Add the shallots and red peppers. Saute for about 8 minutes until caramelized and tender, stirring often.
  • Bruise the lemongrass with the back of your knife and add it to the skillet, along with the fresno chile, garlic, ginger, and crushed red pepper. Cook for another minute or so.
  • Stir in the peanut butter, coconut milk, and chicken stock. Mix well and bring to a simmer. Add the chicken back to the skillet. Simmer on low heat for 10 minutes, or until the chicken is cooked through.
