If you can absolutely help it -- don't leave out the fenugreek. It might be tricky to find, but it has a sweet, maple-like taste and gives this spice blend its exoticness.

2 teaspoons paprika
1 teaspoon turmeric
1 teaspoon coarsely ground black pepper
1 teaspoon ground coriander
1 teaspoon ground fenugreek
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/8-1/4 teaspoon cayenne powder (to taste)

Steps:

  • Combine well and store in an airtight container. Note: I use 1/8 teaspoon of cayenne because I have small children who freak out over spicy food. Use more if you'd like it spicier!

1 tablespoon fresh ground white pepper
1 tablespoon fresh ground black pepper
1 tablespoon ground dried hot Thai red chili pepper (to taste)
2 tablespoons dried lemongrass (ground powder)
2 tablespoons dried lime zest
2 tablespoons garlic powder
2 tablespoons ground ginger
2 tablespoons dried mint
2 tablespoons toasted unsweetened coconut, ground
1 -2 tablespoon brown sugar (optional)

Steps:

  • Process all ingredients in a food processor or bash together with a pestal and mortar. Seal in an airtight container.
  • (Tabitha's Tip: The little spice jars with rubber gasket seals keep herbs fresh longer than jars with screw-on tops.).

1 Tbsp freshly ground white pepper
1 Tbsp freshly ground black pepper
2 Tbsp dried lemongrass
2 Tbsp dried lime zest

2 tablespoons loose-leaf black tea
1 piece star anise
2 pods cardamom
Optional: 1/2 cinnamon stick
Optional: 1/8 vanilla bean
Optional: ground tamarind (to taste)
Optional: 1/4 teaspoon almond extract
1 cup water (boiling)
1 tablespoon sugar
1 tablespoon sweetened condensed milk
2 teaspoons evaporated milk (or coconut milk or whole milk)

Steps:

  • Gather the ingredients.
  • Steep the tea, star anise, cardamom, cinnamon stick, vanilla bean, tamarind powder, and almond extract (if using) in the boiling water for 5 minutes.
  • Strain the tea.
  • Stir in the sugar and sweetened condensed milk until both are completely dissolved.
  • Fill 2 tall glasses with ice.
  • Pour the tea over the ice, leaving an inch or so of space at the top for the evaporated milk.
  • Top up with more ice if needed, and then drizzle with 1 teaspoon of evaporated milk on each glass of tea.

This curry powder recipe makes one of the best curry powders you'll ever try. It's also fun to put together and can make a wonderful gift.

Number Of Ingredients 8

3 tablespoons coriander (whole or ground)
2 tablespoons cumin seed (whole or ground)
1 tablespoon turmeric (ground)
2 teaspoons ginger (ground)
1 to 3 teaspoons chili flakes (or cayenne pepper depending on how spicy you want it)
1 teaspoon white pepper (whole or ground)
3 bay leaves (lower stem removed)
1 whole clove (or a pinch of ground)

Steps:

  • Gather the ingredients.
  • Place all of the ingredients in a dry frying pan over medium-high heat. Stir continuously for 1 minute, or until pan is very hot. Then reduce heat to medium and continue stirring 6 to 10 minutes. This will lightly toast the spices, leaving them even more fragrant and tasty.
  • Remove pan from heat and tip the spices into a bowl to cool. Meanwhile, prepare your grinder. If using a coffee grinder , you will need to wipe it out very well with a damp cloth or paper towel to remove all traces of coffee.
  • Place the toasted spices in the grinder and grind well to make your curry powder.
  • Use to season your favorite dish and enjoy!
  • Stir together all of the ground spices-omitting the bay leaf until you cook your curry. Toast in a pan using the same method-for several minutes over medium heat, or until fragrant but not burnt.
  • When cooking with this curry powder, be sure to add 1 to 2 bay leaves to your curry pot.
  • Enjoy!
