PORK SATAY WITH THAI SPICES AND PEANUT SAUCE



Pork Satay With Thai Spices and Peanut Sauce image

Throughout Southeast Asia, little skewers of marinated meat, grilled over coals, are sold as street snacks. Sweetly fragrant with coconut milk and spices, they are perfect for barbecue parties served with steamed rice, or on their own with drinks, whether grilled indoors or out. You may use pork loin or tenderloin, but marbled sirloin or shoulder is more succulent.

Number Of Ingredients 30

1 1/2 pounds pork loin, tenderloin or shoulder, sliced into thin rectangles (1/4 inch x 1 inch x 2 inches; you should have about 24 pieces)
1 shallot, minced
2 garlic cloves, minced
1 tablespoon grated ginger
3 tablespoons chopped lemongrass
1 teaspoon cumin seeds, toasted and ground
1 teaspoon coriander seeds, toasted and ground
1 1/2 teaspoons turmeric
1/4 teaspoon cayenne
1 tablespoon fish sauce
1 tablespoon lime juice
2 teaspoons soy sauce
1 tablespoon brown sugar
1/2 cup coconut milk
Cilantro and basil leaves, for garnish (optional)
1 pound Persian or Japanese cucumbers, peeled, halved and cut into 1/4-inch slices
1/2 teaspoon salt
2 tablespoons lime juice
2 tablespoons granulated sugar
2 small shallots thinly sliced, about 1/4 cup
2 fresh Thai or serrano chiles, sliced into rounds
1 cup dry roasted peanuts, unsalted
2 cloves garlic, chopped
1 teaspoon soy sauce
2 teaspoons sesame oil
2 tablespoons brown sugar
2 tablespoons fish sauce
2 tablespoons lime juice, more to taste
1/8 teaspoon cayenne
1/2 cup coconut milk

Steps:

  • Prepare the skewers: Put pork in a mixing bowl. In a separate bowl, stir together shallot, garlic, ginger, lemongrass, cumin, coriander, turmeric, cayenne, fish sauce, lime juice, soy sauce, brown sugar and coconut milk, and pour over meat. Toss with your hands to coat well. Let marinate for at least 30 minutes or overnight. Meanwhile, soak 12 bamboo skewers in water.
  • Prepare the cucumbers: Put cucumbers in a mixing bowl and season with salt. Add lime juice, sugar, shallots and chiles and toss to coat. Let stand for 15 minutes. Check seasoning, then transfer to a serving dish.
  • Prepare the peanut sauce: Pulse the peanuts briefly in a food processor just until finely ground. Add the garlic, soy sauce, sesame oil, brown sugar, fish sauce, lime juice, cayenne and coconut milk, and process until well puréed. Transfer to a bowl, then taste and adjust seasoning. Thin a bit with lime juice or water as desired.
  • Thread 2 slices of pork onto each bamboo skewer, keeping the meat as flat as possible. Grill over hot coals, under the broiler or on a stovetop grill pan for 3 minutes on each side, until cooked through and lightly browned. Transfer to a platter and garnish with cilantro and basil leaves. Serve with cucumber relish and peanut sauce.

A fast, old-school street food, this dish can be found all over Malaysia and Indonesia. Its origins seem to point back to Java in Indonesia, where the concept of kebabs was brought by Muslim traders from India and Arab countries. Peanuts were introduced by Spanish and Portuguese explorers and they thrived in the tropical climate, which is why you see them used in so many garnishes and sauces there today.

1 level teaspoon medium curry powder
½ level teaspoon ground cumin
1 heaped teaspoon turmeric
3-4 fresh chillies
2 cloves of garlic
5 cm piece of ginger
1 bunch of fresh coriander (30g)
6 tablespoons crunchy peanut butter
2 tablespoons low-salt soy sauce
6 spring onions
4 limes
8 free-range chicken thighs, skin off, bone out
1 handful of shelled peanuts
groundnut oil
¼ of a watermelon (1.5kg), or 1 ripe pineapple

Steps:

  • Gently heat the curry powder, cumin and turmeric for 1 minute in a dry pan on a medium heat.
  • Deseed 2 chillies and peel the garlic and ginger. Place in a blender with the toasted spices and coriander (reserving a few nice leaves in a bowl of cold water for later).
  • Add the peanut butter, soy sauce, the green parts of the spring onions, the zest of 2 limes and the juice of 3. Blitz until almost smooth, loosening with a few splashes of water, if needed, then taste and season to perfection.
  • Cut each chicken thigh into 4 pieces and toss with half the satay sauce. Divide and thread onto 4 skewers and marinate in the fridge for at least 2 hours, but preferably overnight.
  • If you're using a barbecue, get it going 1 hour before you want to cook. If you're using a griddle pan, cut your wooden skewers to fit and preheat the pan.
  • Get a garnish plate together - drain the coriander leaves, finely slice the whites of the spring onions, finely slice the remaining chillies and wedge up the remaining lime. Toast the peanuts in a dry pan until golden, then crush and add to the plate.
  • When you're ready to cook, oil and lightly season the chicken on both sides, then place on your medium-hot barbecue or griddle pan. Cook for around 15 minutes, or until beautifully gnarly and golden, turning regularly.
  • Serve on a platter with the rest of the sauce on the side. Sprinkle over the garnishes and slice up some nice ripe wedges of watermelon or pineapple to serve on the side - heavenly.

Bamboo skewers, soaked in cold water for 2 hours
1 cucumber, cut into small pieces
1 small onion, quartered
oil, for basting

2 cloves garlic, peeled
6 small shallots or pearl onions, peeled
2 teaspoons turmeric powder

Steps:

  • Cut the chicken meat into small cubes. Set aside.

1 tablespoon grated fresh ginger root
4 cloves garlic, crushed
2 tablespoons minced onion
¼ cup packed brown sugar

Steps:

  • Place ginger, garlic, onion, brown sugar, fish sauce, vegetable oil, soy sauce, coriander, cumin, turmeric, and cayenne pepper into a mixing bowl; whisk into a smooth marinade.
  • Bruise lemon grass by hitting it lightly several times with the back of a large chef's knife; mince the lemon grass and add to the marinade.
  • Cut beef sirloin into strips about 2 1/2 inches long and 1/8 inch thick. Thoroughly mix the beef into marinade until all beef strips are completely coated, about 1 minute. Cover bowl with plastic wrap and marinate in refrigerator for 2 to 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove beef from marinade and shake off excess marinade. Thread 1/4 the meat onto each metal skewer.
  • Arrange skewers on the preheated grill and cook until the meat stops sticking to the grill, about 1 to 2 minutes. 2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced

1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste

1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar

Steps:

  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. 2 blocks extra firm tofu (~500g)
10 skewers (soaked in water for 30 mins if wooden)
1/2 cup coconut milk
1 heaped tsp red thai curry paste
1 tbsp maple syrup
1 tbsp soy sauce
1/2 tsp garlic granules
1/3 tsp salt
3/4 cup coconut milk
1/2 cup smooth peanut butter
1 heaped tbsp red thai curry paste
1 tbsp soy sauce
2 tbsp maple syrup
1/2 cup water
Pinch of salt
Fresh coriander
Chopped peanuts

Steps:

  • Cut the tofu into 1.5 inch pieces and place in a large bowl.
  • Mix coconut milk, thai curry paste, maple syrup, soy sauce, garlic and salt in a bowl. Drizzle over the tofu, toss to coat and leave to marinate for at least 30 minutes.
  • Place the peanut sauce ingredients in a pan and simmer for a few minutes until thickened. If you like it thinner just add a splash more water. Pour into a small bowl to serve later.
  • After half an hour, place the tofu pieces onto skewers. I made 10 skewers with 3-4 pieces on each.
  • Heat a griddle pan on medium high heat with a little oil . Place the tofu in and cook for a few minutes on each side until charred.
  • Pour over any remaining marinade over the top before flipping. Depending how big your pan is you may need to do it in two batches.
  • Sprinkle with some fresh coriander, chopped peanuts and peanut sauce!

1/2 onion, chopped

2 tablespoons hot water
1 tablespoon vegetable oil

  • Hint: If you slice beef while partially frozen, it slices thinner and easier for you.
  • Soak wooden skewers for 25-30 minutes prior to preparing food.
  • Blend marinade in a blender until smooth.
  • Thread strips onto wooden skewers and place in large shallow dish; pour marinade over meat and let sit for 60 minutes to 2-3 hours, refrigerated, turning sticks occasionally.
  • Combine sauce ingredients in saucepan and bring to a boil, stirring; remove from heat and cool; then pour into small bowls.
  • Broil, grill, or BBQ kebabs at high heat, (white coals, heated broiler, etc.), until meat on kebabs is cooked through, not more than 5 minutes.

2 lb chicken thighs (boneless skinless )
2 tablespoons soy sauce (gluten-free if needed)
1 tablespoon fish sauce
1 tablespoon coconut sugar
1 tablespoon lime juice (fresh is best)
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon finely minced ginger
1 clove garlic (finely minced)
2 teaspoons coconut oil
1 small onion (minced)
1 teaspoon finely minced ginger
2 cloves garlic (minced)
½ cup canned coconut milk
3 tablespoons peanut butter
1 tablespoon soy sauce (gluten-free if needed)

1 English cucumber (sliced into half moons)
¼ cup red onion (sliced very thin)
2 tablespoons mayonnaise (try homemade mayo)

Steps:

  • Cut the chicken thighs into bite-sized pieces. Mix the remaining ingredients for the chicken in a medium-sized bowl then add the chicken pieces and stir. Let the chicken marinate on your counter for 15 minutes. While the chicken is marinating, make the satay sauce and cucumber salad - recipes below.
  • After 15 minutes, take the chicken pieces out of the marinade and thread them onto the skewers. Fold over larger pieces to skewer them twice and help them stay on the skewers better. You'll need 6-8 skewers, depending on how big they are and how tightly you pack the chicken onto them.
  • Preheat your BBQ to medium-high heat then grill the chicken skewers for 5 minutes on each side, or until the chicken is no longer pink in the middle.
  • Start the satay sauce while the chicken is marinating. Melt the coconut oil in a small pan over medium heat. Add the onion and sauté for 5 minutes, or until it is soft and translucent. Add the ginger and garlic and cook for 1 minute more. Add the coconut milk, peanut butter, soy sauce, and lime juice. Let the sauce cook for 1 minute, or until it has thickened. If it thickens too much add a splash of water or extra coconut milk.
  • To make the cucumber salad, mix the cucumber slices, red onion, mayonnaise, salt, and pepper in a medium-sized bowl
  • Serve the chicken on a platter with the satay sauce and cucumber salad on the side and let everyone dig in!

Marinated Chicken Kebabs With a Peanut Satay Sauce image

I have been making this recipe for years and every time I make it I get rave reviews. It really is nothing special, I think, it is just that, the flavors all come together so well and the peanut sauce is so yummy. I make my sauce with smooth peanut butter as I am not a fan of crunchy, but I think this would be fine if you prefer to have the peanut chunks in the sauce.

5 chicken breasts (about 800g in weight.)
8 long skewers
5 tablespoons soy sauce
3 tablespoons lemon juice
1 1/2 tablespoons brown sugar
4 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
2 teaspoons fresh ginger, grated
pepper
1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons soy sauce
3 tablespoons peanut butter
1 cup water
1 tablespoon lemon juice
2 teaspoons curry powder (I use hot curry powder)
3 teaspoons sweet chili sauce
1 large onion, chopped into wedges
8 -16 mushrooms (depends on size if they are large chop in half and you will only need 8 if small and using whole mus)

Steps:

  • Combine all the marinade ingredients together in a large bowl or storage container. Chop chicken into about 2cm cubed pieces, add to marinade and marinate for several hours or overnight.
  • Soak skewers in water for about 30 minutes prior to using to prevent them from burning while cooking.
  • Reserve marinade. Thread a piece of chicken followed by a mushroom, chicken, onion, chicken, mushroom, chicken, onion, chicken. Repeat with remaining chicken and vegetables.
  • Grill or BBQ skewers turning a couple of times and basting with the reserved marinade. Until cooked about 15-20 minutes.
  • I usually use red and yellow peppers as well but as I was serving these over a Thai-style salad that already had peppers in it, I chose to omit them.
  • Sauce.
  • I prefer to make this ahead of time and just re-heat as this allows for the flavors to really come out.
  • Heat oil in a pan, add onions and garlic and cook to soften onion.
  • Add remaining ingredients and stir to combine, leave on a low heat, stirring occasionally until sauce thickens. Sauce can be made a day ahead and just re-heated.

So good, you can eat it plain - but no one in their right mind would skip the Thai Peanut Sauce!Note: Baking soda tenderised beef needs to be thoroughly cooked to be tender. The beef is still a bit chewy if it's medium or less (because we're using economical beef).Top tip: Excellent to grill on the BBQ, or even better, over charcoal for a truly authentic Thai experience.Use leftover sauce for Thai Chicken Satay, Gado Gado (Indonesian Salad with Peanut Sauce) or just douse a bowl of plain rice.   • If cooking on a BBQ or over charcoal, soak skewers for 2 hours in water so they don't burn.

Fire up the barbie and let's get grilling: these beef satay skewers are everything that's great about summer eating. So tender and tasty, they're impossible to resist.

Number Of Ingredients 20

600g (1.3 lb) steak (preferably a tender cut like rib eye, sirloin, strip loin or rump), cut into roughly 3cm cubes
20 bamboo skewers, soaked in water for at least 30 minutes
vegetable oil for cooking
sliced red onion, diced cucumber and coriander leaves (cilantro) to serve
Marinade:
1 garlic clove, finely grated
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp turmeric
1 tbsp dark sweet soy sauce
1 tbsp vegetable oil
1 tsp sea salt
Satay sauce:
1 tbsp vegetable oil
1½ tbsp Thai red curry paste
1 cup coconut milk
2 tbsp crunchy peanut butter
1 tsp fish sauce
2 tsp sugar
3 tbsp crushed roasted peanuts

Steps:

  • 1.In a large bowl, combine the steak with the marinade ingredients. Mix well and allow to marinate for at least 10 minutes or up to overnight. Then thread 3-4 pieces onto each bamboo skewer.
  • 2.For the satay sauce, heat the vegetable oil in a saucepan over medium heat. Add the curry paste and cook for a minute until fragrant. Add the coconut milk, peanut butter, fish sauce and sugar. Stir through the crushed roasted peanuts. Cook for a further minute. Then remove from heat. Taste and adjust the seasoning with more fish sauce and/or sugar. And keep warm or reheat when ready to serve.
  • 3.Heat a barbecue grill plate or non-stick frying pan over medium-high heat. Drizzle with a little extra oil. Cook skewers for 2-3 minutes each side or until cooked through. Serve warm with the warm satay sauce and sprinkled with diced red onion, cucumber and coriander.
