2 tbsp Thai Curry Paste, Red Thai Curry Paste. See Note 2 for homemade paste recipe
1 lbs Shrimp, cleaned, deveined, shelled medium shrimp
14 Oz Coconut milk, unsweetened, organic low-fat lite coconut milk
1 tbsp Sugar
1 Lime
1 tbsp Fish Sauce, See Note 1 for substitutes
1 Red Bell Pepper, cored and thin sliced
1 Cup Mix Vegetables, such as snap peas, broccoli, baby corn
1/4 Bunch Basil, preferably Thai basil
Rice, cooked white Jasmine rice, for serving
1/2 tsp Paprika, sweet or medium, not smoked
Salt, adjust per taste

Steps:

  • Bring to boil 1/2 cup coconut milk in a deep saute pan on medium heat. Add Thai red curry paste, 2 springs of Thai basil (do not chop/tear basil), paprika, and sugar and boil stirring often until paste is fragrant and coconut milk reduces to half. (4-5 minutes)
  • Add remaining coconut milk, and vegetables (See Note 1). Bring to rolling boil on medium heat. Now add shrimp. Cook stirring often to prevent sticking at bottom, for 5-6 minutes or until shrimp turn pink.
  • Take off heat. Fish-out and discard the cooked Thai basil stems (if still intact). Stir-in the fish sauce, 1 tsp lime juice, and remaining fresh Thai basil leaves. Now, taste and adjust salt, lime juice. Serve over rice with extra lime wedges for a delicious Thai Red Curry and rice dinner.

An easy-to-make Thai-style red curry with shrimp or prawns served over jasmine rice.

1 cup jasmine rice
1 pound large shrimp or prawns, (tails on)
2 tablespoons olive oil, (divided)
2 cloves garlic, (minced)
1/2 teaspoon dried red chili flakes
1 small onion, (peeled and diced)
1/2 large red bell pepper, (seeded, diced or sliced)
1/2 large yellow bell pepper, (seeded, diced or sliced)
1/2 large orange bell pepper, (seeded, diced or sliced)
1 14 oz. can (396 ml.) full-fat coconut milk
2 tablespoons fish sauce
2 tablespoons red curry paste
2 teaspoons fresh ginger, (finely grated)
1 tablespoon coconut sugar, (or brown sugar)
2 tablespoons lime juice, (freshly squeezed)
1/4 cup cilantro leaves, (finely chopped)
1/4 cup basil leaves, (finely chopped)
1 green onion, (thinly sliced)
1 medium lime, (quartered, for garnish)

Steps:

  • Begin by cooking the rice. You can either cook it in an Instant Pot (1 cup rice with 1 cup water and a pinch of salt) for 5 minutes with a 10-minute natural release OR use my recipe for Never Fail Thai Coconut Rice, cooked on the stovetop. (link to recipe in Notes, below.)
  • Peel and devein the shrimp or prawns. You can leave the tails on (they add flavour) or remove them first, your choice.
  • Toss the shrimp with 2 teaspoons olive oil, minced garlic and red chili flakes. Set aside.
  • Make the Thai red curry sauce. Combine the coconut milk with the fish sauce, curry paste, ginger, sugar, and lime juice. Set aside.
  • Heat 2 teaspoons oil in a skillet over medium heat. Sauté diced onions and bell peppers until softened but not browned, about 5 - 7 minutes. Remove to a bowl.
  • Add 2 teaspoons oil to the skillet. Cook shrimp (prawns) for a minute or two on each side, just until no longer translucent. Remove to a separate bowl.
  • Transfer the onions and peppers back to the skillet and add the coconut curry sauce mixture. Bring to a boil, then reduce the heat and simmer until reduced by half.
  • Add the shrimp back into the skillet. Stir in half the cilantro and basil leaves.
  • Serve over jasmine rice. Garnish with the remaining cilantro, basil and sliced green onion.

12 ounces squid rings
2 cups coconut milk
1 cup tomato puree
1/2 cup diced red pepper
1/4 cup soy sauce
3 tablespoons white vinegar
2 tablespoons Thai red curry paste
1 cup eggplant
1 cup diced onion
2 tablespoons fish sauce
3 tablespoons sugar
1 teaspoon lime zest
8 basil leaves
3 tablespoons canola oil

Steps:

  • Heat canola oil in a large pot or wok.
  • Add onions and eggplant and cook until eggplant is cooked through (about 5 minutes). Add peppers and cook for 1 more minute.
  • Add shrimp and calamari and cook for 1 more minute.
  • Add rest of ingredients and bring up to a boil while stirring.
  • Immediately turn off heat.
  • Serve with steamed brown rice.

1 lb shrimp, peeled and deveined

Steps:

  • Bring coconut mill to simmer in large skillet over medium heat.

1tbsp vegetable oil
1tbsp ginger & garlic paste
red curry paste
800ml coconut milk
8 skinless, boneless chicken thighs, cut into large chunks
4 lime leaves (ideally fresh)
2tbsp fish sauce
1tsp brown sugar
Thai basil
basil or coriander, plus extra to serve
1 red chilli, sliced diagonally
thumb-sized piece ginger, cut into matchsticks
cooked jasmine rice, to serve

Steps:

  • Heat 1 tbsp vegetable oil in a large saucepan over a medium heat and fry 1 tbsp ginger and 1 tbsp garlic paste for 2 mins. Add 5-6 tbsp red curry paste, sizzle for a few secs, then pour in 800ml coconut milk.
  • Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface.
  • Add 8 skinless, boneless chicken thighs, cut into chunks, and lime leaves, and simmer for 12 mins or until the chicken is cooked through.
  • Add 1 tbsp of the fish sauce and a pinch of brown sugar, then taste - if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar.
  • Bring to the boil, take off the heat and add ½ small pack Thai basil.
  • Spoon the curry into four bowls and top with 1 red chilli, a thumb-sized piece of ginger and a few extra basil leaves. Serve with jasmine rice.

  • Heat oil in a large skillet over medium-high heat. Add bell pepper and onion and cook, stirring, until tender, about 4 minutes. Add Red Curry Paste and cook, stirring, about 30 seconds.
