5 - 6 tbsp Thai Red Curry Paste ((store bought, Maesri best) (Note 1))
1 quantity homemade Thai Red Curry Paste
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated )
1 tbsp lemongrass paste (or finely chopped fresh (Note 3))
3 tbsp vegetable oil ((or canola or peanut))
1 cup (250 ml) chicken broth/stock (, low sodium)
400 ml / 14 oz coconut milk ((full fat!))
6 kaffir lime leaves ((Note 4))
1 tbsp sugar ((white, brown or palm))
2 tsp fish sauce (, plus more to taste)
350g / 12 oz chicken thighs ((boneless and skinless), cut into 0.75 / 1/3" thick slices (Note 5))
150g / 5 oz pumpkin or butternut squash, ( cut into 1.5cm / 3/5" cubes (~1 heaped cup))
120g / 4oz green beans (, trimmed and cut into 5cm/2" pieces)
12 Thai basil leaves ((Note 6))
Fresh red chilli slices ((small chilli - spicy, large = less spicy))
Fresh coriander / cilantro leaves
Steamed jasmine rice

Steps:

  • Heat oil in a large heavy based skillet over medium high heat.
  • Add curry paste and Extras (if using jar paste) and cook for about 2 minutes so it "dries out" (See video)
  • Add chicken broth and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.
  • Add coconut milk, lime leaves, sugar and fish sauce. Stir, then add chicken.
  • Spread chicken out, bring to simmer, then turn heat down to medium. Simmer for about 8- 10 minutes or until Sauce reduces, the chicken is cooked and the sauce is almost at the thickness you want.
  • Do a taste test. Add more fish sauce (or even shrimp paste) to add more saltiness, sugar for sweetness.
  • Add pumpkin and beans, stir. Cook for 3 minutes or until pumpkin is just cooked through and Sauce is thickened - see video for Sauce thickness.
  • Remove from heat. Stir through a handful of Thai basil leaves.
  • Serve over jasmine rice, garnished with fresh red chilli slices and fresh coriander/cilantro leaves, if desired.

3 tablespoons red curry paste
1 lb boneless skinless chicken thighs, cubed
2 -3 Japanese eggplants or 2 Japanese eggplants, cut into 1 inch chunks
2 tablespoons fish sauce
4 kaffir lime leaves, torn into pieces
1/2 lime, juice of
2 fresh red chilies, cut into very thin strips
1/2 cup Thai basil or 1/2 cup sweet basil, chopped

Steps:

  • Heat a heavy saute pan over medium high heat.
  • Add 1/4 can of the thicker coconut milk.
  • When it bubbles, add curry paste and cook for 2 minutes, stirring constantly.
  • Add additional 1/4 can of the thicker coconut milk and cook for 5- 8 minutes, until the oil begins to separate.
  • Add chicken and stir to coat well.
  • Cook for about 4 minutes until the chicken has changed color and firmed up.
  • Add remaining coconut milk, bring to a boil, add eggplant and cook at a simmer, covered until chicken and eggplant are completely cooked.
  • Stir in fish sauce and lime leaves.
  • Cook at a low simmer for 5 minutes.
  • Just before serving, stir in lime juice, chiles and basil.

10 oz (284g) Firm Tofu (pressed for 30 minutes and drained (*see notes for chickpea option!))
2 Tbs Coconut Oil
1 lb (450g) Globe Eggplant (Sliced into 1/2" cubes)
1 C (165g) Yellow Onion (about 1 medium)
2 C (260g) Sweet Bell Peppers (green, yellow or red - or a mix, about two peppers)
1 Tbs Fresh Garlic (microplaned)
1 Tbs Fresh Ginger (microplaned)
2 Tbs Red Curry Paste
1/4 tsp Red Pepper Flakes (optional - about a spicy 4 with it! )
1 Tbs Brown Sugar (or maple syrup)
1/2 C (120g) Vegetable Broth
1, 13 1/2 oz (382g) Can Full Fat Coconut Milk
2 Tbs Tamari
1/2 Lime (juiced)

Steps:

  • While pressing the tofu (see notes for chickpea sub)** preheat the oven to 350F (180C). Slice the pressed/drained tofu into (about) 1" (2.5cm) cubes and place on a parchment or silpat lined sheet pan. Bake for 20 minutes or until golden. This will dry the tofu out. Set aside.
  • In a large Dutch oven, add the coconut oil and heat until it shimmers. Turn the heat to medium high and add the eggplant and onion. Stir fry for about 6-8 minutes or until the vegetables begin to soften. It's okay of the eggplant sticks a bit.
  • Stir in the bell peppers and stir fry for about one minute, just to soften a bit. Add the garlic and ginger. Stir for another minute, scraping the bottom of the pot - the garlic and ginger will start to stick. Add the curry paste and red pepper flakes. Take a big inhale..... ahhhh.
  • Cook, stirring for a minute more, coating the vegetables with the paste. Stir in the brown sugar and deglaze the pot with broth and coconut milk. Stir in the tofu or chickpeas. Bring to a simmer, turn to low and cook for about 10 minutes just until heated through. Stir in the Tamari and lime juice.
  • Remove from heat and spoon over rice. Top with Thai basil, cilantro, and sprinkle with sesame seeds. Serve with additional Tamari and lime wedges.
  • Store in a lidded container for up to three days or up to two weeks in the freezer. Thaw in the fridge overnight and gently rewarm on the stovetop.

1 (14 ounce) can unsweetened coconut milk
3 tablespoons green curry paste
1 lb boneless skinless chicken breast, sliced into thin strips
1/2 lb Japanese eggplant, cut into thick coins
3 kaffir lime leaves
2 tablespoons fish sauce
2 teaspoons brown sugar (or palm sugar if you can)
3/4 cup sweet basil (preferably Thai)
slivered hot chili pepper (amount to taste)
steamed jasmine rice

Steps:

  • Heat coconut milk in wok and whisk curry paste in until smooth.
  • Bring coconut milk to a boil, add chicken, then simmer for 8-10 minutes until chicken is opaque.
  • Add eggplant, lime leaves, fish sauce, brown sugar.
  • Taste for sweetness, saltiness etc, and correct if needed.
  • Continue to simmer until eggplant is tender and chicken is cooked through, about 8-10 minutes more.
  • Stir in basil leaves and chilies and serve with steamed jasmine rice.

1 teaspoon Sea Salt
2 teaspoons peanut oil (divided)
1 large eggplant (peeled and cut into bite-sized pieces)
1 red bell pepper (sliced)
1/4 pound snow peas
1 1/2 cups spinach
2 cups green curry sauce
4 wild lime leaves (optional)
1 teaspoon fish sauce
1 teaspoon brown sugar
3/4 cup Thai basil leaves (chopped)
1 cup bean sprouts
1 lime (cut into wedges)

Steps:

  • Make the green curry sauce. Set aside.
  • Place the eggplant pieces in a colander and toss with salt. Let stand for fifteen minutes to allow any bitter residue to drain off.
  • Heat a large sauté pan over high heat and add 1 tablespoon of peanut oil. Sear eggplant in hot oil until blistered, about 3 minutes. Add the remaining tablespoon of oil along with the red pepper and snow peas and sauté for one minute. Add spinach and toss to wilt.
  • Reduce the heat to medium-low, and stir in basic green curry sauce. Add the lime leaves and let simmer for 5 minutes.
  • Remove the lime leaves with a slotted spoon, and stir in the fish sauce and sugar. Remove from heat and stir in the fresh basil leaves.
  • Top with bean sprouts. Serve with jasmine rice and lime wedges for squeezing.

1 to 2 medium-size steaks
1 can good-quality coconut milk
Optional: 1/2 eggplant (cut into bite-size chunks)
1 red bell pepper (cut into bite-size pieces)
1/3 cup fresh Thai basil (or sweet basil)
1/2 cup good-tasting chicken (or beef stock )
For the Green Curry Paste:
1 stalk of fresh lemongrass (minced, or 3 tablespoons frozen prepared lemongrass )
1 to 3 green chilies (sliced)
1 shallot (sliced, or 1/4 cup diced purple onion)
4 to 5 cloves garlic
1 thumb-size piece galangal (or ginger, sliced)
1 cup fresh coriander/cilantro, (chopped, leaves & stems)
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground white pepper
3 tablespoon fish sauce
1 teaspoon shrimp paste (available by the jar at Asian food stores)
1 teaspoon brown sugar
1 tablespoon lime juice

Steps:

  • Place all green curry paste ingredients together in a food processor, blender, chopper, or pestle and mortar. Add up to 1/4 can of the coconut milk, enough to help blend ingredients (reserve the rest for later).
  • Process (or pound) well to create an aromatic Thai green curry paste. If you don't have a food processor or chopper, try using a blender, or finely mince all ingredients by hand and stir together well.
  • Heat a wok or deep-frying pan over medium-high heat.
  • Add 2 to 3 tablespoons oil and swirl around, then add the green curry paste. Stir-fry briefly to release the fragrance (1 minute), then add the beef.
  • Stir-fry briefly to cover the meat in spices (1 to 2 minutes).
  • Add the stock and bring to a boil. Stir and reduce heat to medium or medium-low. Simmer 6 to 10 minutes.
  • Set aside 1/4 cup coconut milk, reserving it for use later (the thick cream is best). Add the rest of the coconut milk to the curry, plus the eggplant (if using).
  • Stir everything together, cover, and simmer 7 to 8 minutes, or until eggplant is tender enough to pierce with a fork.
  • Add the bell pepper. Cover and simmer 2 to 3 minutes, or until everything is well cooked.
  • Remove from heat and gently stir in the 1/4 cup reserved coconut milk . Taste-test, adding more fish sauce if not salty or flavorful enough.
  • Add more lime juice if too salty or sweet for your taste. Add more sugar if not sweet enough. More chili can also be added.
  • Portion out the green curry onto serving plates or bowls.
  • Sprinkle with a generous amount of fresh basil and serve with plenty of Thai jasmine-scented rice .

2 (14 ounce) cans light coconut milk
2 tablespoons Thai red curry paste

1 tablespoon tamari
1 tablespoon rice vinegar

Steps:

  • Wrap tofu in several layers of paper towels. Place in a colander in the sink. Set a plate on top of tofu and weigh down with a large, heavy can. Let stand for at least 20 minutes.
  • Meanwhile, shake cans of coconut milk well prior to opening. Pour 1/2 of 1 can into a large saucepan. Bring to a simmer over medium heat. Whisk in curry paste until well blended. Add eggplant, onion, and bell pepper, stirring well with a rubber spatula to prevent breaking of tender eggplant during cooking.
  • Stir remaining 1 1/2 cans coconut milk, dark brown sugar, tamari, rice vinegar, and salt into the saucepan. Mix well. Increase heat and bring to a boil. Reduce heat to low and simmer until thickened, about 20 minutes.
  • Unwrap tofu and cut into bite-sized cubes. Stir into curry mixture. Cook until heated through, about 5 minutes. Add peas and cook until warm, 1 to 2 minutes more.
