6 tablespoons mayonnaise
3 tablespoons fresh lime juice
3 green onions, coarsely chopped
3 garlic cloves
1 lemongrass, stalk bottom 4 inches only, sliced
1 teaspoon dry crushed red pepper
3 cups button mushrooms, quartered
1 1/2 lbs ground pork
1/2 cup cilantro, chopped
1 tablespoon fish sauce
1/4 teaspoon black pepper, ground
1/4 cup vegetable oil
6 hamburger buns
3 cups napa cabbage, shredded

Steps:

  • Whisk mayonnaise and lime juice in large bowl. Season with salt and pepper. Cover; chill. Puree green onions and next 3 ingredients in processor unitl smooth. Add mushrooms; process until finely chopped. Transfer to large bowl. Mix in pork and next 3 ingredients. Divide into 6 equal patties.
  • Heat oil in heavy large skillet over medium heat. Fry burgers until brown and cooked through, about five minutes per side. Spread 1 tablespoon lime mayonnaise on bottom of each bun. Place burger atp mayonnaise. Add cabbage to remaining myonnaise in bowl; toss to coat. Top burgers with cabbage mistsure, dividing equally. Place buns tops on cabbage.

1 lime
1 pound ground pork or lamb
5 slices bacon, coarsely chopped
0.25 cup reduced-sodium soy sauce
1.5 tablespoon Thai Hot Pepper Spice Mix
1 large shallot, chopped
3 tablespoon chopped fresh cilantro and/or fresh mint
2 tablespoon chopped lemongrass
1 tablespoon grated fresh ginger
3 cloves garlic, chopped
2 tablespoon light mayonnaise
2 teaspoon Asian chili sauce (Sriracha)
1.5 cup shredded cabbage with carrot (coleslaw mix)
4 sesame hamburger buns, split and toasted
10 teaspoon paprika
2 teaspoon ground corriander
2 teaspoon ground cumin
2 teaspoon ground ginger
2 teaspoon onion powder
0.5 teaspoon cayenne pepper

Steps:

  • Finely shred lime peel (reserve lime). In a large bowl combine the lime peel, pork, bacon, soy sauce, 1 tablespoon of the Thai Hot Spice, shallot, cilantro, lemongrass, ginger, and garlic. Mix well to combine. Form into 4 patties, 3/4- to 1-inch thick.
  • For a charcoal or gas grill, place the patties on the grill rack of a covered grill directly over medium heat. Grill for 10 to 12 minutes or until an instant-read thermometer inserted in burgers registers 160°F. (Or, preheat broiler. Place patties on the unheated rack of a broiler pan. Broil 5 inches from the heat for 10 to 12 minutes or until done (160°F.).
  • Squeeze juice of half of a lime into a small bowl. Add mayonnaise, chile sauce, and remaining spice mix. Stir to combine. Add coleslaw. Toss to combine.
  • Serve burgers on buns topped with slaw mixture. Thai Hot Pepper Spice Mix
  • Shake everything together in a small jar, cover and store in a cool, dark place for up to 6 months.

Grilled Pork Burgers with Creamy Thai-Inspired Slaw image

Pork burgers are naturally tender and juicy and have a unique savory taste. In this flavorful recipe, you'll mix ground pork with traditional Thai ingredients (ginger, garlic, lime, and more). Top the burgers with a slaw that is fresh and crunchy with a simple peanut dressing that makes every bite so good!

1 pound unseasoned ground pork
2 green onions, finely diced
2 garlic cloves, minced
1 jalapeno, seeded and finely diced
1 teaspoon grated fresh ginger or ¼ teaspoon ground ginger
2 tablespoons finely chopped fresh basil or cilantro (or mix of both)
1½ teaspoons coconut aminos or ½ - 1 ½ teaspoons fish sauce
1 teaspoon lime zest
¼ teaspoon black pepper
Pinch of salt
1 cup shredded cabbage
½ cup shredded carrots (1 large)
½ medium red bell pepper (cut into thin strips, then strip cut into thirds)
2 green onions, thinly sliced (light and dark green parts)
2 tablespoons finely chopped fresh basil or cilantro (or mix of both)
2 tablespoons chopped nuts (peanuts, almonds, or cashews)
2 tablespoons peanut butter, almond butter, or cashew butter
2 tablespoon coconut aminos
1 tablespoon lime juice
1 teaspoon toasted sesame oil
1 small garlic clove, minced
1 teaspoon grated fresh ginger or ¼ teaspoon ground ginger
¼ teaspoon red pepper flakes
¼ teaspoon fine salt
Warm water if needed

Steps:

  • Preheat the grill to 425ºF-450ºF. A grill pan sprayed with non-stick cooking spray over medium-high heat on the stove also works.
  • In a bowl, combine all burger ingredients. Use your hands to mix well until all ingredients are incorporated together. Shape burgers into 4 patties, using your thumb to make a slight indentation in the middle of each one.
  • Grill burgers for 9 to 10 minutes on one side, flip, and grill for another 5-8 minutes on the other side, or until cooked to 160ºF internal temp.
  • While the burgers are grilling, prepare the slaw ingredients and place in a medium bowl. In a separate bowl, whisk together all of the dressing ingredients. Pour dressing over slaw ingredients and toss together until well incorporated.
  • To serve, place burgers on buns or lettuce wraps. Top each burger with a generous amount of the slaw, and serve any extra slaw on the side.
