THAI PORK AND VEGETABLE BROTH

Steps:
- Heat a large pan, then add the oil. Add the garlic and scallions and cook over medium heat, stirring for 3 minutes, until slightly softened. Add the bell pepper and cook for an additional 5 minutes, stirring.
- In a bowl, mix the cornstarch with enough of the stock to make a smooth paste and stir it into the pan. Cook, stirring, for 2 minutes. Stir in the remaining stock, the soy sauce, and rice wine, then add the pork, lemongrass, chile and ginger. Season to taste with salt and pepper. Bring to a boil, then reduce the heat and simmer for 25 minutes.
- Cook the noodles according to the package directions. Remove from the heat, drain, then add to the soup along with the water chestnuts. Cook the soup for an additional 2 minutes, then remove from the heat. Ladle into warmed bowls, and serve immediately.

Steps:
- In a deep saucepan, heat garlic in oil until fragrant; add broth, soy sauce, fish sauce, cabbage, carrots, celery, mushrooms, lemongrass, and chilies.
- Bring mixture to a boil; then reduce heat and simmer for 10-15 minutes or until vegetables are tender.
- Adjust seasonings for soy sauce, and fish sauce; then add lime juice and basil; serve.
- Note: As an option you may also add cooked chicken, cooked beef or pork, or raw shrimp to this soup at the end of cooking; for shrimp, just allow enough time for them to turn opaque and curl tight; for meat, just heat through.

- In a large pot, combine the water, pork ribs, cilantro roots, and salt. Bring to a boil over high heat. Once the water boils, reduce heat to medium, cover and continue to boil for 1 hour.
- Once the ribs are fully cooked, strain the contents of the pot through a colander into a large bowl. Remove the pork rib meat from the bone and chop with a French knife. Place the chopped pork rib meat back into the pot along with the reserved broth. Discard the pork bones and cilantro roots.
- PREPARE THE PASTE: Using a food processor blitz the dried chiles, paprika, 2 tbsp garlic, ginger, shallots and shrimp paste. Add the tomatoes and blitz until you've achieved a smooth mixture.
- Heat oil in a saucepan over medium heat. Add the remaining 1 tbsp of garlic and cook until fragrant, 10-15 seconds. Add the tomato mixture and cook for 2 minutes stirring frequently. Add the ground pork and mix well for 5-6 minutes until fully cooked.

- To Make Broth Dry fry galangal, coriander roots, coriander seeds, cinnamon, star anise and peppercorn until fragrant. Add onion and garlic, fry until slightly charred. Add 3L water and bring to boil. Once boiled, add daikon, pandan leaves, chicken, pork and seasoning. Bring broth back to boil, skim off froth from the meat. Simmer broth for 2 hrs, add the remaining 1L water and continue boiling for another hr. Taste the broth and add seasoning if required. Strain the broth and it is now ready for the noodles.
- To Marinate Pork In a bowl, mix the fish sauce, soy sauce, oyster sauce and oil together. Place the sliced pork tenderloin and mix thoroughly. Set aside and marinate for minimum 15 mins to 1 hr.
- To Serve Blanch the noodles, bean sprouts and spinach in boiling water, then separate them into individual serving bowl. In the simmering broth, add in the meatballs and marinated pork, stir them until cooked. Once cooked, divide them evenly onto the serving bowls. Add the fresh Thai basil and pour the broth into the serving bowls. Add fried garlic and oil, top with coriander, pork cracklings and chilli flakes/powder (optional) and serve immediately.

- Heat oil in a large, heavy bottom saucepan over medium heat. When the oil is hot and shimmering, add the lemongrass, onion, cilantro, garlic and 3 tbsp fish sauce. Cook, stirring constantly for 2-3 minutes. Add 1 tbsp Thai Spice Mix and cook, stirring constantly, for 1 minute longer.
- Add the beef and vegetable broth and bring to a simmer. Lower the heat, cover and let simmer to blend the flavors for 10 minutes. Strain the broth into a bowl through a fine mesh sieve. Discard the solids and return the broth to the saucepan. (NOTE: The broth can be refrigerated at this point for up to 5 days.)
- Fill another large sauce pan with water, set it over high heat, and bring to a boil. Add the rice noodles and cook until al dente - about 2-3 minutes. Strain and reserve.
- Bring the broth back to a simmer and add 2 teaspoons Thai Spice Mix, 1 tablespoon green curry paste, the mushrooms, and the bok choy. Cook for 5 minutes, until the vegetables are tender. Add the pork. Cook for another 2-4 minutes, until the pork is heated through.
