- Add water, 1 tablespoon at a time, until desired consistency is reached. I normally use 2 tablespoons for a sauce and up to four if using it for a dressing.

THAI CHICKEN WINGS RECIPE WITH CHILI-PEANUT SAUCE
This spicy Thai chicken wings recipe is made with Thai chili peppers, tossed in a homemade peanut sauce. Big on flavor. Make a double batch! You'll love the peanut flavor.

- Preheat oven to 425 degrees. Set iton broil if you have that option.
- For the wings, clean and pat them dry. Season them with salt, pepper and chili powder.
- Set onto a lightly oiled baking sheet and cook for 45-50 minutes, flipping once about half way through. Keep an eye on them to make sure the skins get nice and crispy.
- While the wings are cooking, make your sauce!
- Start by adding the chopped peppers, garlic and peanuts to a food processor and process to form a paste. OR! If you're like me, use your molcajete and do it by hand.
- Scoop the paste into a small sauce pot and add a teaspoon of oil. Heat to medium and cook the paste about 5 minutes, stirring often.
- Add chicken stock, soy sauce and fish sauce. Stir and reduce heat to low and allow to simmer.
- At this point, you can add in some peanut butter, if desired. The sauce will be fairly thin and that is OK, but you might want it thicker. In that case, add the peanut butter and swirl to incorporate.
- Simmer about 5 minutes.
- Remove from heat and squeeze in a bit of lime juice. Stir.
- When the wings are done, toss them with the Thai chili-peanut sauce to coat them.
- Serve wings with crushed peanuts and some lime wedges.

- Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
- Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.

- Heat the oil in a sauce pan over medium-high heat and cook the onions until soft and translucent, 5 minutes. Add the garlic and ginger and cook for another 2 minutes. Add the chicken and cook for 3-4 minutes. Add the sweet chili sauce, tomato sauce or ketchup, chili powder, peanut butter, and sugar and stir to combine. Add the coconut milk and salt and bring to a boil. Reduce the heat to medium-low, cover and simmer for 20 minutes, stirring occasionally. Add salt to taste.
- Serve over steamed rice garnished with cilantro and chopped roasted peanuts.

- Preheat the oven to 400°F.
- Season the chicken breast pieces generously with salt and pepper and place in a large, sealable plastic bag.
- In a medium-sized bowl, combine the sweet Thai chili sauce, lime juice, soy sauce, peanut butter, ginger, and garlic. Pour enough to cover the chicken into the sealable plastic bag. Close, shake around, and allow the chicken to marinate for at least 30 minutes.
- Remove the chicken from the marinade and place the chicken on a large nonstick baking sheet. Brush the chicken with additional marinade, if desired.
- In a separate large bowl, toss the bell peppers, broccoli, snow peas, carrots, and onion with the oil and about 1/3 cup's worth of the chicken marinade. Season with salt and pepper. Lay the vegetables around the chicken and top with lime wheels. Discard all of the remaining marinade that has touched raw chicken.
- Bake for about 20 minutes, or until chicken is cooked through and the vegetables are tender.
- Drizzle the chicken and vegetables with additional marinade, if desired, sprinkle the chicken with the crushed peanuts, and broil to further crisp the vegetables and toast the peanuts, about 2 minutes.
- Top with cilantro and/or thai basil, and serve over basmati rice with additional sauce, if desired.

- Heat sesame oil in a large skillet over medium-high heat. Add chicken and cook in batches, if necessary, until nicely browned, 5 to 7 minutes.
- At the same time, heat a small amount of water to boiling in a small saucepan. Add carrots and boil until just starting to get tender, about 2 minutes. Drain.
- Heat olive oil in a large pot over medium-high heat; stir in onion, white parts of scallions, garlic, and ginger. Cook and stir until the onion has softened and turned translucent, about 5 minutes.

- In a large dutch oven, heat the olive oil over medium heat, then add the onions, garlic, both peppers and the chilis.
- Cook for 8-10 minutes, stirring until softened.
- Push the onion and peppers over to one side of the pot and then add in the ground chicken to brown.
- Once the chicken is browned through, stir together with the peppers and onions.
- Add the cumin, chili powder and salt then stir to combine.
- Pour in the beer to deglaze the pot, scraping up the bottom as you stir.
- Next pour in the chicken broth, Worcestershire sauce, soy sauce, sriracha and oyster sauce then stir.
- Stir in the peanut butter until it's completely mixed into the chili.
- Add the beans in, stir and let simmer uncovered for 45 minutes to an hour.
