THAI "ORANGE" CURRY CHICKEN

This is by no means a Thai authentic dish. I had a bunch of Thai ingredients in my fridge, and just threw a concoction together and came up with this. It has a LOT of flavor, its spicy, and relatively easy to make.. I hope you enjoy it! :)

2 -3 boneless skinless chicken breasts (cut into bite sized pieces)
1 (14 ounce) can coconut milk
2 tablespoons red curry paste
2 tablespoons fish sauce
1 tablespoon brown sugar
1 1/2 red bell peppers (chopped)
1 tablespoon yellow curry powder
1 tablespoon chili paste
1 1/2 teaspoons lime juice
1/2 teaspoon sweet basil
1 garlic clove (minced)
1 tablespoon fresh ginger (grated or minced)
1/2 onion (chopped finely)
1 tablespoon sweet chili sauce
2 tablespoons olive oil

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add chicken, and cook just until white on all sides (do not overcook). Remove chicken and drain.
  • Add onion, garlic and ginger and cook until transparent.
  • Add coconut milk, then add the rest of the ingredients. Mix well and let come to a boil.
  • Turn down heat to a simmer, and add chicken back into the skillet. Cover and simmer, stirring about every 10 minutes. I usually simmer it for about a half an hour covered, then remove the cover for the last 10 minutes to thicken a bit.
  • Serve over rice, and enjoy!

6 boneless, skinless chicken thighs*
Rub
1 tablespoon olive oil
1 teaspoon ground ginger
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
Sticky Thai Peanut Orange Sauce
1/3 cup low sodium soy sauce
1/2 cup orange juice
1/2 cup orange marmalade
2 tablespoons ketchup
1/3 cup crunchy peanut butter (can sub. smooth)
1 tablespoon rice vinegar
1 tablespoon fish sauce
3-4 tablespoons brown sugar depending on desired sweetness**
1 teaspoon Sriracha/Asian hot chili sauce, more or less to taste
1 1/2 tablespoons cornstarch
Garnish
Chopped roasted peanuts
Green onions
Orange zest

Steps:

  • 1.In a medium bowl, whisk together sauce ingredients. Set aside. 2.Preheat oven to 400F degrees. 3.Mix Rub Ingredients together in a small bowl and rub all over chicken. 4.Melt 1 tablespoon butter in a large oven proof skillet over medium high heat. Add chicken and sear 2-3 minutes per side or until browned. Remove chicken to plate. 5.Add sauce and simmer 1 minute, scraping sides of pan to deglaze. Add chicken back to skillet, and spoon some sauce over chicken. Bake 8- 12 minutes or until chicken is cooked through depending on thickness. 6.Garnish with desired toppings and serve over rice. Notes *I prefer thighs because they are oh so tender but you may substitute boneless, skinless chicken breasts but make sure they are pounded THIN. Adjust baking time accordingly. **I use 3 tablespoons then sprinkle a little brown sugar on the top after baking - so good!

1 ½ cups water
2 tablespoons orange juice
¼ cup lemon juice
⅓ cup rice vinegar
2 ½ tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
½ teaspoon minced fresh ginger root
½ teaspoon minced garlic
2 tablespoons chopped green onion
¼ teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water
2 boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 cup all-purpose flour
¼ teaspoon salt
¼ teaspoon pepper
3 tablespoons olive oil

Steps:

  • Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes.
  • Place the chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours.
  • In another resealable plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil.
  • Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low, add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.

  • Add Marinade ingredients to a large freezer bag and whisk to combine. Add chicken, remove excess air, seal and turn to coat. Marinate 4 hours up to overnight.

  • Grease and heat grill to medium heat. Add chicken, cover, and cook 6-8 minutes per side, or until no longer pink and an inside thermometer registers 165 degrees F.
