1 pound cooked medium shrimp, peeled and deveined
1/3 cup Italian salad dressing
8 ounces uncooked angel hair pasta
1/4 cup chicken broth
2 tablespoons minced fresh cilantro
2 tablespoons chunky peanut butter
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon minced fresh gingerroot
1/2 teaspoon crushed red pepper flakes
1 cup julienned carrots
1 cup chopped green onions
2 tablespoons canola oil
1 tablespoon sesame oil

Steps:

  • In a large resealable plastic bag, combine shrimp and salad dressing. Seal bag and turn to coat; refrigerate for at least 15 minutes. Meanwhile, cook pasta according to package directions. , In a small bowl, combine the broth, cilantro, peanut butter, honey, soy sauce, ginger and pepper flakes; set aside. In a large skillet, saute carrots and onions in oils for 2-3 minutes or until crisp-tender. , Drain and discard marinade. Add shrimp to vegetables; cook for 2-3 minutes or until heated through. Drain pasta and place in a large bowl. Add shrimp mixture and peanut butter mixture; toss to coat.

1/3 cup rice vinegar
1/4 cup sugar
3 tablespoons reduced-sodium soy sauce
2 tablespoons fish sauce or additional reduced-sodium soy sauce
2 to 3 teaspoons chili garlic sauce
2 tablespoons chopped salted peanuts

Steps:

  • Cook noodles according to package directions., In a large nonstick skillet or wok, stir-fry shrimp in oil until shrimp turn pink; remove and set aside. Add onion and garlic to the pan. Make a well in the center of the onion mixture; add egg. Stir-fry for 2-3 minutes or until egg is completely set. , Add the coleslaw mix, green onions, vinegar, sugar, soy sauce, fish sauce, chili garlic sauce and peanuts; heat through. Return shrimp to the pan and heat through. Drain noodles; toss with shrimp mixture. Garnish with cilantro.

1 boneless chicken breast or 1 to 2 thighs* (chopped up into small pieces)
1 tablespoon soy sauce
4 green onions (sliced, keep white separate from green)
3 to 4 cloves garlic (minced)
1 teaspoon grated galangal (or ginger)
1 to 2 fresh red or green chilies (or as much or little as you like), finely sliced
1 egg
2 to 3 cups bean sprouts
Handful fresh coriander/cilantro
1/3 cup roasted peanuts (chopped)
2 to 3 tablespoons vegetable oil
Lime wedges for serving
Pad Thai Sauce:
1 to 1 1/2 tablespoon tamarind paste , to taste (available at Asian/Indian food stores)
1/4 cup chicken stock
3 tablespoons fish sauce

1 pound medium shrimp, peeled and deveined
1 tablespoon olive oil
Kosher salt and freshly ground black pepper, to taste
1 pound linguine
2 carrots, peeled and shredded
1/4 cup dry roasted peanuts, chopped
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro leaves
1/4 teaspoon sesame seeds
1/4 cup reduced sodium soy sauce
2 tablespoons peanut butter
2 tablespoons vegetable oil
2 tablespoon sesame oil
1 tablespoon honey
1 tablespoon brown sugar
1 teaspoon red chili paste with garlic, optional

Steps:

  • In a small bowl, whisk together soy sauce, peanut butter, vegetable oil, sesame oil, honey, brown sugar and red chili paste; set aside. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, salt and pepper, to taste. Gently toss to combine. Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes; set aside. In a large pot of boiling salted water, cook pasta according to package instructions; drain well and return pasta to pot. Stir in soy sauce mixture, shrimp, carrots, peanuts, green onions and cilantro. Serve immediately, garnished with sesame seeds, if desired.

For the Pad Thai Sauce:
1/3 cup chicken stock (good quality)
3 tablespoons rice vinegar (or white vinegar)
1 tablespoon lime juice
3 to 4 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon soy sauce
1/4 teaspoon cayenne pepper
For the Pad Thai:
1 chicken breast (boneless and skinless, or 1 to 2 thighs, chopped into small pieces)
1 1/2 tablespoons soy sauce
8 ounces pad thai rice noodles (rice noodles)
2 to 3 tablespoons vegetable oil
3 to 4 cloves garlic (minced)
1 to 2 fresh red chilies (or green chilies, finely sliced)
1 teaspoon galangal ​(grated, or ginger)
10 to 15 medium shrimp (raw, shells removed)
1 egg
2 cups bean sprouts
4 green onions (sliced)
1 lime (cut into wedges, for serving)
1/3 cup dry roasted unsalted peanuts (chopped)

Steps:

  • Gather the ingredients.
  • Combine the chicken stock, rice vinegar, lime juice, brown sugar, fish sauce, 1 tablespoon soy sauce, and cayenne pepper in a cup or small bowl, stirring to dissolve the sugar. Set aside.
  • Place the chopped chicken in a bowl and toss with the 1 1/2 tablespoons soy sauce. Set aside.
  • Bring a large pot of water to boil. Add the rice noodles and cook approximately 6 minutes, or until soft enough to bend easily but still firm and a little crunchy when you try to eat it (undercooked by regular standards). Drain and rinse noodles briefly with cold water to keep them from sticking. Set aside.
  • Heat a wok or large frying pan over medium-high heat. Drizzle in the oil and swirl around. Add the garlic, chili, and galangal or ginger. Stir-fry 1 minute.
  • Add the chicken and stir-fry 2 minutes. Add the shrimp, continuing to stir-fry until they turn pink and chicken is opaque-about 2 to 3 minutes.
  • When pan becomes dry, add 1 to 2 tablespoons of the pad thai sauce-just enough to keep ingredients frying nicely.
  • Push the ingredients to the side of the pan (if the pan is dry, drizzle in a little oil). Crack the egg into the empty space and stir-fry quickly to scramble.
  • Add the drained noodles plus 3 to 4 tablespoons of the pad thai sauce. Using two utensils, lift and turn the noodles with the other ingredients. Continue in this way, adding more sauce every minute or two, until all the sauce has been added and noodles are chewy and a little bit sticky, 8 to 10 minutes.
  • Fold in the bean sprouts and green onion. Remove from heat and taste-test, adding more fish sauce or lime until the desired taste is achieved.
  • Portion out onto individual plates and add a lime wedge on the side. Top with a sprinkle of chopped peanuts.

This recipe is very simple,very fast and very good. The fresh rice noodles, thick and white, can be found in the refrigerator cabinet of any good Asian grocery store. Don't use frozen marinara mix--the recipe deserves better. Any decent fishmonger will be happy to serve you with half a dozen prawns, a few scallops, some squid, a small fillet of fish, a handful of mussels or any other combination that appeals to you.

rice noodles (thick and white)
1/2 dozen prawns
scallops
squid
1 small fish fillet
mussels
basil leaves
3 birds eye chiles
2 tablespoons oil
2 tablespoons garlic, crushed
2 tablespoons light soya sauce
3 tablespoons fish sauce

Steps:

  • Cut 500g of mixed seafood into bite-size pieces, first removing any shells.
  • If you are using mussels, wash and scrape the shells and open them by putting them in a pot with a little boiling water.
  • Cover and boil for a few minutes, removing each mussel as it opens to prevent overcooking.
  • Chop a handful of basil leaves and seed and finely slice 3 bird's eye chillies.
  • In a frying pan or wok, heat 1 tablespoon of oil.
  • Brown 2 tablespoons of crushed garlic and saute the seafood for a couple of minutes.
  • Drain off the oil and set the garlic seafood mixture aside. Put another tablespoon of oil in the pan and increase the heat. Add 2 tablespoons of light soya sauce and the noodles and saute for 2-3 minutes.
  • Tip the seafood back into the pan and add 3 tablespoons of fish sauce. Stir well.
  • Add the basil leaves and chillies and cook for 1 minute more, stirring.

1 (14-ounce) package Thai Kitchen stir-fry rice noodles
1 lime, juiced
1 Tablespoon sugar
1/4 cup Teriyaki marinade and sauce
2-3 Tablespoons peanut oil or vegetable oil
8 ounces sliced baby bella mushrooms
1/2 medium red onion, sliced
1 jalapeno, sliced (or 1-2 Thai chili, whole)
1/3 cup shredded carrots
1 garlic clove, minced
4-5 fresh Thai basil leaves, thinly sliced (If desired, use Italian basil or lime basil)
1 pound Jumbo shrimp (raw, shell and tail-off), thawed and pat dry
4-5 grape tomatoes, sliced (optional)

Steps:

  • Place water in a large pot and bring to a boil. Turn off the heat and let noodles soak for about 8-10 minutes or until firmly cooked. Drain and set aside.
  • Meanwhile, combine lime juice, sugar, and teriyaki sauce in a small bowl and set aside. Heat oil over medium high heat in a large wok. Add the mushrooms and onions and let them cook for about 2 minutes, stirring almost constantly. Add the jalapeno, carrots, garlic, and basil and let them cook for about 30 seconds, stirring constantly.
  • Add the shrimp and let cook for about 3-4 minutes or just until turning pink, stirring now and then. Stir in the the reserved lime/sugar/sauce mixture and then toss well the cooked, drained noodles. If desired, garnish the dish with sliced grape tomatoes.
