DELICIOUS THAI STYLE MEATBALLS

This is a really yummy recipe I got out of Hello Magazine years ago. The dipping sauce is a must! Serve either as a starter or serve with noodles/stir fry as a main meal. It takes a bit of prep, but is worth it!

1 teaspoon chopped fresh coriander
3 spring onions, chopped fine
1 teaspoon grated fresh ginger
1 garlic clove, chopped fine
1 mild chili, deseeded and finely chopped (optional)
2 tablespoons fresh lime juice
2 tablespoons light soy sauce
1 teaspoon sesame oil
1 tablespoon honey
50 g caster sugar
3 tablespoons Thai fish sauce
450 g ground lean pork
4 spring onions, chopped fine
1 garlic clove, chopped fine
2 teaspoons lemongrass, chopped fine
1 teaspoon cornflour
1 tablespoon finely chopped of fresh mint
2 tablespoons finely chopped fresh coriander
salt and black pepper
1 tablespoon oil

Steps:

  • For the dipping sauce, whisk all the ingredients together and set aside. Start to prepare the meatballs.
  • Gently heat the sugar and fish sauce in a non-stick saucepan until the sugar has melted and mixture starts to thicken. Cool, then stir into the pork mince with the remaining ingredients mixing thoroughtly.
  • With damp hands, roll into 15-20 small balls, place on a plate and chill until ready to cook.
  • Heat the oil in a large non-stick frying pan and fry the meatballs for 15-20 minutes, until brown and cooked through.
  • As an appetizer, serve the meatballs hot accompanied by the dipping sauce. For a main meal, serve with rice/noodles and a vegetable stir fry.
  • You can also freeze the meatballs raw and cook when needed. This works well.

These juicy meatballs full of bright, Southeast Asian flavors would make a great cocktail snack for a party.

Yield 18-20 mini meatballs

Number Of Ingredients 15

1 pound of ground beef. I used grass fed, organic, 85% lean. You can swap it for ground turkey or ground chicken (see notes)
1 inch piece of ginger, peeled and grated
All or part of one tiny Thai bird's eye pepper or jalapeno pepper, minced. I used one red Thai bird's eye pepper.
4 scallions, diced very finely
2-3 limes, zest half of one and use the zest in the meatballs. Slice the limes into wedges for serving.
Handful of fresh Thai basil and fresh mint, diced finely. Regular basil will work too.
3 tablespoons of coconut milk from one full fat can. I like Thai kitchen brand. Try to take some of the coconut cream from the top of the can. You can also use light coconut milk.
Tiny drizzle of honey or pinch of sugar (optional)
Sea salt to taste
Neutral tasting oil or coconut oil for cooking
For Serving: Thai basil, lime wedges, peanut dipping sauce, steamed rice, Persian chopped salad (recipe link for salad in the notes section)
½ cup creamy peanut butter. I use an all natural brand without salt.
1 lime
1 cup of coconut milk, lite or regular. I use full fat Thai Kitchen brand.
Sea salt to taste

Steps:

  • Prepare the peanut dipping sauce by putting the peanut butter in a large bowl and vigorously stirring it with the coconut milk. The large bowl ensures there won't be any spattering. At first, it will look lumpy and watery. Eventually, the 2 ingredients combine into a smooth sauce. Add a few squeezes of lime juice from one lime. Stir in a good pinch or two of salt if you're using a no salt peanut butter. Set aside.
  • Preheat the broiler on high. Line a large baking pan with tinfoil. Spray the tin foil with cooking spray or coat with a drizzle of neutral tasting oil.
  • In another large bowl, add all the meatball ingredients up to the neutral tasting oil for cooking/serving suggestions. Combine the ingredients without overmixing. Wet or oil your hands and form the meatballs into round balls the size of large marbles or walnuts. Place on the prepared baking tray and broil them for about 8-10 minutes. The inside should be cooked through but still very juicy. Serve with the peanut satay sauce, fresh lime wedges and other suggestions. Enjoy!

The meatballs are mixed with garlic, ginger, finely chopped mint and coriander, all brought together with fish sauce, soy sauce and a shot of lime juice and raw honey to balance it all out.

500 grams/1 pound Minced or ground chicken
1 tsp grated ginger
3 cloves garlic (minced)
1 tablespoon fish sauce
1 teaspoon Raw honey
2 tablespoons Coriander/Cilantro (finely diced)
2 tablespoons Mint (finely diced)
1 teaspoon Lime juice
½ cup Panko Breadcrumbs
¼ cup Peanut butter
2 tablespoons Soy Sauce
1 tablespoon Lime Juice
1 teaspoons Garlic (crushed)
I teaspoon Ginger (fine grated)
1 teaspoon Raw Honey
1 tablespoon Sirracha (for a medium level peanut sauce, otherwise use 1 teaspoon for mild)
5 tablespoons Milk (any type)
2 cups purple or green cabbage
1/2 green apple (sliced into matchsticks)
1 small carrot (sliced into matchsticks)
2 tablespoons roasted peanuts
1 tablespoon Sesame seeds
2 tablespoons mint (finely chopped)
2 tablespoons coriander/cilantro (finely chopped)
1 red chilli (finely chopped)
1 tablespoon Soy sauce
1 tablespoon olive oil
1 teaspoon sesame oil
1 1/2 teaspoon White vinegar
1 1/2 teaspoon Raw Honey

Steps:

  • Meatball Preparation: Add all the ingredients for the meatballs (except panko breadcrumbs) to a mixing bowl. Use a spoon to mix everything together until combined.
  • Put the panko breadcrumbs onto a large dinner plate and use a dessert spoon to scoop out 1 spoonful of meat mixture and drop into the crumbs. (Make sure to do one at a time as the mixture will be quite moist, however the breadcrumbs will make it more manageable).
  • Roll the spoonful of meat in the breadcrumbs until a ball (approx. golf ball size) is formed. Set meatballs aside on a clean plate and repeat until all the meat is rolled into balls. (you should end up with about 16 or so)
  • Cover and refrigerate the meatballs whilst the other parts of the recipe are prepared.
  • Slaw: Add all of the slaw ingredients to a medium sized bowl (without the dressing), cover and refrigerate until just before serving.
  • Dressing: Add all the dressing ingredients into a small mixing bowl or jar and whisk to combine. Cover and refrigerate until just before serving.
  • Cooking the Meatballs: Heat a large pan/skillet on medium to high heat with the oil. Gently add all the meatballs, and cook, gently turning with a spatula or tongs - about 10 minutes or so. While they are cooking, make the peanut sauce.
  • Peanut Sauce: Heat a small saucepan on medium and melt the peanut butter. Add the garlic, ginger, soy sauce, honey, lime juice and siracha, stir with a spoon to combine and heat through until sauce is thickened. Gradually add the milk 1 tablespoon at a time and stir through to thin out to your liking. Remove from heat once desired consistency is achieved.
  • To serve: Give the dressing a shake or another whisk and add to the bowl of slaw and toss through with a couple of forks. Arrange the slaw on two plates, place the meatballs, and drizzle over the spicy peanut sauce. Optional garnishes could include sesame seeds, chopped peanuts and spring onion.

1 large Egg
1 cup Breadcrumbs
1 teaspoon Lemon Grass Paste
1 teaspoon Ginger Paste
3 cloves Garlic minced (or use 1 teaspoon garlic paste)
3 teaspoons Chilli Paste (adjust to your own taste)
1 small bunch Fresh Coriander (finely chopped)
1 teaspoon White Sugar
2 Tablespoons Fish Sauce
Salt to taste (optional)
5 ounce (165ml) can Coconut Milk ((small tin))
2 level Tablespoons Thai Red Curry Paste
1 large heaped Tablespoon Peanut Butter
1 level Tablespoon White Sugar
1 Tablespoon Soy Sauce
1 Tablespoon White Wine Vinegar

Steps:

  • Pre-heat oven to 200°C/400°F
  • Mince the chicken
  • Place all ingredients in a mixing bowl and mix thoroughly until well-combined
  • Test for flavour
  • Roll into small balls and place on a baking sheet
  • Place the baking sheet in the oven and bake for 12 to 15 minutes until cooked through
  • Place all the ingredients in a saucepan
  • Bring to the boil, then reduce the heat and simmer for 5 minutes, stirring ocasionally.

2 red jalapenos, seeded and finely chopped
2 tablespoons cornstarch
1 tablespoon soy sauce
1 tablespoon finely chopped garlic
1 tablespoon packed brown sugar
salt
1/2 cup unseasoned rice vinegar
2 tablespoons soy sauce
2 red jalapeno chiles, finely chopped
1 tablespoon finely chopped green onion
2 teaspoons packed brown sugar

Steps:

  • Heat oil in fryer or medium saucepan over medium heat.
  • For Meatballs: With a light hand, combine pork, egg, cilantro, lemon grass, jalapeños, cornstarch, soy sauce, garlic, sugar and salt in medium bowl. Roll into 3/4-inch meatballs. Fry a few meatballs at a time until lightly browned and no longer pink in center. Drain on paper towels.
  • For Spicy Dipping Sauce: Combine vinegar, soy sauce, jalapeños, green onion and sugar in small bowl.
