EASY THAI PRAWN CURRY



Easy Thai prawn curry image

Try our easy Thai prawn curry on a busy weeknight. This quick dinner is ready in under 20 minutes and flavoured with warming red Thai curry paste

1 tbsp vegetable oil
1 onion, chopped
1 tsp fresh root ginger
1-2 tsp Thai red curry paste (we used Sharwood's)
400g can chopped tomatoes
50g sachet coconut cream
400g raw frozen prawns
coriander, chopped, to serve (optional)

Steps:

  • Heat the oil in a medium saucepan. Tip in the onion and ginger, then cook for a few mins until softened. Stir in the curry paste, then cook for 1 min more. Pour over the chopped tomatoes and coconut cream. Bring to the boil, then leave to simmer for 5 mins, adding a little boiling water if the mixture gets too thick.
  • Tip in the prawns, then cook for 5-10 mins more, depending on how large they are. Serve alongside some plain rice and sprinkle with a little chopped coriander, if you like.

4 - 6 tbsp Thai Green Curry Paste (Maesri best) OR ((Note 1))
1 quantity homemade green curry paste ((Note 1))
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated)
1 tbsp lemongrass paste ((Note 2))
2 tbsp vegetable oil
1 cup (250ml) chicken or vegetable broth, low sodium
400 g/14oz coconut milk (, full fat (Note 4))
1 - 3 tsp fish sauce *
1 - 3 tsp white sugar *
1/8 tsp salt *
6 kaffir lime leaves (, torn in half (Note 5))
350 g/12 oz chicken thigh (, skinless boneless, sliced (Note 6))
2 Japanese eggplants, (, small, 1cm / 2/5" slices (Note 7))
1 1/2 cups snow peas (, small, trimmed)
16 Thai basil leaves ((Note 8))
Juice of 1/2 lime (, to taste)
Crispy fried Asian shallots (, high recommended (Note 9))
Thai basil or cilantro/coriander (, recommended)
Green or red chillies slices (, optional)
Steamed jasmine rice

Steps:

  • Heat oil in a heavy based skillet or pot over medium high heat.
  • Add curry paste (and garlic, ginger and lemongrass Extras, if using) and cook for 2 to 3 minutes until it mostly "dries out" - see video. Don't breath in the fumes!!
  • Add chicken broth and coconut milk, mix to dissolve paste.
  • Curry in a jar seasonings: Add 1 tsp fish sauce, 1 tsp sugar, no salt.
  • Homemade curry paste seasonings: Add 3 tsp fish sauce, 3 tsp sugar, 1/8 tsp salt.
  • Add kaffir lime leaves. Mix then bring to simmer.
  • Add chicken, stir then lower heat to medium so it's bubbling gently. Cook 7 minutes.
  • Add eggplants, cook 5 minutes until soft.
  • Taste sauce. Add fish sauce or salt for more saltiness, sugar for sweetness.
  • Add snow peas, cook 2 minutes until a bit softened, then stir through basil and lime juice. Sauce should have reduced but will still be a be on the thin side, not thick - that's how it's should be. DO NOT keep simmering - sauce will darken.
  • Serve curry over jasmine rice with garnishes of choice.

1 green chili
⅔ cup peas
3 tablespoons thai green curry paste
9 oz noodle, cooked
lime, to serve

Steps:

  • Fry the prawns with salt and pepper until they've just turned pink. Take out and set aside.
  • In the same pan, fry the garlic and green chili for a few minutes before stirring in the peas and Thai green curry paste.
  • Add the prawns and noodles and mix together for another couple of minutes.
  • Serve with a little lime juice squeezed over.
  • Enjoy!

I lived above a Thai restaurant for a year in Sydney and they made the best green curry I've ever tasted. I was a regular customer and they even loaned me plates and bowls. I managed to persuade the chef to let me know how he made the curry. I've adapted it slightly to bring down the heat but it's still got a nice kick to it. Apparently the paste will keep in the fridge for up to 4 months! Serve immediately over fluffy jasmine rice.

½ teaspoon ground cumin
1 ½ teaspoons ground coriander
1 tablespoon minced fresh ginger root
4 teaspoons minced garlic
2 green chile peppers, chopped
3 stalks lemon grass, minced
⅓ cup chopped fresh cilantro
2 limes, juiced
1 lime, zested
2 tablespoons corn oil
¼ cup corn oil
½ pound fresh green beans, trimmed
1 (7 ounce) can baby corn, drained
1 tablespoon soy sauce
1 (14 ounce) can coconut milk
¾ pound peeled and deveined medium shrimp (30-40 per pound)

Steps:

  • Place cumin, coriander, ginger, garlic, green chile peppers, lemon grass, cilantro, lime juice, lime zest, and 2 tablespoons of corn oil in a food processor. Blend to a smooth, thick paste. Set aside.
  • Heat 1/4 cup of corn oil in a large skillet over medium-high heat. Cook and stir green beans and baby corn for about 30 seconds. Stir in the paste, soy sauce, and coconut milk and bring to a boil. Reduce heat to medium and simmer for 5 to 7 minutes, then add the shrimp. Cook the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, 3 to 5 minutes. If the sauce becomes too thick, stir in some water.

1 tbsp sunflower oil
1 shallot, finely chopped
2 garlic cloves, finely chopped
1-2 tbsp Thai green curry paste, or to taste
125ml coconut milk
75g sugar snap peas, thickly sliced diagonally
85g cooked prawns, peeled
1 tsp soy sauce
1 tsp lemon juice
small handful coriander, chopped, to serve
noodles, to serve

Steps:

  • Heat the oil in a wok or large saucepan. Add the shallot and garlic, and stir-fry for 1-2 mins. Add the curry paste, coconut cream and 50ml water, and bubble for 2 mins.
  • Add the sugar snap peas and cook for 1-2 mins until just beginning to soften. Add the prawns, soy sauce and lemon juice and heat through. Stir in the coriander and serve straight away with noodles.

Oil for frying
2 onions finely sliced
3 tablespoon Thai green curry paste
1 Red chili sliced
1 tablespoon ½fish sauce
20 gms fresh ginger grated
1 head Broccoli cut into florets
400 ml light coconut milk
2 pak choi sliced (a type of Chinese cabbage)
300 gms Licious freshwater prawns
2 teaspoon lime juice
A handful of fresh coriander chopped

Steps:

  • Begin by heating a few tablespoons of oil over a medium flame in a deep frying pan.
  • Add the onions and cook until they become translucent.
  • Add in the fish sauce, curry paste, chili, and ginger and stir fry for 3-4 minutes.
  • Add the broccoli and cook for another 3-4 minutes.
  • Pour the coconut milk and allow it to simmer over a low flame for 4 minutes
  • Then add the pak choi and prawn. Let it cook for 7-10 minutes.
  • Before serving garnish with lime juice and coriander.

2 pkgs (340 g each) frozen tiger prawns, thawed
1 tbsp grated fresh ginger
2 green onions, finely chopped
2 cloves garlic, crushed
1 tbsp oil
1 red bell pepper, cut into small strips
1 tbsp green curry paste
1 can (14 oz/398 mL) coconut milk
1 cup snow peas, halved
1 tbsp cornstarch
2 tbsp soy sauce
2 tbsp water
1/2 cup coarsely chopped fresh mint
1/2 cup coarsely chopped fresh basil
Hot cooked jasmine rice

Steps:

  • Peel and devein prawns, leaving tails intact.
  • In a large frypan, sauté ginger, onions and garlic in oil until fragrant. Add red pepper and prawns.
  • Cook and stir until prawns are lightly browned on both sides.
  • Stir in curry paste, coconut milk and snow peas. Bring to a simmer and cook just until prawns are tender.
  • Combine cornstarch, soy sauce and water; stir into prawn mixture and cook just until thickened.
  • Stir in mint and basil. Serve immediately over jasmine rice.
