THAI CHICKEN WITH CARROT-GINGER SALAD



Thai Chicken with Carrot-Ginger Salad image

This creamy, spicy chicken soup is reminiscent of tom ka gai but a bit heartier due to the addition of rice noodles. In lieu of lemongrass, makrut lime leaves, galangal and chiles, green curry paste is used to flavor the coconut milk-infused broth.

2 tablespoons unsalted butter, softened
3 garlic cloves; 2 chopped, 1 crushed
4 teaspoons Thai green curry paste (available in the international aisle)
4 teaspoons finely chopped peeled ginger
Grated zest and juice of 3 limes
4 skin-on, bone-in chicken breasts (2 to 2 1/2 pounds)
Kosher salt
1 tablespoon vegetable oil
1 pound carrots
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F. Place a rack in a roasting pan. Mix the butter, chopped garlic, curry paste, 3 teaspoons ginger, the zest of 2 limes and the juice of 1 lime in a bowl.
  • Season the chicken with salt. Loosen the skin and rub the curry butter underneath. Place skin-side up on the rack and pour about 1/2 cup water into the pan. Roast until the chicken is cooked through and the skin is crisp, 20 to 25 minutes.
  • Meanwhile, mix the crushed garlic with the remaining 1 teaspoon ginger, the zest of 1 lime and juice of 2 limes. Whisk in the vegetable oil. Shave the carrots into ribbons with a vegetable peeler and toss with the dressing. Add the cilantro and 1/2 teaspoon salt and toss. Serve the chicken with the carrot-ginger salad.

A little shredding and chopping is all it takes to serve up this delicious Thai-flavored chicken salad.

2 medium celery ribs, cut into small dice
2 medium green onions, sliced thin

1 teaspoon ground ginger
2 teaspoons white sugar
½ teaspoon hot red pepper flakes
2 tablespoons minced fresh cilantro leaves

Steps:

  • In a medium bowl, mix chicken, celery, green onions and peanuts. In a small bowl, whisk lime juice, fish sauce, ginger, sugar, red pepper, cilantro and mint, plus 2 Tbs. water.
  • Toss dressing with chicken mixture and serve on a bed of Boston lettuce with the suggested accompaniments.

My family loved ordering this dish at our local Thai restaurant, but then they closed down for some unknown reason (they were always busy). So I decided to recreate this traditional dish at home. My husband says it's just like the restaurant...maybe even better? Please note that some people like to eat the ginger, while others don't but like the flavor it gives off. You can easily double this recipe to serve a larger group...plus it makes great leftovers.

1 ½ cups uncooked jasmine rice
3 ½ cups water
2 tablespoons vegetable oil
3 cloves garlic, minced
1 pound skinless, boneless chicken breast halves - cut into thin strips
1 tablespoon Asian fish sauce
1 tablespoon oyster sauce
1 tablespoon white sugar
½ cup fresh ginger, cut into matchsticks
1 large red bell pepper, cut into strips
¾ cup sliced fresh mushrooms
4 green onions cut into 2-inch pieces
½ teaspoon Thai red chile paste, or to taste
2 tablespoons chicken broth
salt and ground black pepper to taste
2 tablespoons fresh cilantro leaves

Steps:

  • Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Meanwhile, heat a wok or large skillet over medium-high heat. Stir in the garlic and chicken; cook for 2 minutes. Add the fish sauce, oyster sauce, sugar, ginger, red pepper, mushrooms, and onions. Cook and stir until the chicken is no longer pink and the vegetables are nearly tender, about 3 minutes. Dissolve the chile paste in the chicken broth, then add to the chicken mixture. Season to taste with salt and pepper; sprinkle with cilantro leaves to garnish. Serve with the hot rice.

1 small red onion (chopped fine)
1 teaspoon minced garlic
4 tablespoons lime juice
3 tablespoons fish sauce (Red Boat brand)
1 tablespoon fresh ginger (peeled and grated )
2 teaspoons red pepper flakes
1 tablespoon honey (to taste)
3 tablespoons extra virgin olive oil
4 cups shredded Napa cabbage
1 red pepper (diced)
3 carrots (grated)
2 scallions (chopped)
1/4 cup fresh basil (chopped)
1/4 cup fresh cilantro (chopped)
1/4 cup raw cashews (toasted and chopped)

Steps:

  • Heat coconut oil over medium high heat.
  • Season to taste with salt and pepper.
  • Add onion and garlic and cook for two minutes.
  • Add chicken and saute until browned and the chicken is fully cooked.
  • Allow to cool and shred chicken
  • Make dressing by whisking together lime juice, fish sauce, ginger, and red pepper flakes.
  • Slowly whisk in olive oil until emulsified. Add honey to taste. (You may also make the dressing in a food processor or blender.)
  • In a large bowl combine cabbage, red pepper, carrots, scallions, basil, cilantro and chicken. Toss with dressing. Top with cashews and serve.

2 pounds boneless chicken breast
3 cups water
1 tablespoon kosher salt
2 stalks lemongrass, minced
1 tablespoon minced garlic
2 teaspoons Thai chili powder
3 tablespoons canola oil
4 stalks celery, finely chopped
2 red onions, finely chopped
2 tablespoons coarsely chopped fresh mint
1 tablespoon coarsely chopped Thai basil leaves or regular fresh basil
1 tablespoon coarsely chopped cilantro leaves
1 teaspoon honey
2 tablespoons lime juice
1 head romaine lettuce, washed and chopped* see note

Steps:

  • Place chicken breast into a 2 quart saucepan with water (the water should cover the chicken breasts), the kosher salt and half of the lemongrass. Bring to a boil and lower to a simmer for 20 minutes. Remove chicken and cool completely. When cooled chop into 1/2 inch cubes and reserve in refrigerator.
  • Saute garlic, remaining lemongrass and chili powder in oil for 3 minutes. Remove from heat and cool completely. Next, toss together the celery, onions, mint, basil and cilantro. Combine chicken with sauteed garlic mixture and the salad components, Add salt, lime juice and honey to taste and place on the lettuce to serve.

1 to 2 chicken breasts (boneless, or 1 to 3 cups cooked chicken)
1 to 2 mangoes (ripe, cut into cubes)
1 pepper (small red, diced)
1/2 to 1 cucumber (medium, diced)
2 cups bean sprouts (or pea sprouts)
1/4 cup dry shredded unsweetened coconut
1/4 to 1/3 cup peanuts (or cashews)
3 to 4 spring onions (sliced, OR 3 tablespoon finely chopped purple onion)
1/4 cup basil (fresh)
Optional: 1 to 2 cups cubed watermelon (or star fruit)
For the Dressing:
1/4 cup lime juice (fresh-squeezed)
3 tablespoon fish sauce
1 tablespoon soy sauce
2 to 3 tablespoon sugar (brown, to taste)
1 to 2 teaspoon Thai chili sauce
For the Marinade: (skip for cooked chicken)
4 tablespoon Thai oyster sauce (or regular oyster sauce)
3 to 4 garlic cloves (minced)
2 tablespoon sugar (brown)

Steps:

  • Preheat your oven to 350 F, or warm up your grill.
  • Stir together the marinade ingredients and slather over chicken breasts. Set chicken in a baking dish or pan.
  • Add a little water to the bottom of the pan to keep from drying out.
  • Bake 30 to 40 minutes, or until cooked through. Alternatively, grill chicken over a hot grill, basting with leftover marinade.
  • When chicken is cool enough, slice into bite-size pieces.
  • Combine all dressing ingredients in a bowl or cup, stirring to dissolve sugar. This dressing should be a mingling of sweet, sour, spicy and salty, but an emphasis on sweet and spicy. (Note: it will taste strong now, but will be delicious when combined with the salad). Set aside.
  • Place coconut in a dry frying pan and stir continuously 2 to 3 minutes over medium heat, or until it turns light golden brown and fragrant. Transfer to a bowl to cool. Set aside.
  • To finish, place all salad ingredients together in a large bowl: mango, red pepper, cucumber, sprouts, onion, basil, and chicken.
  • Pour over the dressing and toss well. Add the toasted coconut and nuts and toss again.
  • Do a taste-test. If you prefer it sweeter, add a little more sugar. If too salty or sweet, add more lime juice. Add more chili for more spice.
  • Serve right in the salad bowl or portion out into individual bowls.
