2 tablespoons rice vinegar
2 tablespoons Thai sweet chili sauce
1 teaspoon sesame oil
¼ teaspoon white sugar
¼ teaspoon granulated garlic
1 pinch salt to taste
1 cucumber, thinly sliced
1 green onion, thinly sliced

Steps:

  • Whisk rice vinegar, chili sauce, sesame oil, sugar, and garlic together in a small bowl; season with salt.
  • Combine cucumber and onion in a separate bowl. Pour vinegar mixture over cucumber and onion mixture and toss to coat. Refrigerate at least 1 hour. Toss before serving.

1 cucumber , cut into ribbons with a peeler
1 Little Gem lettuce , shredded
140g beansprouts
bunch coriander , leaves roughly chopped
bunch mint , leaves roughly chopped
1 tsp rice wine vinegar
1 tbsp fish sauce
½ tsp light muscovado sugar
2 red chillies , deseded and finely chopped

Steps:

  • Mix the dressing ingredients together, stirring until the sugar is dissolved.
  • Place the salad ingredients in a bowl, then pour over the dressing, mixing well to combine. Serve immediately.

Very refreshing! I had a Cucumber Salad at a local Thai restaurant and tried to duplicate it. This has a nice little kick!

2 tablespoons rice vinegar
2 tablespoons sweet Thai sweet chili sauce
1 teaspoon sesame oil
1/4 teaspoon sugar
1/4 teaspoon granulated garlic
kosher salt
1 cucumber, thinly sliced
1/2 onion, thinly slice

Steps:

  • In a small bowl whisk together rice vinegar, sweet Thai chili sauce, sesame oil, sugar, granulated garlic and salt.
  • Place sliced cucumber and onion in another bowl. Pour vinaigrette over and toss to coat. Cover and refrigerate for 1 hour. Toss once more before serving.
  • I don't think it gets much easier than that. Enjoy! :).

1/2 cup white vinegar
1/2 cup water
1/2 cup sugar
1 teaspoon salt
1 large cucumber (about 12 oz)
1/4 cup red onion, coarsely chopped
1/3 cup dry roasted salted peanut, finely chopped
3 tablespoons fresh cilantro, coarsely chopped
fresh cilantro leaf

Steps:

  • In a small saucepan, combine vinegar, water, sugar, and salt and boil gently over medium heat. Stir occasionally to dissolve the sugar and salt. After about 2 minutes, when the syrup is clear and slightly thickened, remove from heat and cool to room temperature.
  • Peel the cucumber and slice lengthwise in quarters. (You can remove the seeds if you want to.) Slice these strips into 1/4 inch thick triangles.
  • In a bowl, combine the cucumbers, cooled vinegar mixture, onion, and cilantro and mix well.
  • Use a slotted spoon to serve into individual dishes. Sprinkle servings with the chopped peanuts and cilantro leaves.

  • Roast peanuts: Tip peanuts into a wok over low heat. Roast peanuts, stirring continuously till golden brown. This will take anywhere between 8 to 15 minutes. Remove wok from heat and transfer peanuts to a plate to cool. Note: do not leave them in the wok as they will continue to brown in the residual heat. Once complete cool, crush them roughly. Set aside.
  • Fry garlic: Pour oil into a wok over medium-low heat. Once the oil heats up, add chopped garlic. Stir and fry till evenly coloured to a light golden, 4 to 6 minutes. Remove from the wok and set aside to cool. Note that the garlic will continue to colour till it cools down.
  • Make dressing / sauce: pour vinegar into a small glass bowl. Add powdered sugar and sweet chilli sauce. Stir well to mix. Reserve dressing.
  • Assemble cucumber salad: Tip cucumber into a large glass, wood, or non-reactive metal bowl. Add fresh coriander leaves, chopped shallots, fried garlic, reserved dressing, and crushed roasted peanuts. Toss well to combine. Cover and place in the refrigerator to chill for 1 hour.
