1 cup of peanuts
⅛ cup of Sriracha

Steps:

  • Mix all ingredients together in a bowl
  • Bake at 350 for 15 minutes

After returning from a trip to Thailand this year, I was challenged by some friends to come up with a Thai-seasoned snack. This is the result of the second version, I was informed the first was not hot enough, however it tastes great without the heat. Enjoy!

1 cup butter, melted
1/2 cup soy sauce
1/4 cup Thai fish sauce
2 tablespoons fresh lime juice
2 tablespoons garlic powder
2 tablespoons onion powder
1 teaspoon black pepper
2 tablespoons thai chili paste (optional)
12 -18 whole dried Thai chiles (optional)
6 cups Wheat Chex
6 cups Corn Chex
6 cups Rice Chex
4 ounces hot green wasabi peas (optional)
12 ounces mixed nuts
2 cups bite size cheese crackers
6 ounces chow mein noodles
7 ounces garlic bagel chips

Steps:

  • Melt the butter in large measuring cup, add the seasonings and let sit while arranging the other ingredients.
  • Pour 1/3 of the seasoning mixture over cereal at a time, stirring well between each addition.
  • Bake for 1 hour and 15 minutes, at 275 degrees, stirring every 15 minutes.
  • This makes a lot, almost 2 gallons, and will fill 3 cookie sheets.

3 cups crisp corn cereal, such as Corn Chex
3 cups crisp wheat cereal, such as Wheat Chex
3 cups crisp rice cereal, such as Rice Chex
2 cups pretzel sticks
2 cups mixed nuts
1 to 1 1/2 sticks (8 to 12 tablespoons) salted butter
3 tablespoons Worcestershire sauce
1 teaspoon seasoned salt, such as Lawry's
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon onion powder
6 to 12 dashes hot sauce, such as Tabasco
3 to 5 cloves garlic, mashed

Steps:

  • Preheat the oven to 250 degrees F.
  • Dump the corn, wheat and rice cereal into a large mixing bowl. Add the pretzel sticks and nuts.
  • In a microwave-safe bowl, add the butter, Worcestershire, seasoned salt, paprika, chili powder, onion powder, hot sauce and garlic and microwave until the butter is melted. Stir together and toss into the cereal mixture, stirring as you go.
  • Transfer the mixture to 1 or 2 baking sheets and bake for 1 hour 15 minutes, stirring every 15 minutes. Let cool and store in an airtight container.
  • Grab a handful every 40 minutes. Eat. Spoil your appetite.

THAI PUMPKIN CHEX MIX®



Thai Pumpkin Chex Mix® image

Thai red curry paste, pumpkin and coconut add a flavorful twist to this traditional Chex Mix®.

8 cups Corn Chex™ cereal
1 cup whole roasted salted cashews
1 cup unsweetened large coconut flakes
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1/2 cup real maple syrup
3 tablespoons canned pumpkin (not pumpkin pie mix)
3 tablespoons melted virgin coconut oil
4 teaspoons Thai red curry paste
4 cups popped popcorn

Steps:

  • Heat oven to 300°F. Line 2 (15x10x1-inch) pans with cooking parchment paper. In large bowl, mix cereal, cashews, coconut, pumpkin pie spice, cinnamon and salt.
  • In 2-cup glass measuring cup, beat maple syrup, pumpkin, coconut oil and red curry paste with whisk until well mixed. Stir into cereal mixture until well blended. Spread in pans.
  • Bake 40 minutes, stirring and rotating pans after 20 minutes. Stir 2 cups popcorn into each pan of mix. Bake 5 minutes longer. Cool completely, about 30 minutes. (Mixture will become crispier once cooled.) Store in airtight container.

This is essentially the recipe on a box of Chex, adjusted to my taste. I like extra seasoning, a kick from hot sauce, and a few other adjustments. I also leave out the bagel chips; they just don't seem very Chex Mix-y to me.

6 tablespoons butter or 6 tablespoons margarine
3 tablespoons Worcestershire sauce
1 tablespoon Pickapeppa Sauce (optional)
1 1/2-2 teaspoons seasoning salt
3/4-1 teaspoon garlic powder
1/2-3/4 teaspoon onion powder
4 cups Corn Chex
3 cups Rice Chex
2 cups Wheat Chex
1 1/2 cups mixed nuts
2 cups small pretzels (I use the sticks)

Steps:

  • Preheat oven to 250°F.
  • In ungreased large roasting pan, melt butter in oven.
  • Stir in seasonings.
  • Gradually stir in remaining ingredients until evenly coated.
  • Bake one hour, stirring every 15 minutes.
  • Spread on paper towels to cool, about 15 minutes.
  • Store in an airtight container.

  • Preheat the oven to 275°. In a large bowl, combine the cereal with the nuts, rice cracker mix, sesame sticks and pretzels. In a microwave safe bowl, combine the butter with the maple syrup. Melt the butter mixture in the microwave. Add the soy sauce, sesame oil, curry paste and fish sauce. Pour the liquid over the snack mix and using two spoons, toss to completely coat with the liquid. Spread the mixture onto a large rimmed baking sheet. Bake for about 40 minutes, stirring two or three times and shifting the pans, until nearly dry and toasted. Let cool completely stirring occasionally and serve in bowls.
