1 cup finely shredded green cabbage
3 cups finely shredded red cabbage
3 cups finely shredded napa cabbage
1/2 cup green onion, sliced
1/4 cup red bell pepper, chopped small
2 cups carrots, shredded
kosher salt
fresh ground black pepper
1/3 cup rice wine vinegar
2 teaspoons fresh lime juice (to taste)
2 -3 tablespoons chili-garlic sauce
1 1/2 teaspoons honey
1 teaspoon minced fresh ginger, peeled
1 teaspoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh mint leaves, chopped
1 tablespoon fresh cilantro leaves, chopped
1/4 teaspoon black pepper
1 1/2 teaspoons toasted sesame seeds
1/2 teaspoon ground coriander
kosher salt
1 tablespoon toasted sesame oil
1/2 cup peanut oil (or corn oil)

Steps:

  • Whisk all ingredients except oils in a large bowl. Slowly drizzle in oils while whisking. Taste and adjust seasoning with more salt and lime juice if needed.
  • Combine the vegetables in a large bowl, season with salt and pepper. Toss to mix thoroughly. Pour in the Thai vinaigrette to taste and toss to mix. Adjust, adding more if desired. Enjoy!

I got this recipe from the cook at my favorite Thai restaurant in Cincinnati. His carrot salad was one of his most popular salads/appetizers, people would buy multiple orders to go so they could bring this as a take along dish to an event. This is even better made a day ahead.

1 pound carrots, coarsely grated
1 cup white sugar
½ cup water
½ cup rice vinegar
2 tablespoons minced garlic
2 tablespoons Thai fish sauce
1 ½ teaspoons Thai red curry paste
2 tablespoons lime juice
1 tablespoon red pepper flakes
½ cup finely chopped unsalted peanuts

Steps:

  • Place grated carrots in a large bowl.
  • Combine sugar, water, and vinegar in a saucepan and bring to a boil; cook until sugar is dissolved, about 5 minutes. Reduce heat to medium; add garlic, fish sauce, and curry paste to sugar mixture and simmer until flavors blend, 2 to 5 minutes. Remove saucepan from heat and cool dressing completely, about 30 minutes.
  • Stir lime juice and red pepper flakes into dressing and pour over carrots. Add peanuts and toss to coat. Refrigerate until chilled, at least 30 minutes.

1/2 tsp coconut sugar (or Lacanto Monkfruit 0-calorie sweetener)
1 tbsp fresh ginger (peeled and finely grated)
1 clove garlic (minced)

2 tbsp or lime juice, plus more as needed lemon juice

1½ tbsp or brown sugar, plus more as needed muscovado sugar
2 tsp sesame oil
1 tsp or sriracha, plus more as needed chili-garlic paste
1 tbsp fresh, peeled, minced ginger
1 minced garlic clove

½ tsp roasted, crushed, per serving peanuts

Steps:

  • In a large bowl, combine all the vegetables together and set them aside in a chilled area.
  • Combine all ingredients for the dressing and puree until smooth. Balance the taste of the dressing with fish sauce, chili-garlic paste or sriracha, muscovado or brown sugar, and lime or lemon juice. The dressing should have a balance of sweetness, sourness, heat, and acidity. Set aside in a chilled area.
  • When both dressing and salad are chilled, add enough of the salad dressing to coat the vegetables. Mix until evenly incorporated.
