- In a small skillet, stir-fry the cabbage in 1 teaspoon oil for 2 minutes or until tender. Remove and keep warm. In the same skillet, stir-fry onion and garlic in remaining oil until tender. Add the shrimp, water and soy sauce; stir-fry for 2-3 minutes or until shrimp turn pink. Stir in cilantro and pepper flakes. Serve with cabbage.

This is a low-fat, low-cal soup that's incredibly filling and delicious. I eat this at least once a week! I don't know how it tastes cold, though. Don't be afraid to vary the proportions of various foods on your own!

- Place chicken breasts and broth in to a stockpot or Dutch oven. Bring to a boil and let simmer for about 20 minutes, or until chicken is cooked through. Remove the chicken from the broth and set aside to cool.
- Put the leeks and carrots into the pot and simmer them for 10 minutes, or until tender. Shred the cooled chicken in to bite sized pieces and return it to the pot. Add the cabbage and egg noodles and cook another 5 minutes or until the noodles are soft. The soup should be thick like a stew. Serve hot and flavor to taste with Thai chili sauce.

- Toss cabbage, sugar, 1 teaspoon salt, and 1/4 teaspoon pepper in a large bowl, cover, and let sit at room temperature 30 minutes to allow cabbage to soften (or cover and chill up to 2 hours).

- Add lime juice mixture; saute an additional 2 1/2 minutes, or until cabbage is tender.

- Blanch cabbage leaves: Bring a large pot of water to a boil. Add a pinch of salt, working one at a time submerge each cabbage leaf in the boiling water for 2 to 3 minutes (until just becoming translucent). Remove from boiling water and plunge into a bowl of ice water for 10 to 15 seconds. Remove and lay on a clean towel to drain.
- In a large saute pan heat olive oil over medium heat. Cook ground beef until most of the pink is gone. Drain if necessary. Add onion, shredded carrots, garlic and ginger to the ground beef and cook 2 to 3 minutes. Remove from heat.
