BEEF STIR FRY WITH HONEY AND BLACK PEPPER SAUCE
Recipe video above. Copycat of restaurant style Chinese Beef with Honey and Black Pepper Sauce. Very fast and easy to make - it's on the table in 15 minutes! The sauce is absolutely divine - sticky, sweet, salty and with a subtle burst of heat from the black pepper.

Steps:
- Mix the Sauce ingredients in a bowl.
- Heat the oil in a wok or large heavy based skillet over high heat until it is smoking.
- Add the onion and garlic and cook for 1 minute or until the onion becomes translucent. Keep it moving so the garlic doesn't burn.
- Add the beef and stir fry for 1 minute until just cooked to your liking, then remove into bowl.
- Turn the heat down to medium high, pour in Sauce - it will start simmering very quickly! Let it cook for 1 minute or so until it becomes syrupy - the bubbles will be larger and caramel colour.
- Add the beef and onion back into the wok, along with any juices pooled on the plate. Toss in the sauce until just warmed through - 1 minute at most. Don't overcook the beef - that would be tragic!
- Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice!

GARLIC AND PEPPER CHICKEN
Garlic and Pepper Chicken (gai pad gratiem prik thai) is a very common dish. You can use any meat - pork, beef, shrimp, squid, etc. You can even make a vegetarian one with tofu. It's a very easy and quick dish to make. It's commonly eaten as a one-dish meal over rice, but it can be added to a family-style meal. If sharing - serve it on a regular plate - not over rice.

- Rinse and cut the chicken into bite-sized pieces (see picture). Smash the garlic lightly with the side of a knife. Remove the skin if not using thin-skinned Thai garlic. Heat the oil in a pan until very hot. Add the garlic and keep stirring so it doesn't burn. When (very) lightly browned, add the chicken (or meat, or whatever you're using!). Cook until done (not raw). If it gets dry and sticky, add some water to the pan about 1-2 tablespoons at a time. Add the palm sugar, fish sauce and pepper. You may need to add a bit more water here so that it mixes well. Mix well and serve on rice (for a one-dish meal), or in a plate (to share with friends). Garnish with cilantro.
THAI BLACK PEPPER CHICKEN AND GARLIC NOODLES

- 1. In a medium bowl, toss together the chicken, cornstarch, turmeric, ginger, black pepper, and 1 tablespoon oil.2. In a glass jar, combine the honey, soy sauce, rice vinegar, red pepper flakes, and 1/4 cup water. 3. Cook rice noodles according to packaged directions. 4. Heat the remaining 2 tablespoons oil in a large skillet over medium heat. When the oil shimmers, add the chicken and brown all over, until it becomes crispy, about 5 minutes. Add the shallots, broccoli, and cashews, cook another 2-3 minutes, until the broccoli is charring. Pour in the honey/soy sauce mix. Bring the sauce to a boil over medium-high heat and cook until the sauce coats the chicken, about 5 minutes. Remove from the heat and stir in the lime zest, lime juice, and the basil.5. Meanwhile, heat a medium skillet over medium heat. Add the butter, garlic, and a pinch of red pepper flakes, if desired. Cook until the garlic begins to caramelize and turn light golden brown, 1 to 2 minutes. Stir in the coconut milk, cooking 3-5 minutes, until warmed through. Remove from the heat and toss the noodles with the sauce. 6. To serve, divide the noodles among bowls and top with chicken. Serve with additional basil and limes. Enjoy!

Steps:
- Heat wok over medium high heat until hot.
- Add 3tsp oil.
- Swirl to coat.
- Add onion and garlic. Stir-fry 1-2 minutes. Transfer to bowl.
- Increase heat to high, Add 3 tsp oil and half the beef. Stir fry for 3 minutes. Remove from wok to plate. Repeat with remaining beef.
- Blend together 1 tablespoon stock and cornflour. Combine mixture with remaining stock, pepper, soy and hoisin sauce. Pour into wok.
- Cook stirring for 3 minutes until sauce comes to the boil.
- Return beef and onion mixture to wok.
- Stir fry 2 minutes until all heated through.

A great Thai dish that is a favorite of my wife. Serve with jasmine rice, tomato and cucumber slices, and additional cilantro sprinkled on top. The contrast between the hot peppery beef and the tomatoes and cucumbers is great.

- Stir fish sauce and garlic together in a large glass bowl. Add beef slices and toss to coat. Marinate meat for 15 minutes.
- Heat 1 1/2 tablespoons sesame oil in a large skillet or wok over medium-high heat. Carefully add about 1/4 of the beef slices to the oil and saute until mostly browned, 3 to 5 minutes. Season beef with 1 tablespoon pepper and about 1/4 of the cilantro; continue cooking until the beef is no longer pink, 2 to 3 minutes more. - Gather the ingredients.
- Cut steak on the bias (on an angle) into thin 2- to 3-inch-long strips and place in a bowl.
- Make marinade by combining soy sauce , brown sugar, and cornstarch, stirring well to dissolve sugar.
- Pour this over beef and toss. Set aside.
- Make stir-fry sauce by combining stock, oyster sauce, fish sauce, brown sugar, and chiles, stirring well to dissolve sugar.
- Heat a wok or large frying pan over medium-high heat. Add vegetable oil, then add shallot or onion, garlic, and ginger. Stir-fry 1 minute to release fragrances.
- Add beef and marinade. Stir-fry until browned, 4 to 5 minutes. Add sherry to keep pan moist.
- Add broccoli and red pepper plus stir-fry sauce. Reduce heat to medium and simmer 5 minutes, stirring occasionally, until vegetables have softened but still retain some crunch.
- Stir together cornstarch and water mixture.
- Push ingredients to the side in wok.
- Add cornstarch-water mixture to liquid and stir to thicken sauce. Then stir-fry everything together.
- Switch off heat and drizzle over sesame oil. Taste dish: If not salty or flavorful enough, add more fish sauce until desired taste is achieved. If too salty for your taste, add a squeeze of lime or lemon juice. If not sweet enough, add a little more sugar. Add more chile for more heat. Serve with plenty of Thai jasmine rice. Thai chili sauce also can be served on the side for those who like it extra spicy.
