3 tablespoons vegetable oil
2 shallots ((thinly sliced))
7 cloves garlic ((sliced))
3 Thai bird or holland chilies ((de-seeded, if desired, and thinly sliced))
1 pound ground pork ((450g))
1 teaspoon sugar
1 tablespoon fish sauce
1 tablespoon thin/light soy sauce
2 teaspoons dark soy sauce
2 teaspoons oyster sauce
⅓ cup low sodium chicken broth or water
holy basil leaves ((about 1 1/2 cups packed))

Steps:

  • In a wok over medium high heat, add the oil, shallots and garlic, and fry for 3 minutes. Add the chilies and cook for another minute. Crank up the heat to high, and add the ground pork, breaking it up into small bits and allowing it to crisp up.
  • Add the sugar, fish sauce, soy sauce, dark soy sauce, and oyster sauce. Stir-fry for another minute and deglaze the pan with the broth or water. Because your pan is over high heat, the liquid should cook off very quickly. Add the basil, and stir-fry until wilted. Serve over rice.

Steps:

  • In a wok over medium heat, add the oil, garlic, and chilies. Cook for 1 minute. Crank up the heat to high, and add the pork belly. Stir-fry until caramelized and a little crisp, 2 minutes.
  • Add the sugar, fish sauce, oyster sauce, and soy sauces. Stir-fry for 1 minute, and add the basil. Stir-fry until the basil is wilted. Serve immediately.

2 tablespoons mild vegetable oil
6 cloves garlic (minced (2 tablespoons))
5 Asian shallots (or 1/2 small onion, cut into thin slices (1/3 cup))
1 1/2 pounds ground pork
6 red Thai chile peppers (seeded, if desired, and thinly sliced into rounds)
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 teaspoon soy sauce
1 teaspoon brown sugar
1 1/2 cups packed fresh holy basil or Thai basil leaves*
Pinch of freshly ground black pepper ((optional))
Steamed white rice ((optional))

Steps:

  • Heat a large wok or skillet over medium-high heat for 1 minute. Carefully swirl in the oil and heat until it becomes runny and starts to shimmer but doesn't begin to smoke. Reduce the heat to medium. Add the garlic and shallots and cook, stirring, until the garlic is lightly golden and fragrant, 15 to 30 seconds.
  • Increase the heat to medium-high and stir in the pork, using the edge of your spoon or spatula to break up the clumps. Stir and cook until the meat has just lost its blush of pink, 1 to 2 minutes.
  • Reduce the heat to medium and toss in the chiles. Add the oyster sauce, fish sauce, soy sauce, and sugar and stir to coat the meat evenly. Stir in the basil and cook until the basil is wilted and the pork is cooked through, another 30 to 60 seconds.
  • Move to a serving dish and, if desired, sprinkle with a pinch of black pepper. Serve hot with freshly steamed rice.

1 -1 1/4 lb ground pork or 1 -1 1/4 lb ground chicken
1 -1 1/2 cup basil leaves
5 -6 garlic cloves (peeled)
3 -5 whole fresh red chilies (seeded)
2 tablespoons oyster sauce
3 tablespoons fish sauce
3 teaspoons brown sugar

Steps:

  • In a mortar pound garlic and chilies with a little salt into paste.
  • Heat 2-3 tbsps canola oil in frying pan and brown the paste.
  • Add in the pork, making sure you break it up.
  • When meat is cooked (very fast; don't overcook), add in oyster sauce, fish sauce and sugar.
  • Stir in basil leaves. Add more fish sauce and sugar if needed.

1 Tbsp Soy Sauce (Use Golden Mountain, Regular Soy Sauce, or Liquid Aminos.)
1 lb Ground Pork (or ground meat of Choice)
3-5 Garlic Cloves (Use as much or little as you like)
Thai Bird's Eye Chilis (These peppers are spicy. For a medium spice I used 3.)
1 Tbsp Oil
1 Tbsp Oyster Sauce (or substitute Mushroom sauce)
1 Tbsp Soy Sauce (Use Golden Mountain, Regular Soy Sauce, or Liquid Aminos.)
1 Cup Thai Holy Basil Leaves (or substitute Thai Basil or Italian Basil. Wash and remove leaves from stem.)
1 Egg (Per a serving)
Oil (Enough to cover a small skillet.)

Steps:

  • In a small bowl, combine the ground pork and 1 tbsp of soy sauce, mix and set aside.
  • In a mortar and pestle, pound peeled garlic cloves and Thai chili's until a chunky paste forms. Or you can chop them with a knife.
  • Add oil to a large pan over medium heat. Add the garlic and chili's stir quickly, then add the ground pork. Turn the heat up to medium high.
  • Continue stirring the pork and once it's halfway cooked add the remaining soy sauce and oyster sauce. Continue stirring until pork is cooked. Taste and see if additional sauce is needed. If you like it to have some sweetness you can add a little bit of sugar.
  • Turn off the heat and add the Basil leaves.

  • In order for your Pad Krapow to have the right flavor, you really need to use the type of basil that we call Krapow. Krapow is similar in flavor to Holy Basil.
  • Measure and prepare the ingredients. Pluck the leaves from your Krapow and cut the green beans into 1/2 inch pieces. Using a mortar and pestle, crush the garlic and chilies.
  • If you are planning to serve a fried egg on the side, then you should fry it before you cook the Pad Krapow. If you want to make a real Kai Dow, then follow the video for my tips, otherwise any ordinary fried egg will still taste great with this dish.
  • Heat a wok or large frying pan over medium to high heat, and add about 1 - 2 Tablespoon of vegetable oil. When the oil gets hot, add the crushed garlic and chilies.
  • Add the chopped meat to the pan and mix it in well with the chilies and garlic. Fry for about 2 minutes, or until most of the pink color is gone from the meat and you can tell that it is nearly cooked.
  • Add the oyster sauce and light soy sauce to the meat and mix it in well. Fry for about 30 seconds.
  • Add the sugar and green beans to the pan and stir well. Fry for about 30 seconds, or until you are sure the sugar is all melted.
  • Add the dark sweet soy sauce to the pan and mix in well. Fry for about 1 minute, or until the meat is starting to get a little dry, and you can see it browning and sticking to the pan just a little.
  • Add about 1/8 to 1/4 cup of water. Stir it around and fully deglaze the pan to get all that flavor mixed back into the sauce. Fry for about 30 seconds to reduce the water back into a nice brown gravy.
  • Add the basil in, stirring quickly. Cook just for a few seconds, just long enough for the basil to wilt a little. Remove from the heat and serve immediately.
