THAI SPICY BASIL BEEF

My version of Thai Beef Basil I usually get from take-out. If you can find Thai Basil and Thai Chilies that would be great. Otherwise, I've used regular basil and serrano or jalapeno chilies instead. I freeze the beef for 10 minutes to make it easier to thinly slice.

1 tablespoon garlic, minced
1/2 lb beef, thinly sliced
1 tablespoon chile, chopped
1/4 cup onion, sliced
1/4 cup red bell pepper, sliced
1 cup fresh basil leaf
1 tablespoon oyster sauce
2 tablespoons fish sauce
1/2 tablespoon sugar
1/8 teaspoon white pepper
cilantro, chopped for garnish

Steps:

  • Heat wok with oil, add garlic and chiles.
  • Add beef and stir fry for 1 minute.
  • Add onions and basil, stir for 1 minute.
  • Add remaining sauce: oyster sauce, fish sauce, sugar, and white pepper.
  • Stir fry until cooked, garnish with cilantro.
  • Server immediately with steamed rice.

1 lb ground beef
2 teaspoons sesame oil
3 -4 garlic cloves, minced
1 small onion, finely diced
1 bell pepper, finely sliced (or carrot finely sliced)
1 -2 red chili pepper, sliced (to taste or sub red chili flakes)
1 cup fresh basil leaf
1 tablespoon oyster sauce (can sub soy sauce)
2 tablespoons fish sauce
1/4 cup chicken stock (or water)
1 teaspoon sugar
1/2 teaspoon black pepper (to taste)
grated carrot, cilantro, lime wedges for garish (optional)

Steps:

  • Heat a large frying pan over medium high heat, film with sesame oil and saute onions, bell peppers and chilis until softened, ~3-4 minutes. Remove from pan.
  • Cook ground beef with garlic & black pepper, crumbling into small bits until browned and cooked through, ~8-10 minutes. Add vegetables back to pan.
  • Stir in chicken stock, oyster sauce, fish sauce, and sugar. Stir well and cook until reduced a bit, ~2 minutes.
  • Fold in basil leaves and stir to combine.
  • Serve over rice. Top with grated carrot, cilantro and a squeeze of lime juice if you want.

2 Tablespoons vegetable oil
2 shallots (thinly sliced)
7 cloves garlic (sliced)
1 Tablespoon fresh ginger (minced)
1/2 red bell pepper (thinly sliced)
1 pound lean ground beef
2 teaspoon brown sugar
2 Tablespoon fish sauce
6 Tablespoons low sodium soy sauce
3 teaspoons oyster sauce
2 Tablespoon Asian garlic chili paste (more or less to taste, for heat)
1/2 cup low sodium beef broth
¼ cup water
1 teaspoon cornstarch
1 cup basil leaves*
Cooked Jasmine rice (for serving)

Steps:

  • Heat a large skillet over medium-high heat. Add the oil. Add the shallots, garlic, ginger, and bell peppers and stir-fry for 3 minutes.
  • Push the veggies off to the side. Turn the heat to high and add the ground beef, breaking it up into small bits with a spoon.
  • In a small bowl stir together the brown sugar, fish sauce, soy sauce, oyster sauce, cornstarch beef broth, and water and add to the pan. Cook for 2 minutes.
  • Add the basil, and stir-fry until wilted.
  • Serve over hot cooked rice.

2 tablespoons vegetable oil, divided
6 garlic cloves, thinly sliced
2 red chiles, thinly sliced, seeded for less heat if desired, divided
1 pound ground beef
Kosher salt, freshly ground pepper
1/2 cup low-sodium chicken broth
3 cups fresh basil leaves, divided
2 medium carrots, julienned or coarsely grated
2 scallions, thinly sliced
4 tablespoons fresh lime juice, divided

Steps:

  • Heat 1 tablespoon oil in a large skillet over high heat. Add garlic and 1 chile and cook, stirring, until fragrant, about 30 seconds. 2 lbs of Grass-fed ground beef
3 tbsp coconut oil
2 1/2 bell peppers (we like a green and some red or orange for color)
1 pinch sea salt (be conservative and add it last)
3 - 4 Thai chili or Serano peppers (depends how spicy you like it; we eat Thai spicy, Joe knows )
1 large yellow onion, sliced
4 big stalks of fresh Thai basil, regular works too
5 tbsp Thai fish sauce
1 tsp Coconut Crystals

Steps:

  • Use a large 3 quart pan or wok and brown onions until golden in coconut oil, add chopped chili peppers (seeds in) and sliced bell peppers. Use medium - high heat. Continue to cook until it's all glossy and gorgeous, then add ground beef and stir in well. If you like bigger chunks you will not need to stir so much. Now add fish sauce and coconut crystals, stir well and add basil when the beef is no longer pink. We just rip the basil and toss it in. Let is simmer on ultra-low for 10 minutes and serve with some Cauliflower rice. Truly amazing and the whole thing will take you less than 30 minutes to prepare and cook! This is one of the most popular street food dishes in Thailand. It's also a technique, kind of like calling something an omelet. An omelet is always egg-based, but you can change the fillings. The base of this dish is always Thai basil, garlic, chilies, bell peppers and onions, but you can switch out the proteins as desired.

3 tablespoons (45 milliliters) sweet soy sauce
2 tablespoons (30 milliliters) oyster sauce
4 tablespoons (60 milliliters) fish sauce
2 tablespoons (30 grams) chili paste in soybean oil
6 tablespoons (45 milliliters) vegetable oil
2 large eggs
3 cups (720 grams) lean ground beef
4 cloves garlic, minced
1 to 3 serrano or Thai chiles, sliced
1 medium onion, diced
1 small red bell pepper, sliced
1 1/2 cups (335 grams) Thai basil leaves, picked off the stem
1/2 teaspoon white pepper

Steps:

  • Combine the sweet soy sauce, oyster sauce, fish sauce and chili paste in a small bowl and reserve.
  • Heat your wok or large skillet over high heat and add 3 tablespoons of the vegetable oil. Crack one egg into the wok and allow the bottom to crisp for a couple of seconds, while keeping the pan moving, then baste until the top of the egg is mostly white, about 1 minute. Set aside on a paper-towel-lined plate, and then fry the second egg. Hold both eggs on the plate until ready to serve.
  • Heat your wok or large skillet over high heat and add the remaining 3 tablespoons vegetable oil. When wisps of white smoke appear, add the ground beef, flattening against the pan, and cook undisturbed for about 45 seconds. The beef will start to brown; turn over once, press flat against the pan and cook for another 30 seconds. Add garlic and chilies. Cook them until the garlic starts to brown, about 30 seconds. Add the onion. Break up the meat into gravel-size pieces and drain any excess liquid.
  • Stir in the bell pepper and stir-fry for about a minute. Add the reserved sauce to the wok and combine the ingredients thoroughly for about 1 minute. Add the Thai basil and cook until the beef is thoroughly cooked and onions are slightly tender. Finish with white pepper.
  • Transfer to a platter and top with the reserved fried eggs.

1 ½ tbsp coconut aminos
½ tsp toasted sesame oil
1 tbsp fish sauce (Red Boat brand preferred)
¼ tsp baking soda
1 tsp arrowroot powder
2 tbsp sliced garlic cloves
1 to 1 ½ tbsp fresh ginger (julienned)
3 bulbs scallions (chopped and separate white and green parts)
1-2 chili peppers (serrano, fresno, or jalapeño, seeds removed, optional)
1 to 1 ½ whole bell pepper (slice to thin strips, any color you prefer)
1 cup Thai/Asian basil or 2 cups Italian basil
Cooking fat (ghee or avocado oil)
½ tbsp fish sauce (Red Boat brand preferred)
1 ½ tbsp coconut aminos
½ tsp ground black pepper

Steps:

  • Thin slice the beef against the grain to less than ¼-inch thin. Combing and gently mix well the beef with all ingredients under 'beef and marinade'. Set aside in the fridge. Prepare garlic, ginger, scallions, chili peppers (if using), bell pepper, basil, and set aside 'stir-fry sauce'.
  • In a well heated large stainless steel skillet (or cast iron), add 2 tbsp cooking fat. Try to sear the beef over medium-high heat in one layer so they aren't overlap with each other too much in the skillet. Sear the first side without disturbing for roughly 2 minutes or until golden brown then sear the flip side about 1 minute. Set aside in a large bowl along with the pan juice.
  • Use the same skillet, add 2 tbsp cook fat, saute garlic, ginger, white parts of scallions, and chili peppers. Season with a pinch of salt and saute until fragrant (about 10 seconds) over medium to medium-high heat. Add sliced bell pepper, season with another pinch of salt. Saute for 5-8 seconds. Add Italian basil and use the heat to extract the basil fragrance/oil. Saute for 5-6 seconds. Add beef back to the skillet and the 'stir-fry' sauce. Give a quick toss this dish is ready!
  • Serve the dish over cauliflower rice, broccoli rice, lightly sauteed zucchini noodles or steamed rice for a gluten-free meal.
