SPICY THAI BASIL CHICKEN (PAD KRAPOW GAI)

Spicy Thai Basil Chicken (Pad Krapow Gai) image

My version of this classic Thai dish has spectacular taste even with regular basil instead of Thai or holy basil. The sauce actually acts like a glaze as the chicken mixture cooks over high heat. The recipe works best if you chop or grind your own chicken and have all ingredients prepped before you start cooking.

Categories     World Cuisine Recipes     Asian     Thai

Time 25m

Yield 2

Number Of Ingredients 13

⅓ cup chicken broth
1 tablespoon oyster sauce
1 tablespoon soy sauce, or as needed
2 teaspoons fish sauce
1 teaspoon white sugar
1 teaspoon brown sugar
2 tablespoons vegetable oil
1 pound skinless, boneless chicken thighs, coarsely chopped
¼ cup sliced shallots
4 cloves garlic, minced
2 tablespoons minced Thai chilies, Serrano, or other hot pepper
1 cup very thinly sliced fresh basil leaves
2 cups hot cooked rice

Steps:

  • Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
  • Heat large skillet over high heat. Drizzle in oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes. Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes. Add about a tablespoon of the sauce mixture to the skillet; cook and stir until sauce begins to caramelize, about 1 minute.
  • Pour in the rest of the sauce. Cook and stir until sauce has deglazed the bottom of the pan. Continue to cook until sauce glazes onto the meat, 1 or 2 more minutes. Remove from heat.
  • Stir in basil. Cook and stir until basil is wilted, about 20 seconds. Serve with rice.

Be careful when handling Bird’s Eye Chilis - they can sting your fingers and anything you touch; these are best handled while wearing gloves.) Set aside.

  • Prep: Finely mince garlic. Remove the chili pepper seeds and finely diced. Set aside 1.5 cups Thai basil leaves. Combine the Thai basil chicken sauce in a bowl. Set it aside ready to use.
  • Thai-Style Sunny Side Fried Egg: Preheat a wok over medium-high heat until it’s too hot to place your palm near the surface, about 2-3 inches away. Add 3 tbsp oil. Swirl it around to distribute it evenly. The egg should bubble violently the moment it hits the hot pan. Be careful the splatter. Carefully spoon the oil over the egg to make a sunny side fried egg that’s golden crispy at the bottom yet the yolk is still runny. Repeat the process. Add more oil if needed and set them aside.
  • Basil Chicken: While the wok is still hot, add 2-3 tbsp oil. Fry garlic and chili with 2 pinches of salt over medium-high heat until fragrant, about 8-10 seconds.
  • Add ground chicken. Turn the heat high. Try to break the meat apart and spread it out evenly. Cook uncovered until the bottom gets slightly browned then cook the flip side. The total cooking time will be about 5-7 minutes. Break the meat further to finer pieces as you cook.

  • Mince the chilis and garlic together until a rough paste forms (see the blog post above for step-by-step pictures). You can also blend both together in a small food processor or use a mortar & pestle.
  • Add the oil and garlic-chili paste to a large skillet and heat over medium-high heat. Cook until the aromatics are fragrant and the garlic is just barely starting to brown.
  • Add the ground chicken. Move the aromatics onto the chicken using your spatula to prevent the aromatics from burning. Spread out the chicken and let it cook without disturbing for 1 minute, to let the bottom brown. Break apart the chicken, let cook, stirring occasionally, until the chicken is almost cooked through and the chicken juices have cooked off, 2 minutes or so. I prefer to keep some larger chunks of chicken without breaking them into a million pieces.

AUTHENTIC THAI BASIL CHICKEN RECIPE (ผัดกระเพราไก่)

From eatingthaifood.com
  • Rinse and peel the garlic and chilies, and pound them in a mortar and pestle (alternatively you can just mince them with a knife). They don't need to be super fine, you just want to bring out the oils and flavors from the garlic and chilies.
  • Now it's time to start cooking. Heat your wok on high heat, and add about 1 tablespoon of oil to the pan.
  • When the oil is hot, add the chilies and garlic. Stir fry them for about 20 seconds or so until they get really fragrant, but don't let them burn or get too dry.
  • Toss in your chicken. Keep stir frying continuously. At this stage you want to continue to stir and cook your chicken until it's just about fully cooked all the way through (depending on the size pieces of chicken and how hot your fire is, it should take about 2 - 3 minutes).
  • Add 1 teaspoon of oyster sauce, ½ teaspoon light soy sauce, ½ teaspoon sugar, and finally a splash of dark soy sauce. Keep stir frying for about another 30 seconds.
  • Grab a handful of holy basil, toss it into the pan, fold it into the chicken, and then immediately turn off the heat (if you're using an electric stove, you'll want to remove the pan from the burner).
