THAI BANANAS IN COCONUT MILK



Thai Bananas in Coconut Milk image

A classic Thai dessert that is very simple, quick and easy to make, this sweet and creamy dish will be a delight.

2 bananas (peeled and sliced into thick rounds)
180 ml coconut milk
1 tbsp + 1 tsp white sesame seeds
90 g white sugar
120 ml water
½ tsp salt

Steps:

  • Melt sugar in water. In a pot on medium heat, mix sugar and water for 5 minutes, until sugar dissolves.
  • Add sliced bananas. To the same pot, add sliced bananas and simmer for 10 minutes, until the bananas have turned slightly translucent and most of the liquid has evaporated. Remove the bananas from the pot and spoon into serving bowls.
  • Make coconut milk sauce. In the same pan, add coconut milk, ½ tsp salt and sesame seeds. Bring to boil and remove from heat.

Steps:

  • Bring the coconut milk to a boil in a pot. Add the bananas to the coconut milk and cook until tender, about 15 minutes. Dissolve the sugar and salt into the mixture. Stir the coconut cream through the mixture. Remove from heat; serve hot.

1 cup coconut milk
2 tablespoons sugar (or other sweetener of your choice)
1/4 teaspoon ground cinnamon

Steps:

  • Peel the bananas and cut into bite-sized pieces.
  • In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.
  • Add the bananas.
  • Bring back to a boil, then turn down the heat and simmer for 2 - 4 minutes, until the bananas are tender but not mushy.
  • Serve hot, sprinkling extra cinnamon on top if desired.

Steps:

  • In a saucepan, heat the coconut milk with the cinnamon, sugar and salt, and cook gently until the sugar has dissolved. Add the banana pieces and cook gently for 5 minutes.
  • Remove cinnamon and discard.
  • Divide the mixture into 6-8 small bowls and serve warm.
