THAI-STYLE SATAY DRUMSTICKS

This easy recipe translates that favorite Thai appetizer, chicken satay, into a more substantial dinner.

3-inch piece ginger, peeled and finely grated (about 3 tablespoons)
1/2 cup plus 2 tablespoons coconut milk
1/4 cup plus 1 teaspoon fish sauce
3 tablespoons honey
Juice of 3 limes
6 cloves garlic, minced
Kosher salt and freshly ground black pepper
8 chicken drumsticks (about 2 pounds), skin on
1 teaspoon canola oil
1/3 cup creamy peanut butter
1/4 cup fresh cilantro leaves
Lime wedges, for serving

Steps:

  • Preheat a grill for cooking over medium heat. Whisk together the ginger, 2 tablespoons coconut milk, 1/4 cup fish sauce, 2 tablespoons honey, juice of 1 lime, half the minced garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl. Pierce the skin of the drumsticks all over with the tip of a knife or fork. Toss the drumsticks with the marinade to coat and set aside.
  • Meanwhile, heat the canola oil in a small saucepan over medium heat and add the remaining garlic. Cook, stirring often, until the garlic is golden, about 30 seconds. Remove from the heat and whisk in the remaining 1/2 cup coconut milk, 1 teaspoon fish sauce, 1 tablespoon honey and juice of 2 limes. Whisk in the peanut butter and 1 tablespoon water. Stir until well combined and season with 1/4 teaspoon salt. Set aside.
  • Grill the drumsticks, turning halfway through and basting twice with the marinade, until they are charred and crisp, 8 minutes. (Discard the remaining marinade.) Reduce the heat to low, then cover and cook until the drumsticks are tender, crisp and cooked through, 25 to 30 minutes. Remove the drumsticks to a bowl. Add half of the peanut sauce and toss to coat. Sprinkle with the cilantro leaves and serve with the lime wedges and remaining peanut sauce on the side.

1 3/4 lbs. (800 g) chicken drumsticks
2 tablespoons finely chopped cilantro stems
3 cloves garlic, minced
chopped cilantro leaves, for garnishing
Thai sweet chili sauce, for dipping
1 tablespoon oil
1 3/4 tablespoons fish sauce
2 tablespoons coconut milk
1 tablespoon honey or Thai palm sugar
3 dashes ground black pepper
1 pinch cayenne pepper
1 pinch turmeric powder

Steps:

  • Preheat oven to 375°F (190°C).
  • Rinse the chicken and pat dry with paper towels. Combine all the ingredients in Marinade, whisk to mix well to form a nice milky pale yellow mixture.
  • Add the cilantro and garlic to the chicken, rub onto the chicken drumsticks with your hand. Add the Marinade to the chicken, mix to coat well and marinate for 30 minutes or best for two hours.
  • Arrange the chicken on a cookie sheet lined with parchment paper, bake for 40 minutes or until the chicken is cooked through. Garnish with chopped cilantro and serve immediately with Thai sweet chili sauce.

SIMPLE BAKED CHICKEN DRUMSTICKS

I wanted a basic way to cook drumsticks since they are cheaper than the breasts. I didn't want alot of spice or sauce on it so if you are looking that, this is not the recipe for you. We found it just right for us, the flavor of the chicken really comes through. I served with corn and twice baked potato casserole.

9 -12 chicken drumsticks
garlic powder
pepper
salt
olive oil
rosemary (optional)
parsley

Steps:

  • Put some olive oil in the bottom of a 9x13 pan (just enough to put the drumsticks on).
  • Add drumsticks (space enough apart so they aren't touching each other).
  • Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt. Add rosemary to the chicken, if desired.
  • Bake at 375° F for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before). Top with the parsley.
  • Bake another half an hour, or until cooked until 160°F.

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. 15ml (1 tbsp) paprika
5ml (1 tsp) salt
5ml (1 tsp) ground cumin
2.5ml (½ tsp) black pepper
1.25ml (¼ tsp) cayenne pepper
10ml (2 tsp) brown sugar
1½ oranges, zested and juiced
8 chicken drumsticks

Steps:

  • Mix all the ingredients in a plastic bag and marinate the chicken overnight. It helps to knead the bag every now and then to make sure the chicken is completely covered.
  • Preheat the oven to 140°C/fan 120°C/285°F/gas mark 1.
  • Arrange the drumsticks in a dish in a single layer. Drizzle a bit of marinade over them to keep them moisturized. Cover with foil and bake in the oven for 40 minutes.
  • Take the chicken out of the oven and increase the temperature to 180°C/fan 160°C/350°F/gas mark 4.
  • Remove the foil and pour a bit more marinade to the chicken and make sure the drumsticks are well-coated.
  • Return the chicken to the oven and bake for another 20 minutes, turning several times, until the chicken is tender and nicely glazed.
  • Let the chicken rest for a few minutes before serving.

  • Preheat the oven to 425 degrees F (218 degrees C). Line a rimmed baking sheet with foil and place an oven safe rack on top. (I use this set, which includes the baking sheet and rack that fits perfectly.)
  • Pat the chicken legs dry with paper towels, which will help them get crispy. Arrange the chicken legs on the rack.
  • Brush the chicken drumsticks with melted butter. Season with smoked paprika, garlic powder, salt and pepper.

6 tablespoons unsalted butter
½ cup extra-virgin olive oil, divided
1 pinch garlic salt, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a glass baking dish with aluminum foil.
