2 4 ounce size boneless, skinless Chicken Breast halves
2 tablespoons Olive Oil
1 teaspoon chopped Garlic
1/2 cup shredded Chihuahua White Cheese
2 slices American Cheese
Prepared Mashed Potatoes
2 tablespoons chopped Garlic
2 tablespoons chopped Parsley
2 ounces Olive Oil
1 teaspoon crushed Red Chilies
1/4 teaspoon freshly ground Black Pepper (to taste)
1/4 teaspoon Salt
1 Green Bell Pepper (julienned)
1 Red Bell Pepper (julienned)
1 Yellow Onion (julienned)

Steps:

  • Pound chicken breasts to even thickness.
  • Combine all marinade ingredients.
  • Place chicken breasts in marinade and refrigerate for 2 to 4 hours.
  • Slice peppers and onions and sauté in olive oil until soft.
  • Season with salt and pepper.
  • Sauté chicken breasts in olive oil over medium heat; cook evenly on both sides to a golden brown color.
  • Heat cast iron skillet on burner over medium heat until very hot.
  • Place mashed potatoes on top portion of skillet.
  • Place cheeses on bottom portion of skillet and cover with pepper and onion medley.
  • Add chicken to top of pepper and onion medley, resting on potatoes.
  • Top with chopped parsley.
  • Serve directly from skillet like they do at T. G. I. Fridays.

These EASY marinated chicken breasts served over melted cheese with onions, red & green bell peppers and mashed potatoes come together quicker than you may think! Find out how to make TGI Fridays copycat recipe the EASY way!

2 lbs chicken breasts ((each chicken breast sliced in half))
5 oz bell peppers (sliced)
1/2 onion (sliced)
1 cup Italian dressing (plus 2 TBSP for peppers & onion)
3 tbsp canola oil
1 cup Monterey Jack cheese (grated)
4 cups Mashed potatoes

Steps:

  • Heat a large oven-safe skillet over high heat. Sear the bell peppers and onion in 1 tsp of oil for 3 minutes or until charred-looking. Add 2 TBSP of Italian dressing and stir to coat. Remove and set aside.
  • Season the chicken breasts with salt, pepper, and paprika on both sides. Add 2 tbsp of oil into the same skillet and sear the chicken breasts for 2 minutes on each side. Remove and set aside.
  • Pour 1 cup of Italian dressing into the same skillet (still over high heat) and deglaze the pan for 1 minute. Remove from heat and pour dressing aside.
  • Lightly grease the pan with 1 1/2 tsp of oil. Sprinkle 1/2 cup of cheese onto the bottom and spread 4 cups of mashed potatoes over the cheese. Sprinkle with the remaining 1/2 cup of cheese. Layer the chicken breasts a top and pour over the dressing. Garnish with bell peppers and onion.
  • Bake at 400° F for 20-30 minutes or until sizzling hot.

2 tablespoons fresh garlic (grated)
2 tablespoons fresh parsley (chopped)
1 teaspoon Cajun seasoning
1/4 cup + 1 tablespoon extra virgin olive oil
1 lime (zested and juiced)
1/2 pound boneless (skinless chicken cutlets, pounded to 1/4" thickness)
1/2 pound large shrimp (peeled ad deveined)
2 cups bell pepper (cut into strips)
1 medium onion (sliced into half moons)
1 cup cherry tomatoes (quartered)
1 cup shredded Mexican cheese
Kosher salt and pepper (to taste)
Sliced green onion (for garnish)

Steps:

  • Mix the garlic, parsley, Cajun seasoning, 1/4 cup of olive oil, lime zest and juice in a bowl.
  • Stir to combine, then pour half onto the chicken. Swish the chicken cutlets around the coat them in the marinade, then cover with plastic wrap and refrigerate for 2-3 hours.
  • About 30 minutes before you start cooking, pour the remaining marinade onto the shrimp.
  • Slice the peppers, onions and tomatoes and sauté in 1/2 tablespoon of olive oil until tender, about 5-7 minutes. Season with salt and pepper.
  • Saute the chicken breasts and shrimp in 1/2 tablespoon of olive oil over medium heat; cook evenly on both sides to a golden brown color.
  • To serve, heat cast iron skillet on burner over medium heat until very hot. Sprinkle the cheese onto the bottom of the skillet, then place a mound of mashed potatoes on one half of the skillet.
  • Cover the other half of the skillet with the pepper and onion medley. Add the sliced chicken and shrimp on top of pepper and onion medley. Top with chopped scallions, then serve "sizzling."
