TEXAS FRIED ONION WEDGES
These are yummy!! I use the same recipe to make Fried Stuffed Jalapenos. This recipe is from HEB Grocery, it a store here in Texas!!

Steps:
- Peel onions and cut each one into 12 wedges. Leave wedges attached at its root.
- Soak onion in cold water for 1-2 hours until each wedge fans out and seperates its layers.
- Remove onion wedges and place on paper towels to drain.
- Combine flour, cornmeal and seasonings in a bowl. In another bowl, pour buttermilk.
- Heat oil to 375.
- Dip onion wedge in buttermilk and then flour mix. Shake off excess. Carefully drop in oil.
- Fry about 4-5 wedges at a time for about 3-5 minutes.
- Drain on paper towels.
- **The original recipe calls for Fajita Seasonings, but it would not let me enter it. But I guess you could use whatever seasonings you wanted.

- Slice unpeeled potatoes into wedges (12-14 per potato). In a small bowl, beat egg and milk. In another bowl, combine flour and seasonings. Dip potato wedges into milk mixture; dust with flour mixture. Place in a single layer on an ungreased baking sheet. Drizzle with oil. Bake at 450° for 20-25 minutes or until golden brown and tender.

- Place onions in a baking dish coated with cooking spray.
- Combine remaining ingredients and drizzle over onions, coating evenly.
- Cover dish with foil or lid and bake at 450 for 25 minute Uncover dish, baste onions, and bake uncovered for 25 min more or til tender and browned.

CRISPY FRIED POTATO WEDGES
I leave the skin on for extra flavor but you can peel the potatoes if desired. Use one large slice of onion but do not chop as the onion slice will be removed before frying the potato wedges. Plan ahead the boiled potatoes need to be chilled before frying. You can fry the wedges slightly ahead and just crisp them up in the oven before serving.

Steps:
- Cook the potatoes with the peel on in boiling salted water to cover for about 12-14 minutes or until just fork-tender; drain cool slightly then chill for about 4 hours or up to 24 hours (or until cooled).
- Peel the potatoes if desired (I leave the skin on).
- Cut the potatoes into quarters.
- Heat oil and butter in a skillet until hot.
- Add in the onion slices; saute until the onion starts to turn golden; remove and discard onion (or you may leave the onion in).
- Add in potato wedges and fry for about 6-8 minutes or until golden on each side.
- Remove the wedges from the skillet onto paper towels then season immediately with seasoned salt (or white salt) and pepper if desired.
- Serve immediately.

I was at work early one day and got bored and hungry, so I thought I would try to make up a new recipe for fried potato wedges. It turned out so good, I gave the recipe to the restaurant I currently work at.

- Preheat oil to 350ºF.
- Mix batter mixture until smooth.
- Cut each uncooked potato into 8 wedges, and soak in batter mixture for at least 20 minutes.
- Roll potato wedges in flour mixture, put them back in batter mixture, then flour again.
- Fry wedges for 3½ minutes or until golden brown.
