1 (16 ounce) package dried pinto beans
4 1/2 cups water
1/2 small onion, chopped
2 cloves garlic, minced
2 bacon, slices cut into 1 inch pieces
1 teaspoon salt
1 medium tomatoes, diced
4 jalapeno peppers, seeded,and chopped

Steps:

  • Place beans in a Dutch oven; add water 2 inches above beans.
  • Bring to a boil; boil 1 minute; cover, remove from heat and let stand 1 hour; drain.
  • Bring beans, 4 1/2 cups water, and next 4 ingredients to a boil in a Dutch oven.
  • Cover, reduce heat, and simmer, stirring occasionally, 1 hour and 30 minutes or until tender.
  • Add tomato and jalapeno pepper, and simmer mixture for 30 more minutes.

4 (15-oz.) cans black beans, drained, rinsed
4 garlic cloves, minced
3/4 cup finely chopped onion
1 1/2 cups ketchup
1/2 cup firmly packed brown sugar
1/2 cup barbecue sauce
2 tablespoons prepared mustard
2 tablespoons Worcestershire sauce
3 teaspoons chili powder
1/2 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce

Steps:

  • Cook bacon in large skillet over medium heat until crisp. Remove bacon from skillet; drain on paper towels.
  • In 4 to 5-quart slow cooker, combine all remaining ingredients; mix gently. Crumble bacon; sprinkle over bean mixture.
  • Cover; cook on low setting for 4 to 6 hours.

8 slices thick-cut bacon, chopped
1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

8 strips bacon
1 pound lean ground beef
1 cup onion chopped
1 (16-ounce) can pork and beans
1 (16-ounce) can red kidney beans

1 1/2 cups ketchup

1 teaspoon Worcestershire sauce
1/2 cup brown sugar, or more to taste
1/4 cup granulated sugar

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. In a large skillet over medium heat, fry bacon until just crisp.
  • Remove to paper towels to drain and set aside.
  • Remove all but a few teaspoons of drippings from skillet. Add ground beef and chopped onion and place back over medium heat. Cook, stirring and breaking up beef, until onion is tender and beef is no longer pink.
  • Drain canned beans in a colander and run cold water over them to rinse.
  • In a large bowl, combine ground beef mixture with drained beans.
  • In another bowl, combine ketchup, mustard, Worcestershire sauce, and both sugars; mix well to blend.
  • Pour over bean mixture and stir to blend.
  • Spoon bean mixture into a 2 1/2- to 3-quart baking dish. Sprinkle crumbled bacon over top.
  • Bake in preheated oven for about 1 hour.

5 (15-oz.) cans pinto beans, drained and rinsed
¾ cup barbecue sauce (such as Sweet Baby Ray's Original Barbecue Sauce)

2 teaspoons chili powder
1 teaspoon kosher salt

Steps:

  • Preheat oven to 350°F. Cook bacon in a large skillet over medium, stirring occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a paper towel-lined plate, reserving 2 tablespoons of the drippings in skillet; reserve remaining drippings for another use. Increase heat to medium-high. Add onion, bell pepper, jalapeños, and garlic; cook, stirring often, until tender, about 6 minutes.
  • Add beer, and bring to a simmer over medium-high. Simmer, stirring occasionally, until slightly reduced, about 3 minutes. 1 tablespoon sugar
6 drops bottled hot pepper sauce

Steps:

  • Gather the ingredients.
  • In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
  • Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.
  • Bring the beans to a simmer and cover. Cook on medium-low heat, covered, for 2 hours.

Steps:

  • Check for a date on the beans; freshness matters. Dried beans last up to two years, but are best cooked within a year of harvest.
  • Always rinse beans before cooking, and check for stray rocks, twigs and leaves.
  • Wash them well and place them in a pot with clean water to soak over night. Next day, drain the water and put fresh water over them, then continue with the recipe.
  • If you do not want to let them soak overnight, place the chopped onions, salt and garlic together in the pot, cover it with a lid and bring it to a boil.
  • When the beans start boiling, reduce the heat and let them simmer for about 90 minutes to 2 hours until the beans are soft. The time varies based on the type of beans or how dry they are.
  • Make sure that there is enough water during the cooking process. There should always be liquid covering your beans as they cook.
  • To make sure your beans are cooked thoroughly, scoop up a couple of beans and blow on them. The skin should curl and wrinkle. Then taste. They are done when they're tender and cooked through to the center (but not mushy). Let them cool in their cooking liquid.
  • Before removing the beans from the heat, add the epazote.
  • Serve them with salads, rice, warm corn tortillas, grilled meats etc.
