TEXAS TAMALE BALLS
This is one of my husband's favorite appetizers. You can adjust the spices to suit your taste. Enjoy!!

Steps:
- 1. Mix meats, V-8 juice, and eggs.
- 2. Combine dry ingredients.
- 3. Add the dry ingredients to the meat mixture. Be sure that all dry mix is evenly blended with meat.
- 4. Pinch off a small amount and roll into marble or bite-size balls. NOTE: I used a small cookie scoop (either way works fine).
- 5. Place on two large cookie sheets with sides.
- 6. Bake at 350 for 25-30 minutes depending on the size of the balls.
- 7. Pour both bottles of sauce into a slow cooker. Add the chili powder. Put the slow cooker on high.
- 8. Once the meatballs are cooked, add them to the slow cooker on high. After about an hour, turn the slow cooker to warm and serve.
EASY TEXAS RICE
I also like to add in a couple tablespoons of fresh garlic in with the onion as well as the addition of garlic salt, and also some cayenne pepper for heat, prep time includes browning the rice.

- In a saute pan, brown the rice in oil over low to medium heat, stirring constantly (watch closely as it burns easily).
- When the rice is brown, add the onion, bell pepper, chili powder and garlic salt.
- Turn the heat to high, and cook for 1 minute, stirring constantly.
- Add the tomatoes, and then chicken stock; bring to a boil, cover, reduce the heat, and simmer for 10 minutes.
- Remove from heat, and let stand for 15-20 minutes.

VEGAN TAMALES
Adapted from another vegan tamale recipe, but with my own filling. Spicy and delicious.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Place a rack in the bottom of a large roasting pan.
- Strip husks from corn and set aside for tamales. Remove kernels from one ear for filling. Reserve other ears for another use.
- Prepare filling: Heat coconut oil in a skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add black beans, diced tomatoes with habanero peppers, and salsa; cook until most of the liquid has evaporated, 3 to 5 minutes. Stir in reserved corn kernels and cook for 3 minutes. Remove from the heat.
- Prepare dough: Combine 3 cups water and bouillon in a small bowl; stir to dissolve.
- Mix masa, baking powder, and salt together in a large bowl. Stir in melted coconut oil until well combined. Mix in bouillon. Add more water if needed to make a soft, spongy dough.
- Smooth a 3-inch square of dough (1/4- to 1/2-inch thick) onto a corn husk. Place 1 to 2 tablespoons filling into the center of the dough. Fold the sides of the husk in over the filling, then repeat with the top and bottom; you may need to use more than one husk per tamale. Use thin pieces of husk as string to tie tamale together; it doesn't have to be perfect. Repeat to make remaining tamales.
- Set tamales on the prepared rack. Pour about 2 cups water into the bottom of the roasting pan, making sure tamales are well above the water. Cover the pan tightly with several sheets of aluminum foil.
- Bake in the preheated oven for 35 to 45 minutes. Remove from the oven and let sit, untouched, for 15 to 20 minutes before serving.

TEXAS TAMALE SALAD
This is my own recipe inspired by my mother's love for lettuce and tomato on top of her Mexican food. Her habit has followed me all my life and today, my tamale salad is a hit wherever it is shared. I hope you like it, too!

- 1. Preheat oven to 350 degrees. Remove shucks from tamales and place them in the bottom of a glass rectangular pan. Spread beans over the tamales, then layer on the chili. Place in oven for 30 minutes.
- 2. Chop lettuce, tomato, cilantro and onion and toss together.
- 3. Plate the tamales (2 to 3 per person) and top with a generous portion of the salad. We like to sprinkle some grated Mexican cheese mixture to the top. You can add salad dressing if you like, but might try it without first. Most like it without salad dressing.
