BRUNCH BURRITOS



Brunch Burritos image

I like to use a second slow cooker to keep the tortillas warm and pliable when I serve these hearty burritos. Just place a clean wet cloth in the bottom, then cover it with foil and add your tortillas.-Beth Osburn, Levelland, Texas

Number Of Ingredients 12

1 pound bulk pork sausage, cooked and drained
1/2 pound bacon strips, cooked and crumbled
18 large eggs, lightly beaten
2 cups frozen shredded hash brown potatoes, thawed
1 large onion, chopped
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (4 ounces) chopped green chiles
1 teaspoon garlic powder
1/2 teaspoon pepper
2 cups shredded cheddar cheese
10 flour tortillas (10 inches), warmed
Optional toppings: Jalapeno peppers, salsa and hot pepper sauce

Steps:

  • In a large bowl, combine the first 9 ingredients. Pour half of the egg mixture into a 4- or 5-qt. slow cooker coated with cooking spray. Top with half of the cheese. Repeat layers., Cook, covered, on low 4-5 hours or until center is set and a thermometer reads 160°., Spoon 3/4 cup egg mixture across center of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Add toppings of your choice.

12 fresh flour tortillas
8 jumbo eggs
1/4 cup whole milk
salt
pepper
4 ounces cooked and drained breakfast sausage
3 ounces roughly chopped yellow onions
4 ounces grilled bacon
4 ounces grilled ham
6 ounces fried potatoes
3 sliced fresh jalapenos or 3 serranos
12 slices colby-monterey jack cheese

Steps:

  • mix eggs salt pepper and milk and beat until foam starts.
  • cook and drain breakfast sausage with onion in skillet.
  • grill ham.
  • grill bacon.
  • deep fry crispy crowns or tater tots or favorite potatoes.
  • add meat, taters and (sliced fresh jalepenos completely optional) to large skillet.
  • set temp to medium low on range.
  • add egg mixture.
  • let mixture cook slow shaking skillet to allow uncooked eggs to bottom like an omelet.
  • in seperate skillet heat tortillas with slice of cheese.
  • when eggs have cooked to desired doneness.
  • assemble burrito by adding egg meat mixture to cheese.
  • add picante, pepper sauce, red chile sauce or fresh salsa as desired.
  • serve with cold beer.

This is the best bacon breakfast burrito recipe is so delicious and will quickly become a favorite of yours!

8 oz bacon
2 tsp butter
6 eggs
½ tsp salt
½ tsp garlic powder
1 cup pepper jack cheese shredded
1 white onion (diced)
½ cup cilantro (chopped)
Salsa of choice
6 Flour Tortillas

Steps:

  • If making pico or salsa do that first.
  • In a medium fry pan cook bacon* until done to your desired crispiness. When cool enough cut into small pieces. Set aside.
  • Whisk together eggs, salt, pepper and garlic powder. In a cold nonstick pan add the butter and the whisked eggs. Turn heat to medium and whisk continuously until eggs are cooked. *

  • Slice the brisket, warm if it's cold and set aside. Grate your cheese for the scrambled eggs. Heat your refried beans. Prepare your Pico De gallo.
  • Heat a large skillet or griddle to heat your flour tortillas. Meanwhile, beat your eggs, add a little salt and pepper and scramble in skillet with the melted butter. Add the cheese to the eggs while scrambling. Remove from the heat and set aside.
  • To assemble: Heat your flour tortilla by flipping back and forth on a heated griddle or a large skillet. Lay on a flat surface. In the middle of the tortilla, leaving room to fold on each side, apply a layer of refried beans. Then in strips...add the brisket, then the cheesy eggs, then the hashbrowns, and lastly a strip of the pico de gallo.
  • Fold each side in, then start rolling, tucking to make a tight roll, making sure the sides are secure, until the burrito is complete. Wrap in foil. I like to half, but serve anyway you want. Serve with your favorite salsa, more pico if you want, some sour cream and guacamole. Enjoy!
