TEXAS BARBECUE BRISKET

Texas barbecue brisket image

Take your barbecue beyond the burger with this brilliant beef brisket

Provided by Good Food team

Categories     Buffet, Dinner, Main course, Supper

Time 6h30m

Number Of Ingredients 17

about a 5kg/ 11 lb piece of beef brisket
500 ml/ 18 fl oz beef stock
1 tbsp sunflower oil
1 small onion , finely chopped
3 garlic cloves , crushed
500 ml/ 18 fl oz tomato ketchup
100 ml/ 3.5 fl oz Worcestershire sauce
75 ml/ 2.5 fl oz lemon juice
2 tbsp brown sugar
1 tbsp malt vinegar
2 tsp Dijon mustard
1 tsp crushed chilli flakes
1 tsp Tabasco sauce
1 tsp dried thyme
2 tbsp each chilli powder and mustard powder
1 tbsp each paprika , ground cumin, garlic powder, ground black pepper, caster sugar
1 bay leaf , crushed

Steps:

  • To make the barbecue sauce, heat the oil in a frying pan, then cook onion and garlic for a few mins until soft. Add the rest of the sauce ingredients to the pan with a good pinch of salt and simmer for 20 mins. Use a hand blender or food processor to whizz to a smooth purée.
  • Heat oven to 150C/130C fan/gas 2. Make the rub by mixing all the ingredients together with a pinch of salt. Rub the mix all over the beef and set aside.
  • In a large roasting tin, mix the beef stock and ½ the barbecue sauce. Add the brisket to the tin, cover tightly with foil, then cook for 4-5 hrs until the meat is really tender when you push a fork into it. The beef can be prepared the night before - just leave it to cool in the tin covered with foil, but don't refrigerate.
  • To finish the beef, get a barbecue fired up and wait until the coals are completely ashen - you want a low, not fierce, heat. Lift the beef out of the roasting tin and place on the barbecue to char. If your barbecue has a lid, close it now. Cook for about 20 mins, turning it carefully with tongs, until lightly charred all over and heated through. Lift onto a board and serve sliced with the remaining barbecue sauce on the side.

SLOW-COOKED, TEXAS-STYLE BEEF BRISKET

Slow-Cooked, Texas-Style Beef Brisket image

This slow-cooker recipe comes directly from the heart of a wonderful Texas cook who makes the best brisket in the world! Yay, Papa Louis! He shared it with me years ago, via my sister (his daughter-in-law). I change it from time to time by adding ingredients to make it more Mexican (serve it with tortillas), or leave it as is and serve it with fresh rolls.

Yield Makes 10 to 12 servings

Number Of Ingredients 13

Grilling Method
Indirect grilling
Advance preparation
4 to 8 hours for curing the meat (optional); also, allow yourself about 6 hours cooking time
Special equipment
6 cups hickory or mesquite chips or chunks, soaked for 1 hour in cold water to cover and drained
Ingredients
1 beef brisket (5 to 6 pounds), with a layer of fat at least 1/4 inch thick, preferably 1/2 inch thick
1 tablespoon coarse salt (kosher or sea)
1 tablespoon chili powder
2 teaspoons sugar
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin

Steps:

  • 1. Rinse the brisket under cold running water and blot it dry with paper towels.
  • 2. Combine the salt, chili powder, sugar, pepper, and cumin in a bowl and toss with your fingers to mix. Rub the spice mixture on the brisket on all sides. If you have time, wrap the brisket in plastic and let it cure, in the refrigerator, for 4 to 8 hours (or even overnight), but don't worry if you don't have time for this-it will be plenty flavorful, even if you cook it right away.
  • 3. Set up a charcoal grill for indirect grilling and preheat it to low. No drip pan is necessary for this recipe.
  • 4. When ready to cook, toss 1 1/2 cups of the wood chips on the coals (3/4 cup per side). Place the brisket, fat side up, in an aluminum foil pan (or make a pan with a double sheet of heavy duty aluminum foil). Place the pan in the center of the hot grate, away from the heat. Cover the grill.
  • 5. Smoke cook the brisket until tender enough to shred with your fingers; 6 hours will likely do it, but it may take as long as 8 (the cooking time will depend on the size of the brisket and heat of the grill). Baste the brisket from time to time with the fat and juices that accumulate in the pan. You'll need to add 10 to 12 fresh coals to each side every hour and toss more wood chips on the fresh coals; add about 3/4 cup chips per side every time you replenish the coals during the first 3 hours.
  • 6. Remove the brisket pan from the grill and let rest for 15 minutes. Transfer the brisket to a cutting board and thinly slice it across the grain, using a sharp knife, electric knife, or cleaver. Transfer the sliced meat to a platter, pour the pan juices on top, and serve at once.
  • Barbecue Sauce, the Texas Way
  • The best Texas-style barbecue sauce combines the sweetness of Kansas City-style tomato sauces with the mouth-puckering tartness of a North Carolina vinegar sauce. I've come up with my own version-mix together equal parts of the Basic Barbecue Sauce and the North Carolina Vinegar Sauce . Serve this with barbecued brisket. For a really good sauce, add some meat drippings or a little chopped brisket.

OVEN BBQ BEEF BRISKET RECIPE

Oven BBQ Beef Brisket Recipe image

This slow roasted BBQ Beef Brisket recipe is made in the oven or slow cooker for the most tender and juicy meat ever, with a sweet & smoky barbecue sauce! I'm sharing all my best tips for how to cook brisket for a crowd, since this is a great choice for large dinner parties. It's so good, no one will care the meat wasn't smoked for hours!

Provided by Amy Nash

Categories     Dinner

Time 5h10m

Number Of Ingredients 9

5-6 pounds brisket
3 Tablespoons Worcestershire sauce
3 teaspoons table salt
2 teaspoons celery salt
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons granulated sugar
20 ounces hickory-flavored barbecue sauce ((Sweet Baby Ray's is my favorite))
3/4 cup brown sugar

Steps:

  • The night before you plan to cook and serve the brisket, combine the salt, celery salt, garlic powder, onion powder and sugar in a small bowl and set aside. Place the brisket in a large roasting pan and trim the fat if it is thick, but leave at least a 1/4" layer. Moisten the brisket with all of the Worcestershire sauce, then sprinkle the top and bottom of the brisket with half of the mixed seasonings, reserving the other half. Cover tightly with foil and place in the refrigerator overnight.
  • The next day, preheat the oven to 250°F. Remove the brisket from the fridge and uncover. Sprinkle it with the remaining seasonings, then cover it with foil again and place it in the oven to roast for 5-6 hours (plan on approximately 1 hour per pound of meat).
  • Remove the brisket from the oven and remove the aluminum foil. Pour off the fat. In a medium bowl, stir together the brown sugar and barbecue sauce, then pour it over the brisket. Increase the oven temperature to 350°F, then return the brisket to the oven, uncovered, and roast an additional 30 minutes to an hour, or until the sauce is hot and the meat is tender. Remove from the oven and let the meat rest for 15 minutes, then slice into finger-width strips against the grain or chop and serve.

TEXAS SLOW-COOKED BBQ BRISKET

TEXAS SLOW-COOKED BBQ BRISKET image

Categories     Beef

Number Of Ingredients 21

Marinade (Quantities are generous. Halve the recipe if total brisket weight is less than 6 pounds):
1 cup Worcestershire sauce
1 cup red wine
1 can (14 ounces) beef broth
Few drops liquid smoke seasoning (if you wish to enhance the natural smoke and are not using a smoky barbecue sauce)
Juice from 2 limes
4 tablespoons brown sugar
1/4 cup chopped parsley
6 green onions, white and green parts, chopped
1 tablespoon salt
1 tablespoon coarsely ground black pepper
4 cloves garlic, chopped
2 serrano chiles, stemmed and halved
1/4 cup barbecue sauce, such as Bulls Eye or a homemade sauce, recipe follows (optional)
For finishing:
Oil for searing
2 tablespoons barbecue sauce such as Bulls Eye or a homemade sauce
2 tablespoons butter at room temperature
Salt
Pepper
Tender greens or watercress and red-leaf lettuce for garnish

Steps:

  • Three days ahead of time, put the brisket, fat side up, in a large pan at least 2 inches deep or a heavy-duty plastic bag. Combine the marinade ingredients and pour over the brisket. Cover or seal tightly and marinate for 30 to 36 hours. Preheat an outdoor grill. Remove the brisket from the marinade (reserve marinade) and rub with oil. Sear on the grill, fat side down, for 8 to 10 minutes. Turn and sear the opposite side for 8 to 10 minutes. Preheat the oven to 200 degrees. Lay out several overlapping sheets of heavy aluminum foil large enough to enclose the brisket completely. If you are using two briskets, lay one on top of the other. Pour about 1/2 cup of the marinade over the meat, then wrap securely in foil. Refrigerate the remaining marinade for another use within a week or freeze for longer storage. Put the brisket(s) in a roasting pan and place in the center of the oven. Roast, undisturbed, for 8 hours. After 8 hours, remove the brisket. Let it stand 10 minutes, then pour off and reserve the juices. Cover the brisket lightly with foil to keep it warm. You may not wish to use all the juice. If you want a real barbecue sauce taste, stir in 1/4 cup barbecue sauce to taste and cook a few minutes more. If you prefer the natural juices to dominate, add 1/2 cup of reserved marinade to the juices and boil 10 to 20 minutes to reduce and thicken. Then whisk in the 2 tablespoons of barbecue sauce and 2 tablespoons soft butter. Season to taste with salt and pepper. Slice brisket diagonally across the grain about 1/3-inch thick. Arrange slices overlapping on a warm platter, with garnish of greens around edge. Moisten with juices. Pass additional juices. A 10-pound brisket, or two smaller ones totaling 10 pounds, serves about 16.
