1/2 cup all purpose flour (2.25 oz)
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter (softened)
1 cup firmly packed brown sugar
1 large egg
1 ½ teaspoons vanilla
1 cup pecans (toasted and chopped)
1 cup more or less dark or semi-sweet chocolate chips

Steps:

  • Preheat oven to 350. Toast the pecans (if you haven't already) by laying them on a cookie sheet and baking for about 8to 10 minutes. Chop them.
  • Line a 9 inch square pan with foil and spray foil with cooking spray or rub with butter.
  • Thoroughly mix together flour, baking powder and salt. Cream the butter and sugar on high speed. Reduce speed slightly and beat in the egg. Add the vanilla. Add the flour mixture and stir until it's blended in.
  • Spread the mixture evenly in the pan. Sprinkle with nuts and most of the chocolate chips. Bake for about 20 minutes or until cookies are almost set. Do not overbake.
  • Remove from oven and sprinkle remaining chips over hot bars. Let cool completely. Lift foil from pan, set bars on a cookie sheet and score into 12 or 16 bars.

Steps:

  • Whisk together the flour, baking soda, and salt in a medium sized bowl. Set aside.
  • Combine the two sugars and butter in the bowl of an electric mixer. Mix on low until fully incorporated and fluffy. Stir in your eggs and vanilla.
  • Add your dry ingredients to the bowl of wet ingredients. Mix until your dough starts to form. Fold in 3/4 cups of your candies.
  • Chill dough for 30 minutes.
  • Preheat your oven to 350 degrees and line cookie sheets with parchment paper.
  • Roll your dough into 1" rounds. Place 2 inches apart on your prepared baking trays. Press additional candies onto the tops of each cookie.
  • Bake 8-10 minutes or just until the edges start to lightly brown.

Then we super-sized them -- the better to get in more of our favorite candy-coated chocolates. Save some extra candy for topping each cookie before baking. The result, cookies that look just as good as they taste!

2 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 1/2 sticks (1 1/4 cup) unsalted butter, softened
1 3/4 cup packed dark brown sugar
1/4 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups candy-coated chocolates, such as M&M's

Steps:

  • Sift the flour, baking powder, baking soda and salt into a large bowl.
  • Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.

  • Preheat the oven to 350 F.
  • Microwave the butter for about 40 seconds. Butter should be completely melted but shouldn't be hot.

  • Add the flour, baking soda, and salt. Mix until just combined. Dough should be soft and a little sticky but not overly sticky.

1 cup Brown Sugar
1/2 cup + 2 Tablespoons Sugar

3/4 teaspoon Baking Soda
1 teaspoon Cornstarch
1/2 teaspoon Salt
2 cups Plain M & M's ((plus more for placing on top of cookie dough balls))

Steps:

  • Preheat oven to 400 degrees. In a large mixing bowl, cream butter, brown sugar, and sugar for 4 minutes until light and fluffy.
  • Add eggs and vanilla. Mix for 1 minute longer.
  • Stir in flour, cornstarch, baking soda, and salt. Mix just until combined. Fold in M & M's.
  • Scoop cookie dough onto baking sheets. I suggest using parchment paper or Silpat silicone baking sheets on light-colored baking sheets. Place extra M & M's on top of cookie dough balls so the M & M's show up after baking.
  • Bake for 9-11 minutes or until the edges just begin to turn a light golden color. Remove from oven and let set for 5 minutes before removing from the cookie sheet.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
2 sticks (16 tablespoons; 8 ounces) unsalted butter, browned and brought back to room temperature
1 cup + 2 tablespoons dark brown sugar
1/2 cup granulated sugar
3 teaspoons vanilla
2 large eggs, at room temperature
2 cups m&m minis

Steps:

  • Preheat oven to 375 degrees (F). Line 2 large baking sheets with parchment paper; set aside.
  • In a medium-sized bowl whisk together the flour, baking soda, and sea salt; set aside.
  • Place one stick of butter in a small sauce pan over medium-high heat and cook for about 3 minutes - stirring almost constantly - or until the butter has browned. Remove from heat and stir in remaining stick of butter; whisk until completely smooth. Pour the hot butter into a heat proof bowl, then place the bowl in the refrigerator or freezer and bring the butter back to room temperature. *You'll know the butter is at room temperature when you press a finger into the top and it makes a slight indentation.
  • Once the butter is at room temperature...
  • Add the sugars and the vanilla to the browned butter and beat on medium-speed until light and fluffy; about 2 minutes (you may use a stand mixer/ handheld mixer to help if you have one). Add the eggs and beat quickly - for only about 30 seconds - until they're just combined; scrape down the sides of the bowl with a rubber spatula. Let the mixture rest for 5 minutes, then beat the eggs for another 30-45 seconds. Gently fold in the flour mixture with a wooden spoon, stirring only until the flour begins to disappear. Fold in the m&m minis.
  • Roll scant tablespoon sized balls of dough between your palms to form a ball, then place on prepared sheet (make sure to leave a little bit of room in between each cookie for inevitable spreading). Continue this process until all the dough has been rolled. Place baking sheets, one at a time, in preheated oven and bake for 7-8 minutes, or until golden at the edges but still soft in the middle. Let cookies cool for 15 minutes on the sheet before transferring to a wire wrack to cool completely.

1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick; 115g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (200g) mini M&Ms

Steps:

  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Whisk the flour, baking soda, and salt together until combined. Set aside.
  • In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and the brown sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg and vanilla extract and beat on high speed until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed to combine. Add the dry ingredients to the wet ingredients and mix on low until combined. Beat in the M&Ms.
  • Roll cookie dough into very tiny balls, about 1 teaspoon of dough per cookie and arrange on the baking sheets.
  • Bake for 7-8 minutes or until the edges are lightly browned. Slightly flatten each cookie with the back of a spoon if they didn't spread much. While the cookies are still warm, I like to press a couple extra M&Ms into the tops. This is just for looks! Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • Cookies will stay fresh covered at room temperature for 1 week.

1/4 cup instant vanilla pudding mix (not cook-and-serve, not sugar-free)
1/2 teaspoon baking soda
1/4 teaspoon salt, or to taste
3/4 cup M&M'S, plus more for adding to dough mounds (I used Dark Chocolate M&M'S, other varieties may be substituted)
1/2 cup semi-sweet chocolate chips, plus more for adding to dough mounds

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, egg, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.
  • Stop, scrape down the sides of the bowl, and add the flour, pudding mix (add it as a dry ingredient, do not actually make pudding; cook-and-serve and sugar-free are not recommended in this recipe), baking soda, salt, and beat on low speed until just combined, about 1 minute.
  • Add the M&M'S, chocolate chips, and beat on low speed until just combined, about 30 seconds.
  • Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 11 equal-sized mounds of dough, roll into balls, and flatten slightly.*
  • Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 3 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.
  • Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 6 cookies per sheet) and bake for about 12 to 13 minutes (if your cookies are smaller than mine, reduce baking time) or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool.
  • Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.
  • Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Alternatively, unbaked cookie dough can be stored in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 4 months, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

2 c dark brown sugar (packed)
1 1/2 c granulated sugar
24 oz m&m candies
3 large eggs
2 Tbsp pure vanilla extract (mexican or madagascar bourbon work best!)
6 c all purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt

Steps:

  • 1. Cream the butter and sugars. Add vanilla, eggs and M&Ms.
  • 2. In a separate bowl, blend flour, baking soda and salt. Add to the egg and candy mixture. Mix well without over mixing (it makes cookies tough).
  • 3. Make balls about 2 "in diameter and place on an ungreased light aluminum cookie sheet (I use air cushioned). Flatten each ball with the palm of your hand, to about 3/8 of an inch thick. Bake in the oven for 10-12 minutes (depending on how hot your oven gets). Remove cookies when the outer edges of the cookies are barely brown. Allow to cool on the sheets for 5 minutes before removing to cooling racks to cool completely. Makes about 1 1/2 dozen very large cookies; for more, either make another batch or make 'em smaller.
