- In a bowl, combine the first five ingredients; toss gently. In a jar with a tight-fitting lid, combine the oil, vinegar, brown sugar, soy sauce and seasonings; shake well. Add to shrimp mixture; toss. Cover and refrigerate for several hours or overnight. Serve on lettuce; garnish with tomatoes if desired.

This salad is popular in our community, where seafood of all kinds is readily available. It's great for summer picnics, but I serve it year-round. The shrimp, rice, olives, celery and hard-cooked eggs-with a mustard and mayonnaise dressing-make a nice combination.

- Place hot rice in a large bowl. In a jar with a tight-fitting lid, combine the oil, vinegar, mustard, salt and pepper; shake well. Pour over rice; cool to room temperature. Add the celery, shrimp, olives, mayonnaise, pickle, pimientos and onion: toss gently. Cover and refrigerate for 1 hour or until chilled. Garnish with egg slices.

- Split each shrimp lengthwise.
- In a large bowl, combine shrimp, rice, celery, olives, green pepper, pimento and onion.
- Cover the mixture and chill for at least 30 minutes.
- Just before serving, stir together salt, pepper, and mayonnaise and toss with the shrimp mixture.
- Spoon the mixture on top of the lettuce
- Garnish with the tomato wedges and any leftover shrimp.
- Serve with the French dressing.

Steps:
- If using frozen shrimp, thaw according to package instructions. If fresh shrimp, then you'll need to devein.
- Mix remaining ingredients in plastic zip-close baggie
- Add shrimp and toss to coat
- Put in refrigerator for several hours to marinate
- Prepare Zatarain's Cilantro Lime Rice Mix according to package.
- While rice is cooking for 25 minutes (according to package), mix together the diced onion, sweet corn and tomatoes in bowl.
- Mix together remaining salad ingredients together into a separate bowl.
- When rice is done cooking, fluff and mix in the vegetables and add the olive oil mixture. Either serve warm by preparing shrimp now, or cover and refrigerate to add shrimp later.
- When ready to prepare the shrimp, lay in a single layer onto a broiling pan and broil on high in your oven for 7 minutes or until the shrimp are opaque.
- Serve on top of your rice salad and enjoy!
TEXAS RICE
It is not known where this recipe originated, but it has been used as a hot dish on outings and potlucks for at least 30 years. Rice and ground beef in tomato sauce, baked under a layer of shredded cheese. A great way to feed several with hamburger, and easy to keep on hand ingredients. Leftovers can be made into quick roll-ups by microwaving in a tortilla.

- Combine rice and water in a saucepan, and bring to a boil. Reduce heat, cover and simmer for 20 minutes.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons of drippings, crumble and set aside. Add ground beef, green pepper, and onion to the skillet; cook over medium-high heat until the beef is evenly browned. Drain excess grease, and season with salt and pepper.
- Preheat the oven to 400 degrees F (200 degrees C).
- Place beef and cooked rice into a 9x13 inch baking dish. Stir in the tomatoes, bacon and reserved drippings, mixing until everything is well blended. Spread the shredded cheese over the top.
- Bake for 30 minutes in the preheated oven, until cheese is bubbly, and the center is heated through.

- Bring water to boil in large pot; add shrimp and return to boil.
- Reduce heat and simmer 3-5 minutes.
- Drain shrimp well and rinse with cold water. Cool shrimp; peel and devein.
