1 tablespoon mixed peppercorns (black, white, pink, green)
1 teaspoon chili powder
1 teaspoon kosher salt
1 teaspoon light brown sugar
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 tablespoon dark brown sugar
1 teaspoon chili powder
1 teaspoon granulated onion
1/4 teaspoon fresh ground black pepper
4 (3/4 lb) rib eye steaks (about 3/4 pound each and 1-1 1/4 inches thick)
extra virgin olive oil

Steps:

  • To make the rub: using a spice grinder or mortar and pestle, crush the peppercorns; place in a small bowl and thoroughly mix with the rest of the rub ingredients.
  • To make the sauce: in a small saucepan, whisk together all the sauce ingredients with ¼ water; simmer over low heat for about 10 minutes, stirring occasionally, to allow the sugar to fully dissolve and all of the flavors to blend; set aside while you grill the steaks.
  • Allow steaks to stand a room temperature for 20-30 minutes before grilling.
  • Press the rub into both sides of the steaks; lightly brush or spray both sides of the steaks with the olive oil.
  • Grill over direct high heat until the internal temperature reaches 145° for medium rare, 8-10 minutes, turning once halfway through grilling time.
  • Remove from the grill and allow to rest for about 5 minutes.
  • Serve warm with the sauce on the side.

4 boneless beef rib-eye steaks (2 lb.)

Steps:

  • Heat grill to medium-high heat.
  • Mix all ingredients except steaks until blended.
  • Grill steaks 4 to 6 min. on each side or until medium doneness (160ºF), brushing frequently with steak sauce mixture.

1 teaspoon minced garlic
2 sprigs rosemary
1 cup olive oil
24 ounces rib eye steaks
2 ounces butter
1 tablespoon onion, grated
1/4 cup sugar
8 ounces Worcestershire sauce
1 1/4 cups ketchup
1 teaspoon Dijon mustard
1 teaspoon yellow mustard
1/2 teaspoon jerk seasoning
1 tablespoon white vinegar
salt and pepper

Steps:

  • Combine garlic, rosemary, and olive oil in a bowl. Place steaks in mixture and marinate for 1 hour before cooking. On low heat, melt butter in a small saucepan. Add grated onions, minced garlic, and sugar. Using a wooden spoon stir mixture for approximately 3 minutes. Add remaining ingredients. Allow sauce to simmer 8 minutes, stirring occasionally.
  • Heat cast-iron with grill marks until skillet is very hot. Remove steak from marinade and pat semi dry. Place steaks into hot skillet and cook to desired temperature. Baste steak with barbecue sauce to taste.

2 tablespoons olive oil
1/2 cup finely chopped cilantro leaf
1 large shallot, minced
1 garlic clove, minced
1 pinch of finely ground black pepper
1/2 cup butter, at room temperature
4 tablespoons good quality chili powder (try ancho or chipotle)
2 tablespoons salt
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 cup olive oil

Steps:

  • At least a few hours and up to 1 month before you plan to cook, make the butter. In a small skillet over medium heat, heat the oil. Add the cilantro, shallot, and garlic and cook for 2 to 3 minutes, stirring often, until the shallot is soft. Transfer to a bowl and set aside to cool. In a medium bowl, cream the butter with a fork. Add the cilantro mixture and blend well. Transfer to a 12-X-12-inch sheet of waxed paper and form into a log about 8 inches long in the center of the sheet. If the mixture is too warm to handle, just refrigerate for a couple of minutes until it is ready. Roll the butter up in the waxed paper to make a firm log and twist the ends to hold it tight. Place in the freezer until firm.
  • One hour before you plan to cook, make the rub. In a small bowl, mix together the chili powder, salt, granulated garlic, onion powder, and smoked paprika. Add the oil and mix well. Place the steaks on a big platter and brush the wet chili rub evenly on both sides on the steaks. Refrigerate until it is time to cook.
  • Prepare the grill for cooking over direct medium-high heat. Place the steaks directly over the cooking grate. Cook for 4 to 5 minutes per side for medium-rare, or to your desired degree of doneness. Remove to individual serving plates and top each steak with a couple of thin slices of the butter. Let rest for 5 minutes before serving.

3 teaspoons brown sugar
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 small onion, finely chopped
1/2 cup ketchup
1/4 cup water
2 tablespoons steak sauce
2 teaspoons Worcestershire sauce
4 (5 ounce) boneless beef top sirloin steaks, trimmed

Steps:

  • Combine 2 tsp of the brown sugar, the chili powder, cumin, pepper, and salt in a small bowl.
  • Spray a small saucepan with nonstick spray and heat over medium-low.
  • Add the onion and cook, stirring frequently, until softened, about 4 minutes.
  • Add 1 tbls of the spice mixture, the remaining 1 tsp of brown sugar, the ketchup, water, steak sauce, and Worcestershire sauce; bring to a boil.
  • Reduce the heat and cook, covered, stirring occasionally, until the flavors are blended, 10 minutes.
  • Set aside and keep warm.
  • Spray the grill rack with nonstick spray and heat the grill to medium high or prepare a medium-hot fire.
  • Rub the steaks with the remaining spice mixture.
  • Place on the grill rack and grill until an instant read-thermometer inserted into the side of each steak registers 130 degrees, 3-4 minutes on each side.
  • Transfer to a platter, cover loosely with foil, and let stand 5 minutes (until the temperature increases to 135 degrees for medium rare).
  • Serve with the sauce.

3 plum tomatoes, cored and cut in half lengthwise
2 slices red onions, each about 1/2 inch thick
extra virgin olive oil
2 garlic cloves, smashed
3 tablespoons cider vinegar
2 teaspoons light brown sugar
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
4 (12 ounce) rib eye steaks, about 1-inch thick
1 teaspoon paprika
1 teaspoon kosher salt

Steps:

  • Make the sauce: in a small bowl, cover the ancho chile with 3/4 cup boiling and allow the chile to soften for 20-30 minutes, turning occasionally.
  • Lightly brush or spray the tomatoes and onions with oil.
  • Grill over direct high heat until slightly charred, 8-10 minutes, turning once.
  • Place the chile and soaking water, tomatoes, and onions in a blender or food processor; add in the remaining sauce ingredients; process until completely smooth, about 1 minute.

  • Lightly brush or spray the steaks on both sides with oil; season with the spice mixture.
  • Grill the steaks over direct high heat until cooked to desired doneness, 6-8 minutes for medium-rare, brushing with sauce and turning once.
  • Remove from grill and let rest for 3-5 minutes; serve warm with the reserved sauce.

Add the brown sugar and tomatoes and cook until softened, about 5 minutes. Add the reduced vinegar and the barbecue sauce and simmer until reduced to 2 cups, about 5 minutes. Transfer the sauce to a blender and puree until smooth. Add the sambal oelek and season with salt and pepper.
  • Light a grill or preheat a grill pan. Rub the steaks with oil and season generously with salt and pepper. Grill over moderately high heat, turning once, until the steaks are lightly charred and medium-rare, about 6 minutes total. Let the steaks rest for 5 minutes, then garnish with rosemary and serve with the barbecue sauce.
