My pecan praline recipe is special to me for I received it from my mother, who was an excellent cook! I also am a Texas Aggie Mom and I use pecans from a South Texas Aggie grower that our Aggie Mom's club has purchased from for many years. 3 teaspoons butter
1/2 cup butter, cubed
2 cups sugar
1 cup packed brown sugar
1 cup half-and-half cream
1/2 cup sweetened condensed milk
1 tablespoon light corn syrup
Dash salt
3 cups pecan halves
1/2 teaspoon vanilla extract

Steps:

  • Line 3 baking sheets with foil and grease the foil with 1 teaspoon butter each; set aside., In a large heavy saucepan over medium heat, melt cubed butter. Stir in sugars, cream, milk, corn syrup and salt; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes., Remove from heat; stir in pecans and vanilla. Cool, without stirring, to 170°, about 20 minutes. Stir with a wooden spoon until mixture just begins to thicken but is still glossy, about 2 minutes., Quickly drop by rounded tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Refrigerate until completely set, about 1 hour. Store in an airtight container in the refrigerator.

These are super tasty! A favorite at my house and great for holidays!

5 Tbsp water
1 c brown sugar
1 c white sugar
1/2 stick butter, softened
1 c pecans, halved
1 tsp vanilla extract

Steps:

  • 1. Line a cupcake tin with paper liners and spray them with non-stick cooking spray and set aside.
  • 2. Place the 5 Tb. of water in a microwave safe cup and heat for 1 min. on high. Combine the boiling water, brown sugar, white sugar, & butter in a saucepan over high heat. Boil mixture for 2 min. or until it reaches 236 degrees or the soft ball stage.
  • 3. Quickly remove the mixture from the heat and add the pecans and vanilla and quickly stir mixture for 15 to 30 seconds. Immediately use a Tb. to drop the pralines in the cupcake paper and cool.

2 cups baking mix (such as Bisquick ®)
½ cup brown sugar
¾ cup chopped pecans
2 tablespoons instant coffee granules
1 large egg
1 cup butter flavored shortening, melted
1 teaspoon vanilla extract
1 cup buttermilk
¼ cup brown sugar
¼ cup chopped pecans
¼ cup graham cracker crumbs
¼ cup softened butter

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease and flour a 10 inch square cake pan.
  • Mix baking mix, 1/2 cup brown sugar, 3/4 cup chopped pecans, and the instant coffee granules in a large bowl. Whisk together the egg, shortening, buttermilk, and vanilla in a separate large bowl. Stir the dry ingredients into the wet ingredients, mixing just until completely moistened.
  • Pour batter into prepared pan. Mix remaining 1/4 cup brown sugar, 1/4 cup chopped pecans, and the graham cracker crumbs in a small bowl. Sprinkle topping evenly over batter.
  • Bake in preheated oven until a toothpick inserted in the center comes out clean, about 20 to 25 minutes. Immediately dot top of cake with softened butter.

1 cup white sugar
1 cup brown sugar
2 cups light corn syrup
1 lb butter
2 cups heavy cream
2 teaspoons vanilla extract
8 cups pecans

Steps:

  • Line 2 baking sheets with aluminum foil.
  • Coat with nonstick cooking spray.
  • (I have found that using Release aluminum foil works better).
  • In a large saucepan over medium heat, combine sugars and corn syrup.
  • Heat to 250 degrees F (120 degrees C).
  • Remove from heat, and stir in butter until melted.
  • Gradually stir in cream.
  • Return to heat.
  • Cook, stirring constantly, until temperature reaches 242 degrees F (116 degrees C).
  • Remove from heat, and stir in vanilla and pecans.
  • Drop by spoonful onto prepared pans.
  • Cool completely, then wrap each piece individually with plastic.

2 tablespoons Karo syrup
2 -3 cups pecans
1 cup light brown sugar, packed
1 (6 ounce) can evaporated milk
1 teaspoon vanilla

Steps:

  • Put all ingredients except pecans and vanilla in a 3 quart saucepan and cook 20 minutes after boiling starts -- stirring occasionally.
  • Add pecans and vanilla

Easy Creamy Pecan Pralines image

Creamy pralines are a snap to make with part brown sugar, evaporated milk, butter, and pecans. Make this candy ahead of time and freeze it.

4 tablespoons salted butter (chilled)
1 1/4 cups sugar
3/4 cup brown sugar (packed, dark or light)
1/2 cup evaporated milk
1 1/2 cups pecans
1 tablespoon vanilla extract

Steps:

  • Gather the ingredients.
  • Lay an 18-inch sheet of waxed paper or parchment paper on the countertop.
  • Cut the butter into small pieces. Place the pieces of butter on a plate and put the plate in the freezer while you heat the ingredients.
  • In a heavy medium saucepan, add the granulated sugar, brown sugar, and evaporated milk.
  • Place the pan over medium heat, whisk to blend, and cook until the mixture reaches the soft-ball stage or 235 F when measured with a candy thermometer.
  • Immediately remove the pan from the burner and stir in the frozen butter with a wooden spoon.
  • Add the pecans and vanilla and continue stirring with a wooden spoon until the mixture is no longer shiny and thickens but is not too stiff. The candy should spread slightly when you spoon it onto the paper.
  • Use a tablespoon to spoon mounds of the candy onto the waxed paper or parchment, making sure that there are pecans in each praline.
  • Let the candy stand at room temperature until firm, about 30 minutes.
