HEAVENLY AMBROSIA SALAD

Ambrosia Salad is very yummy, but I hate canned fruit and they way the dessert turns if you leave it in the fridge more than a day. I don't put fruit into mine, I serve it with sliced bananas on-top instead. I don't mix the banana slices into the pudding mixture because they will go brown and discolor the dessert, wait until serving. This is an easy recipe you can easily make ahead. The coconut, nuts, and marshmallows can all be adjusted to your liking, adding more or less where desired.

2 (3 1/2 ounce) boxes instant pistachio pudding mix
2 (85 g) envelopes Dream Whip
3 cups cold milk, divided
1 teaspoon vanilla extract
2 1/2 cups sweetened flaked coconut
2 cups chopped walnuts
4 cups mini marshmallows
6 large bananas, sliced

Steps:

  • I a bowl mix together pudding mix with two cups of milk, put in fridge.
  • In a mixer with the whisk attachment, whip both packets of dream whip with 1 cups of cold milk and vanilla extract.
  • When dream whip is light and fluffy, fold in the pudding.
  • Now stir in coconut, nuts and marshmallows.
  • Refrigerate for 2-3 hours or until set.
  • Serve with banana slices and enjoy!

This awesome salad is loaded with pecans, fruit and cheese and then topped off with a fun margarita dressing. It was originally published in a BH & G Holiday Cooking magazine. Prep time does not includes 30 minute chill time before serving.

1 (15 ounce) can pineapple chunks, drained
2 -3 medium bananas, sliced
1/2 cup sharp cheddar cheese, shredded
1/2 cup pecan pieces
1 medium orange, peeled, quartered lengthwise, sliced
1 medium mango, peeled, seeded and sliced (optional)
1 cup dark cherries, frozen unsweetened pitted, thawed and patted dry
2/3 cup sour cream
2 tablespoons tequila
1 tablespoon brown sugar
1 teaspoon lime zest
1 tablespoon lime juice
1 tablespoon frozen orange juice concentrate

Steps:

  • Toss all ingredients, except Margarita Dressing, in a large bowl. Chill, covered, up to 1 hour.
  • Margarita Dressing.
  • Stir together all dressing ingredients in a small bowl. Cover and chill.
  • To serve, drizzle salad with Margarita dressing and garnish with lime slices, if desired.

1 (8 ounce) can crushed pineapple, undrained
1/2 cup sweetened flaked coconut
3/4 cup miniature marshmallow
1/2 cup sour cream
1 (8 ounce) container whipped topping (Cool Whip)

Steps:

  • Mix together the fruit, coconut, and marshmellows.
  • Fold in the sour cream and whipped topping, being careful not to stir too much. (The whipped topping will get watery if stirred too much.).
  • Chill for at least 2 hours.

This is a great spring/summer salad to serve when you're looking for something a little different. It's colorful, healthy, and looks beautiful! Originally from the Houston Chronical's food section featuring favorite spring menus.

1 tablespoon olive oil
2 tablespoons raspberry vinegar
1 tablespoon chopped pecans, toasted
3 tablespoons orange juice
1 tablespoon fresh lime juice
1 teaspoon finely grated lime zest
1 tablespoon fresh basil, chopped
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 ripe avocado
10 cups mixed baby greens, about
3 kiwi fruits, peeled, cut lengthwise in half, and sliced
2 red grapefruits or 2 pink grapefruit, sectioned
1 pint strawberry, hulled and sliced

Steps:

  • To make dressing, whisk together in a small bowl the oil, vinegar, nuts, orange juice, lime juice and zest, basil, mustard, salt and pepper.
  • For salad, cut avocado in half.
  • Cut 1 half into cubes.
  • Cut remaining half into 8 wedges and set aside for garnish.
  • In a large bowl, combine avocado cubes, greens, kiwi, grapefruit, and strawberries.
  • Drizzle with dressing and toss until evenly coated.
  • Arrange avocado slices on top and serve.

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

1 cup sour cream (can use reduced fat or fat free)

1 1/2 cups grapes, halved
1 medium banana, sliced (optional)
1 cup sweetened flaked coconut

1/2 cup maraschino cherry, halved, well-drained & patted dry
1/2 cup nuts, chopped, for garnish (optional)

Steps:

  • In a large bowl, combine sweetened condensed milk, sour cream & lime juice; mix well. Stir in the remaining ingredients (except cherries & nuts); cover & chill at least 3 hours or overnight. To prevent cherries from "bleeding", fold them gently into the salad just before serving, and top with chopped nuts if desired.
  • Salad may also be frozen and served like ice cream.
