4 jalapeno peppers, seeded and finely chopped
1/4 cup butter, cubed
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low until corn is tender, stirring occasionally, 4-5 hours.

1/2 cup oil
1 1/2 lbs grated cheese
3 teaspoons garlic salt
6 eggs
1 1/2 cups cornmeal
6 jalapenos, chopped (I use 10-12)

Steps:

  • Spray a 13x9 pan with cooking spray.
  • Mix all the ingredients well and pour in prepared pan.
  • Bake at 375 degrees until lightly golden brown and done in the middle.

2 cans (15-1/4 ounces each) whole kernel corn, drained
1 to 2 jalapeno peppers, sliced and seeded
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1 package (8 ounces) cream cheese, softened and cubed

Steps:

  • Preheat oven to 350°. Place half of corn in a greased 8-in. square baking dish. Top with jalapeno slices and remaining corn. In a small saucepan, melt butter. Whisk in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly., Stir in cream cheese just until melted. Pour over corn. Bake, uncovered, for 35-40 minutes or until lightly browned.

Make your nachos Texas style with this recipe, with crunchy corn tortillas, refried beans, melty cheese and pickled jalapeno peppers. This is the ultimate snack food.

10 corn tortillas
Canola Oil
Salt
16 ounces refried beans
12 ounces shredded Monterrey Jack cheese
Pickled jalapeno peppers for topping
Diced tomato for topping
Crema or sour cream for serving
Favorite hot sauce for serving

Steps:

  • Slice the corn tortillas in half and set aside.
  • Add enough canola oil to a large pot to fill about 1.5 inches and heat to medium. Do not bring to a boil. The temp should measure 375 degrees F.
  • Add the halved tortillas in small batches and fry them about a minute or so per side, until they are lightly browned and crispy. Drain on paper towels and dash them with salt.
  • When they are cooled, spread a spoonful of refried beans over each tortilla, then top them with Monterrey Jack cheese.
  • Bake them at 350 degrees F about 10 minutes, or until the cheese is nicely melted.
  • Serve with pickled jalapeno peppers and diced tomato over the tops, with crema and hot sauce on the side.
  • Extra hot sauce for me!

8 ounces fat free cream cheese, softened
8 ounces low-fat sour cream
2 garlic cloves, minced
6 green onions, finely chopped
3 jalapenos, diced, seeds removed
1/3 cup shredded colby-monterey jack cheese
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • In large bowl, mix cream cheese and sour cream. Add garlic, green onions, jalapenos, salt and pepper. Mix well.
  • Stir in corn.
  • Spread mixture evenly in large glass baking dish. Top with shredded cheese.
  • Bake for approximately 30 minutes.

1 (16 ounce) package coleslaw mix
1 (7 ounce) can Mexican-style corn, drained
1 cup shredded Cheddar cheese
2 fresh jalapeno peppers, seeded and chopped
½ cup chopped fresh cilantro
1 cup Ranch-style salad dressing
¼ teaspoon ground cumin
¼ teaspoon ground coriander
½ teaspoon garlic powder
1 lime, juiced

Steps:

  • In a large bowl, toss together the coleslaw mix, corn, Cheddar cheese, jalapeno and cilantro. In a separate bowl, stir together the Ranch-style dressing, cumin, coriander, garlic powder and lime juice. Pour over the coleslaw mixture, and toss to coat. Serve right away, or refrigerate until serving.

1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

  • In a food processor add in half of the onion, half of the Anaheim pepper, one whole Fresno chile, half of one red bell pepper, half of one poblano pepper, 4-8 cloves of garlic, half or full jalapeno, and corn.
