TEXAS HOT WIENER SAUCE

While living in the Mid-Hudson Valley of NY I fell in love with this style of hot dog, particularly the sauce. My wife was born there and she loved them as well. When we moved to Texas it was a surprise to find, 'There is no such thing as hot wiener sauce in Texas.' I did a lot of research and found the recipe is a closely guarded secret that I had to crack. After years of experimenting I finally created the same experience we only had back in NY. Serve on your favorite hot dog with brown mustard, diced onion, in a steamed hot dog bun. This sauce will be thin, it is supposed to be, it is not a 'chili dog' recipe. The sauce will thicken as it cools. It freezes well.

6 cups water
½ pound all-beef hot dogs, ground
¼ cup white vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon sea salt, or more to taste
1 teaspoon red pepper flakes
½ teaspoon onion powder
½ teaspoon dried oregano
½ teaspoon ground cinnamon
¼ teaspoon ground white pepper
¼ teaspoon dried thyme leaves
2 grinds freshly ground black pepper, or more to taste
½ cup cornstarch
¼ cup cold water, or as needed

Steps:

  • Stir water, ground hot dogs, vinegar, paprika, chili powder, sea salt, red pepper flakes, onion powder, oregano, cinnamon, white pepper, thyme, and black pepper together in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 45 minutes.
  • Stir cornstarch with just enough cold water to dissolve completely; stream into the hot dog mixture while stirring. Continue to cook, stirring frequently, until the sauce has thickened slightly, about 15 minutes more. Adjust salt and pepper to taste before serving.

This hearty, flavorful wiener sauce is like the kind you'll find in Rhode Island and Massachusetts. It may be frozen until ready for use. Use premium grilled wieners cooked in butter, steamed hot dog buns and the fancy mustard of your choice. Spread with mustard, the sauce, chopped onions and celery salt... in that order. If you have a delicate digestive system, use with caution.

3 pounds ground beef
2 teaspoons chili powder
2 teaspoons dry mustard
½ teaspoon ground allspice
½ teaspoon ground nutmeg
½ teaspoon onion salt
½ teaspoon garlic salt
½ teaspoon celery salt
¼ teaspoon minced fresh ginger root
1 teaspoon ground cumin
½ teaspoon Worcestershire sauce
1 teaspoon soy sauce
10 ounces ketchup

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown; drain.
  • Mix the chili powder, dry mustard, allspice, nutmeg, onion salt, garlic salt, celery salt, ginger root, cumin, Worcestershire sauce, soy sauce and ketchup into the skillet. Simmer at least 1 hour, until a desirable consistency has been attained. Serve hot.

1 1/2 lbs ground beef
1 large onion, minced
louisiana hot sauce
2 cans beef gravy
1 1/2 teaspoons vinegar
crushed red pepper flakes
1 1/2 teaspoons Worcestershire sauce
4 hot cherry peppers, minced
2 teaspoons prepared horseradish
2 teaspoons prepared mustard
1/2 tablespoon chili powder
Tabasco sauce
1 tablespoon cornstarch, dissolved in water
1/2 cup ketchup

Steps:

  • Brown ground beef and onion; drain excess grease.
  • Add all remaining ingredients, (minus the cornstarch) and simmer for 20 minutes.
  • Add dissolved cornstarch to thicken and simmer for another 45 minutes.
  • Serve as a"Chili" ontop of a hot dog.
  • May be frozen.

1 Tbsp. vegetable oil
1 lbs. 85% lean ground beef
1 onion, chopped fine
3 Tbsp. tomato paste
1 Tbsp. chili powder
1 tsp. brown sugar
1/4 tsp. ground allslpice
2 cuos chili sauce
1 cup water
1/4 cup hot sauce (adjust to taste) Franks is our choice
2 Tbsp. Worchershire sauce
2 Tbsp. yellow mustard.

Steps:

  • Heat oil in skillet over medium high heat until shimmering. Add the beef and onion and cook until beef is no longer pink, about 5 minutes. Stir in tomato paste, chili powder, brown sugar and allspice, and cook until paste begins to darken about 2 minutes. Add chili sauce and water and bring to a boil. Reduce heat to medium-low and simmer until mixture is thickened. About 7 minutes. Transfer half of mixture to food processor and process until coarsely ground; return to skillet. Stir in hot sauce, Worcestershire and mustard. Serve.
