TEXAS COWBOY SMOKIES

Just one of those things that makes a great appetizer, snack or Lord love us a main dish!!!

Number Of Ingredients 4

1 lb bacon, each slice cut into thirds
1 lb little smokies small sausages
1/2 c butter
2 c brown sugar (i prefer dark brown)

Steps:

  • 1. Preheat oven to 375F
  • 2. Cut the bacon into thirds and wrap each Little Smokie (small sausage). Place all the wrapped smokies in a single layer in a baking dish.
  • 3. Then melt the stick of butter and then 1 cup of brown sugar and stir until mixed well. Pour the butter and brown sugar mixture on the smokies and bacon. Then take the other cup of brown sugar and sprinkle evenly over the smokies.
  • 4. Bake them for about 15-20 minutes and then turn the heat up to 400 dgrees F for about 5 minutes or longer until the bacon becomes crispy.
  • 5. Notes: I like to put them under a low broiler for 5 minutes. I have also left off the second cup of brown sugar and just drizzled a bit of honey over it. Another great and tasty way to do them is to mix the brown sugar with a bit of maple syrup and drizzle over them. If you are using them as appetizers, then secure the bacon with a toothpick and they are ready to serve.

  • If you want to toast your pecans (you do! you do!) chop them up and throw them in a dry skillet over medium heat.
  • Toast for 3-5 minutes, until fragrant. Don't let them burn! Remove from heat and let cool while you make the dough.In a large bowl or stand mixer, beat the butter until it is light and fluffy.Add both sugars and beat well, scraping sides and bottom.Add eggs and vanilla, beat well.Add the flour but don't mix it in.
  • Add the salt, baking powder, and baking soda to the flour and use a small spoon to blend it with the flour a bit.
  • Then mix in the flour, but stop before it's fully incorporated.Add the oats, corn flakes, pecans, and coconut to the bowl.
