2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped
½ cup rice vinegar
½ cup olive oil
⅓ cup white sugar
½ teaspoon garlic powder

Steps:

  • Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  • To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.

My family has always gone for the rainbow version, sneaking in veggies of every color to round out the bowl. Jalapeno provides a kick, but you can remove the seeds or omit it altogether for less heat.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

1 (14.5 ounce) can petite diced tomatoes, drained
2 fresh medium jalapenos, stemmed, seeded and minced
1 small onion, cut into small dice
½ yellow bell pepper, stemmed, seeded and cut into small dice
¼ cup chopped fresh cilantro
6 tablespoons red wine vinegar
6 tablespoons olive oil (not extra virgin)
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
1 teaspoon dried oregano
1 ½ teaspoons ground cumin

Steps:

  • Mix all ingredients in a medium bowl; cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.

This apple tart recipe can be as homemade or as store-bought as your heart (and your schedule) desires. Your ingredient list is short and sweet, allowing the simple flavors of buttery pastry, tangy apples, sticky-sweet caramel and sea salt to shine.

2 small Granny Smith apples
2 tablespoons lemon juice
2 teaspoons vanilla extract
3 tablespoons brown sugar
1 sheet (half of a 17.3-ounce package) puff pastry, thawed
1 large egg
1/4 cup store-bought or homemade caramel sauce
Sea salt, for garnish (optional)

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • Slice the apples into thin pieces (about 1/4-inch). Put them in a large bowl, and then add the lemon juice, vanilla extract and brown sugar, tossing to thoroughly combine.
  • Unfold the sheet of puff pastry onto the lined baking sheet. Lightly score the dough by cutting a border 1 inch from the edges (do not cut through the pastry). Prick the pastry all over with a fork. Shake off any excess liquid from each apple slice, and then arrange them on the puff pastry inside the border area.
  • Whisk together the egg with 1 tablespoon water in a small bowl. Brush the edges of the pastry with the egg wash. Bake the tart until golden and puffed, 15 to 17 minutes.
  • Remove the tart from the oven, drizzle it with the caramel sauce and sprinkle it with sea salt if desired. Slice and serve immediately.

1/4 cup red wine vinegar
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 plum tomatoes, seeded and chopped
1 small red bell pepper, seeded and finely chopped
1 jalapeno, seeded and finely chopped
Dash hot sauce, such as Tabasco
Kosher salt and freshly ground black pepper

  • Combine olive oil, vegetable oil, cider vinegar, and sugar in a saucepan; bring to a boil, remove from heat, and cool to room temperature.
  • Stir pinto beans, black-eyed peas, corn, onion, celery, red bell pepper, and cilantro together in a large bowl. Pour cooled oil mixture over bean mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate, stirring occasionally, for 24 hours. Drain excess dressing before serving.

A friend of mine has a Mediterranean food truck called Pitas Bites at my beer garden in Houston, Texas, Rosehill Beer Garden, and I swear, he makes the best hummus I've ever had. Imported olive oil helps him keep his menu as authentic as he can. Over time, he has shared a few of his recipes, but his hummus stays under lock and key. I've tried at least a dozen times to no avail to crack the code, and so I decided to create my own sacred hummus recipe with a little Tex-Mex flair, but instead of keeping it top secret, I am sharing it here with you.

Number Of Ingredients 9

Two 15-ounce (425-gram) cans chickpeas, drained and canning liquid reserved
1/2 cup (120 milliliters) tahini
Juice of 1 large lemon
1 tablespoon adobo sauce, from canned chipotle peppers in adobo
1 1/2 teaspoons ground cumin
1 1/4 teaspoons garlic salt with parsley, such as Lawry's
1/4 teaspoon freshly ground black pepper
1/4 cup (60 milliliters) extra-virgin olive oil, plus more for drizzling
Tajin seasoning, for serving

Steps:

  • In a food processor, pulse the chickpeas 2 to 3 times just to begin breaking down the beans. Add the tahini, lemon juice, adobo sauce, cumin, garlic salt, and black pepper. Pulse 2 to 3 times more to incorporate the ingredients.
  • Continue to pulse as you slowly add the chickpea liquid, then the olive oil, until the hummus is smooth and creamy with no visible sign of whole chickpeas.
  • Transfer the hummus to a serving bowl, drizzle with more olive oil, and sprinkle with the Tajin seasoning before serving. Leftovers will keep, covered and refrigerated, for 3 to 5 days.

1/4 cup cilantro, chopped

2 teaspoons garlic pepper seasoning
2 teaspoons cumin
1 teaspoon salt

1/4 cup ken's light caesar salad dressing

Steps:

  • Boil corn on cob, remove kernals with a knife or use a 15 oz can of mexicorn, drained.
  • In a large bowl, add beans, tomatoes, veggies, spices, and salad dressing. Mix well and refrigerate overnight.
