2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes or Mexican stewed tomatoes, cut up
1 can (14-1/2 ounces) diced tomatoes or diced tomatoes with mild green chiles
1 can (14-1/2 ounces) chicken broth
1 can (11 ounces) Mexicorn, drained
2 cans (4 ounces each) chopped green chiles
4 green onions, thinly sliced
2 to 3 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried minced garlic

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on high for 4-6 hours or until heated through.

1-1/2 pounds ground beef
1 medium onion, chopped
1 can (15-1/2 ounces) hominy, drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) sliced carrots, drained
1 can (15 ounces) sliced potatoes, drained
1 can (16 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
1 teaspoon beef bouillon granules
1/2 teaspoon garlic powder
Chili powder to taste
Dash Worcestershire sauce
Dash hot pepper sauce

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients., Cover and cook on low until heated through, 6-8 hours.

BEEF TORTILLA SOUP FROM THE MENGER HOTEL



Beef Tortilla Soup From The Menger Hotel image

Beef tortilla soup is the incredible specialty of the historic (and haunted!) Menger Hotel in San Antonio, Texas. This tex mex recipe is beefy and delicate, and is enhanced by garnishing with queso fresco, fresh cilantro, and fried tortilla strips.

Number Of Ingredients 19

1 lb. ground beef (90/10 or leaner preferred because you do not drain the grease.)
1 t. kosher salt
1 white onion, small dice
2 poblano peppers, seeds and white membranes removed, small diced
4 large garlic cloves, pressed
6 oz. can organic tomato paste
2 hot house tomatoes, small dice
½ T. Mexican oregano (regular oregano is not a substitute!)
½ t. cumin
1 t. Gebhardt's or Mexene chili powder
2 quarts beef stock (kitchen basics brand or bone stock preferred)
2 T. fresh cilantro, chopped
½ T. kosher salt
½ t. pepper
1 lime, juiced
2 t. cornstarch mixed into equal parts water as a slurry
10 corn tortillas
A small skillet or sauce pan, filled half way with oil for frying the tortillas into tortilla strips.
Garnishments: Corn tortillas fried into tortilla strips, crumbled queso fresco, additional cilantro and limes, some people enjoy avocado cubes or fresh guacamole and sour cream.

Steps:

  • In a heavy-bottomed large stockpot or dutch oven, brown the beef over medium-high heat, breaking it up with a wooden spatula. Sprinkle with salt.
  • When the meat is browned, add the diced onions and poblanos, stirring them in well. Cook 4-5 minutes, reducing the heat if necessary to soften the vegetables.
  • Add the garlic and tomatoes, stir well and continue to cook down for 4-5 minutes. Add the cumin, chili powder, Mexican oregano, and additional salt and pepper.
  • Add in the tomato paste and stir well to incorporate. Cook 1 min. Add in the beef stock. Stir well, add cilantro and place the lid on the stockpot. Heat to medium and cook 12-20 minutes, stirring twice during cooking.
  • Prepare the garnishes now.
  • For the tortilla strips: Cut the corn tortillas into thin ribbons. Heat the oil over medium-high heat. Fry one handful at a time in the oil until the strips are crispy and golden brown. Remove to a plate lined with paper towels to drain and salt well. Repeat with the remaining tortilla strips.
  • Remove the lid and stir well. Stir in the cornstarch slurry, whisking well. If the mixture is not boiling let the soup return to a boil, so that it may thicken with the slurry.
  • Finish with the juice of a lime and season to taste.
  • Serve in individual bowls topped with the fried tortilla strips, and any additional garnishes of your choosing.

This is a really easy soup that goes together quick. You can add heat by using a Bloody Mary mix with habanero in it. This freezes well if you use a sturdy pasta.

32 ounces bloody mary mix
2 quarts water
1 can Rotel tomatoes & chilies
1 package Knorr vegetable soup mix
1 can corn (not creamed)
1 lb lean ground beef
1 onion, chopped
2 cups texas shaped pasta (you may substitute any kind of sturdy pasta for the Texas pasta)

Steps:

  • Bring Bloody Mary mix, water, tomatoes and green chilies, vegetable soup mix, and corn to a simmer in a large stockpot.
  • Brown ground beef and onion in a skillet until no pink remains in the beef.
  • Add ground beef to mixture in stockpot and let simmer 1/2 hour to 1 hour.
  • Add pasta in last 10-15 minutes of cooktime.

1 pound lean beef stew meat
1 tablespoon seasoning salt, or to taste
½ teaspoon ground black pepper
1 small onion, finely chopped
½ green bell pepper, finely chopped
2 ½ cups beef broth
1 (15 ounce) can mixed vegetables
1 (11.5 fl oz) can spicy vegetable juice cocktail

Steps:

  • Heat the olive oil in a large heavy skillet. Season the stew meat with seasoning salt and pepper. Cook meat in the oil along with onion and bell pepper until browned. Transfer to a slow cooker, and stir in the beef broth.
  • Cook on Low for 6 to 8 hours, or until meat is tender. During the last 30 minutes, stir in the mixed vegetables and vegetable juice cocktail.
