TEXAS-STYLE BARBECUED BEANS

Steps:
- Cook bacon in large skillet over medium heat until crisp. Remove bacon from skillet; drain on paper towels.
- In 4 to 5-quart slow cooker, combine all remaining ingredients; mix gently. Crumble bacon; sprinkle over bean mixture.
- Cover; cook on low setting for 4 to 6 hours.

WEST TEXAS BAKED BEANS
These baked beans have a spicy, smoky bacon flavor.

- In a stockpot or Dutch oven, cover beans with cold water by 6 inches. Soak 8 hours or overnight.
- In a heavy skillet, cook bacon over medium heat until crisp. Remove bacon, and set aside.
- Pour off all but 3 tablespoons fat. Add onions, chile powder, and garlic; saute stirring, until onions are soft, about 5 minutes.
- Drain beans. Return to stockpot; cover with water by 2 inches. Crumble bacon into small pieces; add to beans with onion mixture, sugar, and beer. Cook, covered, over medium-high heat; stir occasionally, until beans are soft and liquid is almost absorbed, about 2 1/2 hours. Season with salt and pepper and serve warm.
TEXAS-STYLE BAKED BEANS

- Fry the bacon crisp and then crumble. Put aside.
- Brown the ground beef with the chopped onions. Drain.
- Combine all ingredients, except bacon, in a large casserole dish.
- Top with the crumbled bacon.
- Bake at 350 for about 1 hour.
TEXAS STYLE BEANS RECIPE WITH PINTO BEANS

- Gather the ingredients.
- In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
- Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.
- Bring the beans to a simmer and cover. Cook on medium-low heat, covered, for 2 hours.
- Stir in salt, pepper, tomatoes, green pepper, sugar, and hot pepper sauce.
- Cover and simmer on low heat for 3 hours more.
- Serve beans with cornbread wedges or hot cooked rice.

TEXAS BEAN BAKE WITH GROUND BEEF
Steps:
- Gather the ingredients.
- Preheat oven to 350 F. In a large skillet over medium heat, fry bacon until just crisp.
- Remove to paper towels to drain and set aside.
- Remove all but a few teaspoons of drippings from skillet. Add ground beef and chopped onion and place back over medium heat. Cook, stirring and breaking up beef, until onion is tender and beef is no longer pink.
- Drain canned beans in a colander and run cold water over them to rinse.
- In a large bowl, combine ground beef mixture with drained beans.
- In another bowl, combine ketchup, mustard, Worcestershire sauce, and both sugars; mix well to blend.
- Pour over bean mixture and stir to blend.
- Spoon bean mixture into a 2 1/2- to 3-quart baking dish. Sprinkle crumbled bacon over top.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
