Easy Tex-Mex Tomato Soup image

This is an easy way to "doctor up" a simple can of condensed tomato soup. It could be garnished with crumbled tortilla chips, shredded cheddar cheese, sour cream or all three. I originally made this to serve with my Easy Pepperjack Cheese Quesadillas, but I would also serve it with a simple grilled cheese sandwich or on its own.

1 (10 3/4 ounce) can condensed tomato soup
1 (14 1/2 ounce) can diced tomatoes with green chilies (I use Del Monte brand)
1/2 cup cheddar cheese, shredded (optional)
1/4 cup tortilla chips, crushed (optional)
1/4 cup sour cream (optional)

Steps:

  • In a small saucepan over medium heat, pour condensed tomato soup and diced tomatoes (with juice).
  • Heat for 10-12 minutes or until heated to your preference.
  • Serve and garnish if desired.

Growing up in India, the Masala cheese toast was a regular staple breakfast dish. What set it apart was the only processed cheese available in India at that time (Amul cheese), which resembles a hard white Cheddar, paired with cilantro and roasted cumin for grilled cheese taken to the next level. The tomato soup is made with lentils, which adds to the creaminess of the soup; the curry leaves and Indian spices make it the perfect tomato soup to dunk the masala grilled cheese in.

Number Of Ingredients 23

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
5 curry leaves
1 whole dried red chile
3 large yellow onions, sliced
2 tablespoons ginger-garlic paste (equal parts ground in a mortar and pestle)
1 bunch fresh cilantro, leaves roughly torn off
5 red tomatoes
1 cup tomato puree
1 cup masoor dal, washed
1/4 cup sambar powder
Kosher salt and freshly ground black pepper
One 13.5-ounce can coconut milk
1/2 cup (1 stick) unsalted butter
1/2 cup grated Amul cheese (or white Cheddar)
1 tablespoon chopped fresh cilantro
1/4 teaspoon red chili powder
1/4 teaspoon roasted cumin powder
1/4 teaspoon garam masala
Kosher salt
Four 1/2-inch-thick slices sourdough, cut from a boule
4 tablespoons unsalted butter, at room temperature

Steps:

  • For the tomato soup: Heat the oil in a large Dutch oven over medium heat until hot. Add the cumin seeds, mustard seeds, curry leaves and red chile and cook until it crackles, about 30 seconds. Add the onions, ginger-garlic paste and cilantro and cook until the onions are slightly caramelized, about 5 minutes. Add the tomatoes, tomato puree, masoor dal, sambar powder, salt and pepper, to taste. Cover with water until all the fresh tomatoes are covered and let it cook on a low heat until the lentils are soft, 25 to 30 minutes.
  • Carefully ladle the soup into a high-powered blender and blend until smooth, taking care when blending hot liquids. Pour into a medium-large saucepan and add the coconut milk and butter. Heat over medium, stirring occasionally, until just bubbling.
  • For the cheese filling: Combine the cheese, cilantro, chili powder, cumin, garam masala and salt to taste in a medium bowl and reserve.
  • For the sandwiches: Lay out the bread slices and top half of the slices with the cheese filling. Top with the other slices of bread and spread half the softened butter on the top piece of each sandwich.
  • Preheat a double-burner cast-iron griddle pan over medium heat. Add the sandwiches, butter-side down. Carefully spread the remaining butter on the top sides of the sandwiches and cook, turning once, until the bread is golden, about 3 minutes per side. Transfer the sandwiches to paper towels. Cut each sandwich in half on the diagonal.
  • Serve the tomato soup hot with the grilled cheese sandwiches on the side.

1 tablespoon olive oil
2 tablespoons butter, plus some softened butter for the sandwiches
4 cloves garlic, sliced or chopped
2 onions, chopped
2 tablespoons fresh thyme leaves, chopped
1 round tablespoon smoked sweet paprika
Salt and pepper
2 tablespoons tomato paste
One 32-ounce can San Marzano tomatoes
4 cups chicken or vegetable stock
8 slices pumpernickel bread
8 slices emmentaler cheese
1/4 cup heavy cream
1/4 cup finely chopped chives, for garnish

Steps:

  • Preheat a griddle pan over medium heat for the grilled cheese.
  • Heat a medium soup pot over medium-high heat. Add the oil and then melt 2 tablespoons of the butter into the oil. Add the garlic, onions, thyme, paprika and some salt and pepper, then partially cover the pot and cook to soften, 10 minutes. Stir in the tomato paste and cook until fragrant, 2 minutes. Deglaze the pan with 2 cups of the chicken stock and transfer to a food processor. Add the tomatoes and process until smooth. Pour the soup back into the pot and add the remaining 2 cups stock. Simmer at a low bubble while you make the grilled cheese.
  • Lightly butter one side of each slice of bread. Place 2 slices of cheese between 2 slices of bread, buttered-side facing out. Grill the sandwiches until crispy and the cheese melts.
  • Stir the cream into the tomato soup right before serving. Serve in shallow bowls with chives to garnish and grilled cheese for dipping.

GOOD OLD-FASHIONED AMERICAN GRILLED CHEESE AND TOMATO SOUP



Good Old-Fashioned American Grilled Cheese and Tomato Soup image

20 slices deli-sliced American cheese (yellow or white)
8 slices good, thick country white bread
8 tablespoons salted butter, at room temperature
Tomato Soup, recipe follows, for serving
2 tablespoons unsalted butter
1 yellow onion, minced
2 carrots, diced
1 stalk celery, diced
1/2 teaspoon crushed red chile flakes
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
2 tablespoons dry sherry
Two 28-ounce cans whole San Marzano tomatoes
2 bay leaves
1 cup chicken or vegetable stock
1/2 cup heavy cream

Steps:

  • Heat a large nonstick pan over medium-low heat. Place 5 slices* of cheese in between two slices of bread (two on each side and one in the middle). Spread about 1 tablespoon butter on each exterior side of the bread. Remember, crust-to-crust is a must. Repeat with the remaining ingredients. Place the first side in the pan (cooking in batches if necessary) and "dome" with an inverted large metal bowl or pan lid to create the proper vortex of heat. Cook until golden brown, 3 to 4 minutes, then flip and continue to cook until the cheese is gooey and bread is golden brown, 3 to 4 minutes more.
  • Cut, slowly separate and watch as the cascade of gooey good ol' American cheese catches the sunlight streaming through the kitchen window and throws a glow of warm orange light throughout your entire house. Repeat with the remaining sandwiches. Serve with the Tomato Soup.
  • *I know this sounds excessive, but it ensures the most possible ooey-gooeyness. If you're watching the intake, you can scale back to 3 slices.
  • Heat a large Dutch oven or soup pot over medium heat. Add the butter, onions, carrots, celery, chile flakes and a couple pinches of salt and pepper. Sauté until translucent, 10 to 12 minutes. Add the tomato paste and cook for an additional minute. Deglaze with the sherry while scraping up any brown bits from the bottom of the pot. Add the tomatoes, bay leaves and stock. Simmer until everything is cooked through and very tender, about 1 hour.
  • Discard the bay leaves and blend the soup until completely smooth and uniform in texture using an immersion blender. Add the heavy cream and adjust the seasoning. Serve!

ITALIAN GRILLED CHEESE-N-TOMATO

1/2 cup extra-virgin olive oil
1 large clove garlic, cracked away from skin
8 slices crusty Italian bread
1 pound smoked fresh mozzarella cheese, sliced
2 ripe tomatoes, thinly sliced
8 basil leaves, torn

Steps:

  • Heat a grill pan over medium low to medium heat. Heat oil and garlic in a small pot over low heat. Brush 4 slices of the bread with garlic oil on 1 side. Place garlic oil side down on the grill. Top with sliced cheese, tomato and basil. Place another slice of bread on top of each sandwich. Brush sandwiches with garlic oil. Press sandwiches with heavy skillet or a brick covered with tin foil. Toast sandwiches on both sides to melt cheese.

1 onion, finely chopped
1 carrot, grated

1 (28 ounce) can fire-roasted crushed tomatoes
2 cups tomato juice
1 (15 ounce) can fire-roasted diced tomatoes, partially drained
1 tablespoon white sugar
½ cup heavy whipping cream
1 bunch fresh basil, roughly chopped, or to taste

Steps:

  • Heat butter and olive oil together in a large pot over medium heat; saute onion and carrot until softened, 4 to 6 minutes. Add garlic, salt, pepper, and red pepper flakes; cook and stir until fragrant, about 2 minutes.
  • Stir crushed tomatoes, tomato juice, and diced tomatoes into onion mixture; bring to a simmer. Reduce heat, stir sugar into tomato mixture, and simmer until heated through, about 10 minutes. Add cream and simmer until heated through, 1 to 2 minutes. Add basil to soup and cook until wilted, about 3 minutes. Serve chunky or puree with an immersion blender.
