2 cups chopped cooked boneless, skinless chicken breasts
1 small onion (chopped)
1 green bell pepper (diced)
2 cans fat-free cream of mushroom soup, undiluted (10.5 ounces cans)
10 ounces diced tomato (canned, drained)
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon pepper
8 corn tortillas (cut into quarters (I used Mission Extra Thin Corn tortillas))
1/4 cup shredded reduced-fat cheddar cheese
Nonstick Vegetable cooking spray

Steps:

  • If you don't already have cooked, diced chicken breast start off by cooking and dicing some boneless, skinless chicken breast.
  • Dice the onion and green bell pepper.
  • Spray a nonstick pan with vegetable oil spray.
  • Sauté onion and bell pepper in a large skillet coated with cooking spray over medium-high heat for 3 to 4 minutes or until tender.
  • Add the chicken, 2 cans of cream of mushroom soup , a can of diced tomatoes, chili powder, garlic powder and ground pepper. Mix well and let it come to a gentle simmer. Remove from heat and let it cool.
  • Preheat the oven to 350 F and lightly grease a 9x9 casserole dish with vegetable spray. Cut the corn tortillas into wedges.
  • Place a layer of tortilla wedges. Top with one-third of the chicken mixture. Place another layer of tortilla wedge followed by another layer of the chicken mixture. Next goes the final layer of tortilla wedges , followed by the remaining the chicken mixture.
  • Finally, top the casserole with 1/4 cup of shredded cheddar cheese.
  • Bake at 350F for 30 to 35 minutes or until bubbly and golden.
  • Serve immediately. refrigerate the leftover in a covered container.

1 tablespoon butter
1 small onion, finely chopped
1 (14.5 ounce) can diced tomatoes
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can cream of mushroom soup
1 (4.5 ounce) can chopped green chiles
⅓ cup milk
2 tablespoons sour cream
1 teaspoon chili powder
1 teaspoon ground cumin
2 ½ cups chopped cooked chicken
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 9x13-inch baking dish. Spread corn chip crumbs over the bottom of the baking dish and press crumbs into place.
  • Melt butter in a large skillet over medium-high heat; cook and stir onion in melted butter until tender, 6 to 7 minutes.

10 oz cooked pinto beans
1/2 c canned mild chilis, drained and chopped
1/2 tsp each garlic powder, cumin. oregano
1 tsp chili powder or more to taste
1/4 tsp freshly ground black pepper
1 c chopped onion
1 1/2 c diced yellow squash
1 1/2 c diced zuchinni
1/2 c chopped red bell pepper
2 1/4 oz shredded cheddar cheese
2 1/4 oz shredded part skim mozzarella cheese
2 large eggs
2 eggwhites
3 Tbsp seasoned dry bread crumbs
chopped fresh cilantro for garnish if desired.

Steps:

  • 1. Pre heat oven to 350°. Spray a 9x13 pan with non stick spray.
  • 2. Combine the turkey, beans, chilies and seasonings, coarsely mashing the beans. Spread evenly over prepared pan.
  • 3. Spray a non stick pan generously with non stick spray and cook onion over med high heat for 2 minutes, add squash, zuchinni, abd bell pepper, cool another 3 minutes. Spread veggie mixture evenly over meat mixture.
  • 4. In a small bowl whisk together remaining ingredients except bread crumbs, pour over casserole. Sprinkle the bread crumbs over the top.
  • 5. Bake until browned and bubbly, about 30 minutes. Garnish with cilantro if desired.

1 teaspoon garlic powder
30 taco shells, broken

Steps:

  • Preheat oven to 350°. In a large skillet, cook ground beef and onion over medium heat until beef is no longer pink, 10-12 minutes, breaking into crumbles; drain. 1 cup corn (canned or frozen)
15 oz can black beans (drained and rinsed (can do pinto beans too))
3 cups cooked chicken breast (diced)
2 cups shredded Mexican-style cheese
3 cups your favorite salsa ((I like Frontera))
1 bunch scallions (sliced)
2 tbsp taco seasoning
sour cream (for garnish (optional))
avocado slices (for garnish (optional))
fresh chopped tomato (for garnish (optional))

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the tortilla chips, corn, black beans, diced chicken, cheese, salsa, scallions, and taco seasoning. Stir it all together very well, being careful not to crush the tortilla chips too much. Taste the mixture and adjust seasoning if necessary (and keep in mind this will taste wetter than when it comes out of the oven).
  • Pour the entire mixture into an 8×12 or 9×13 casserole dish, and cover tightly with foil. Bake for 30 minutes, then serve with your favorite garnishes (like avocado slices, sour cream, fresh chopped tomatoes, scallions, etc). Enjoy!

2 cloves garlic, minced
8 flour tortillas
1 (16 ounce) can ranch style beans
1 (12 ounce) can hot enchilada sauce

1 cup shredded cheddar cheese
1 (16 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies

Steps:

  • Brown ground beef with onions and garlic in a large skillet; drain.

1/2 lb Ground Beef
1 (15 oz) can corn, drained
1 (12 oz) jar chunky salsa (Hot or Mild, whichever you prefer)
1 (2.25 oz) can Sliced Black Olives, drained (Save out a few of the black olives for the topping)
1 Cup Cottage Cheese
1 Cup Sour Cream
2 1/2 cups Tortilla Chip Crumbs (It takes about 5 cups of whole chips to make 2.5 cups of crumbs)
2 Cups of Sharp Cheddar Cheese, divided
Bell Pepper, diced
tomato, diced
Green Onions, chopped
A few WHOLE tortilla chips for garnish

Steps:

  • Brown ground beef in skillet. Drain. Add in the corn, chunky salsa and all but 2 TBSP of the black olives. Continue cooking for a couple of minutes until mixture is warmed through. Remove from heat and set aside. Combine cottage cheese and sour cream. In a 2 quart Pam sprayed casserole dish. Layer 1/2 the crushed chips, then 1/2 the meat mixture, then 3/4 cup cheddar cheese and finally, 1/2 the Cottage Cheese mixture. Repeat the layers again ending with the Cottage cheese mixture. Cover with foil and bake in preheated 350 degree oven for 30 minutes. Remove foil. Top with remaining cheddar cheese, tomatoes, black olives, bell pepper and line the outside with whole tortilla chips. Place back in the oven, uncovered, for 2 minutes or until cheese is melted. (Careful not to let chips burn) Remove from oven and allow to set for 10 minutes. Garnish with green onions and serve!
