QUICK AND EASY RAVIOLI SOUP



Quick and Easy Ravioli Soup image

This is quick and easy, yet delicious! I serve this soup with a fresh salad and lots of warm garlic bread.

1 lb ground beef
2 cups water
2 (10 3/4 ounce) cans tomato puree
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (14 1/2 ounce) can beef broth
1 1/2 cups chopped white onions
2 cloves garlic, minced
1 teaspoon parsley
3/4 teaspoon basil
1/2 teaspoon onion salt
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
1/4 cup fresh grated parmesan cheese
1 (12 ounce) package refrigerated cheese ravioli

Steps:

  • In a Dutch oven, brown ground beef; drain.
  • Add all ingredients, except for the Paremesan cheese and ravioli.
  • Bring to a boil.
  • Reduce heat; cover and simmer 30 minutes.
  • Stir in the Parmesan cheese.
  • Cook ravioli according to package directions; drain and add to soup.
  • ~NOTE~I normally use the cheese filled ravioli because that is the kid's favorite.
  • But you can use a different type of filling to satisfy your taste, such as roasted chicken or Italian sausage filled ravioli.

1 (16 ounce) jar mild salsa
1 (10 3/4 ounce) can tomato puree
1/2 teaspoon ground cumin
1 (28 ounce) bag frozen cheese ravioli, unthawed
2 (19 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro
1 bunch green onion, thinly sliced
2 cups shredded sharp cheddar cheese
1 cup shredded monterey jack cheese

Steps:

  • Combine first 3 ingredients.
  • Pour 1/2 cup sauce mixture on the bottom of a lightly greased 2-quart oval or 11- x 7-inch baking dish.
  • Top evenly with frozen cheese ravioli.
  • Layer with black beans, chopped cilantro, green onions, and remaining sauce mixture; top evenly with shredded Cheddar and Monterey Jack cheeses.
  • Bake, covered with aluminum foil, at 350° for 45 minutes or until bubbly.
  • Remove foil, and bake 5 more minutes.
  • Let stand 5 minutes.

This recipe is full of shortcuts: pesto from a jar, tomato paste from a tube, and frozen meatballs, ravioli and vegetables. What could be easier or more convenient?

3 tablespoons olive oil
1 cup chopped onion
4 cloves garlic, chopped
3 tablespoons prepared pesto
Kosher salt and freshly ground black pepper
3 tablespoons tomato paste
6 cups chicken or vegetable stock
12 ounces frozen Italian meatballs
1 1/2 cups frozen spring vegetable medley
9 ounces prepared four-cheese ravioli, frozen or fresh
1/4 cup heavy cream
1/2 cup grated Parmesan
Crusty bread, for serving

Steps:

  • Heat the oil in a small pot or Dutch oven over medium heat until hot. Add the onions, garlic and pesto with a good pinch of salt and pepper. Stir and allow to cook to soften the onions, a minute or two.
  • Add the tomato paste and stir until thoroughly combined, a minute or so. Add the stock, meatballs and vegetable medley. Bring to a boil, then reduce to a simmer. Add the ravioli and cook until the vegetables are just tender, 4 to 5 minutes.
  • Add the heavy cream and stir to combine. Taste and adjust the seasoning with salt and pepper. Garnish with the Parmesan and serve with crusty bread.

1 (13 ounce) bag frozen mini cheese ravioli
1 (12 ounce) jar marinated artichoke hearts, drained
6 ounces mozzarella cheese, bocconcini and halved
1 cup grape tomatoes, halved
2 ounces pepperoni slices
1/4 cup thinly sliced red onion
1/4 cup pitted green olives, halved
1/4 cup fresh basil leaf, thinly sliced
1/2 cup bottled red wine and vinegar salad dressing
6 ounces Baby Spinach

Steps:

  • Cook the frozen ravioli until done and rinse with cold water and drain well.
  • In a large bowl combine rest of the ingredients except for the spinach.
  • Add the ravioli and toss gently.
  • Place spinach on serving platter and top with salad.
  • Enjoy.
