- Heat oven to 350°F. Lightly grease 13x-9-inch pan. In large skillet, cook ground beef, potatoes, onion and chiles over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked and vegetables are tender, stirring frequently. Drain.
- Add beans, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer 5 minutes, stirring frequently.
- Spoon 1/2 cup beef mixture in center of each tortilla. Sprinkle each with heaping 2 tablespoons cheese. Roll up each tortilla, enclosing filling; fold ends under. Place seam side down in greased pan; cover with foil.
- Bake at 350°F. for 10 to 12 minutes or until thoroughly heated. Serve burritos with salsa and sour cream.

- Make the sauce: Preheat the oven to 400 degrees F. Toss the tomatillos, onion, jalapeno and olive oil on a baking sheet and season with salt and black pepper. Roast until browned, about 45 minutes. Puree in a blender with the cilantro, thinning with water as needed. Season with salt.
- Meanwhile, prepare the omelet: Cook the chorizo in a large nonstick skillet over medium-high heat until crisp, breaking it up, 4 to 5 minutes. Transfer to a paper-towel-lined plate. Stir the cumin, cayenne and paprika into the drippings in the skillet. Add the beans and saute until soft, about 5 minutes. Season with salt and black pepper, then add the bell pepper and cook 1 to 2 more minutes. Transfer to a bowl.
- Whisk the eggs and milk in another bowl. Wipe out the skillet, reduce the heat to medium and add 1/2 tablespoon butter. Pour half of the egg mixture into the skillet and cook until the center is no longer liquid, loosening the edges with a rubber spatula and tilting the skillet to let the uncooked egg run underneath. Shake the pan to loosen the omelet, then spoon half of the bean mixture, chorizo and cheese down the center. Fold in both sides to cover the filling, then flip the omelet so it is seam-side down and cook 1 more minute. Repeat with the remaining butter, egg mixture and fillings to make another omelet. Top with the tomatillo sauce and garnish with the crema and tomato.

- Place the ground beef and minced onion in a saute pan (I use a non-stick pan) and add seasonings. Cook and break apart until the meat is thoroughly cooked. Remove to a bowl.
- Wipe out the saute pan and add a tablespoon of oil. Add the potatoes and seasoning salt (plain salt and pepper is fine, too) and saute until browned. Remove to another bowl.
- Whisk the eggs with the water and salt. Add to saute pan and cook, stirring occasionally, until the eggs are soft and set. Remove to a 3rd bowl. Wipe out the pan again.
- Set out the cheddar cheese, pico de gallo, and diced avocado. Warm the tortillas in the saute pan if desired.
- Lay a tortilla out on a flat surface. Place 1/4 of the beef along the center of the tortilla, then 1/4 of the eggs, potatoes, cheese, pico, and avocados. Fold up the sides over the short side of the filling, then rotate the burrito and tuck and roll the tortilla around the filling into a burrito shape.
- Cut in half to serve. If you need to rewarm your burrito, zap in the microwave for a minute or so or place in the saute pan and gently heat.

- Heat oil in 10-inch nonstick skillet over medium-high heat. Cook tortilla strips and 1/4 cup onion in oil about 5 minutes, stirring frequently, until tortillas are crisp. Mix eggs and chili; pour over tortilla mixture. Reduce heat to medium.
- As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Do not stir. Cook 4 to 5 minutes or until eggs are set but still moist.
- Top each serving with salsa, sour cream and green onions.

- Finely chop potatoes, bell peppers, and onions.
- In a large skillet or non-stick pan, add a touch of neutral tasting cooking oil, and saute potatoes until fork tender and starting to brown. Remove from skillet, transfer to a bowl and set aside.
- Add onions, and peppers, saute for about 2 mins. remove from skillet, transfer to a bowl and set aside.
- Whisk eggs, salt and pepper in small bowl. Melt butter in skillet over medium heat.
- Pour egg mixture into skillet and reduce heat to medium-low. When the eggs begin to set, scramble eggs. Cook until eggs are thickened and no liquid egg remain. Do not overcook your eggs! Remove from skillet, transfer to a bowl and set aside.
- Add the sausage to the skillet, ensure it is broken up (minced), add the chili powder, cumin, and taco seasoning. Stir well and cook for approx. 5 minutes until the meat has browned. Transfer to a bowl, set aside.
- Wipe away any brown and burnt bits from the pan with a paper towel.
- Assemble the wraps by layering ingredients on the tortilla wrap. Start with the hash brown potatoes, sausage, and black beans. Continue with the scrambled eggs, cheese and cilantro, then roll them up tightly - use a toothpick to secure the ends if necessary. Repeat with remaining ingredients.
- Place the rolls seam side down onto skillet, over medium heat, toast until cheese has melted and golden brown on the centre of both sides.
- Serve immediately, and enjoy!

- In a large nonstick skillet, cook tortilla strips in 2 teaspoons oil for 5 minutes or until lightly golden brown but not crisp. Add the onion, jalapeno and remaining oil; cook 2 minutes longer. , Add the eggs, tomato, beef, salt and pepper; cook and stir until eggs are completely set. Sprinkle with cheese; cover and let stand for 2-3 minutes until cheese is melted.

- Place half the bread cubes in a greased 13x9-in. baking dish; set remaining bread aside. In a skillet over medium heat, cook sausage and onion until meat is no longer pink and onion is tender; drain. - Preheat the oven to 350 degrees F and grease a 9 by 13-inch baking pan.
- In a large skillet, cook the beef until mostly browned. Stir in onions, chiles and garlic and cook until onions have softened. Add the tomatoes, oregano and cumin and cook until the tomatoes have thickened to form a sauce about 10 minutes.

- In a small bowl, mix the tomatoes, half the spring onions and half the red chilli with some seasoning and set aside. Beat the eggs and milk with a fork with some seasoning.
- Heat the oil in a large non-stick pan and fry the remaining spring onion and chilli for 1 min, then pour in the egg mix. Gently scramble the eggs by dragging the egg mixture as it sets into the middle of the pan. Cook to your liking, then take off the heat and throw on the cheese. - Spray 13X9 inch glass baking dish with cooking spray.
- In 10 inch skillet, cook sausage over medium heat 8-10 minutes, stirring occasionally, until no longer pink.
- Drain on paper towel.
- Spread frozen potatoes in baking dish.
- Sprinkle with sausage, green chiles and 1 1/2 cups of cheese.

- Brown sausage in a large skillet, stirring to crumble.
- Drain and return to skillet.
- Add eggs and chilies to sausage.
- Cook, stirring gently, until eggs are thickened, but still moist.
- Do not stir constantly.
- Microwave tortillas about 10 seconds each until soft.
- Spoon egg mixture down centers of warm tortillas; top each with picante sauce and cheese.
- Fold opposite sides over filling.
