- In a medium bowl, combine both packs of cornbread mix with eggs and milk.
- Stir well until combined.
- Once your waffle iron is heated, spray with nonstick spray.
- Pour one cup of cornbread mix onto waffle iron.
- Depending on your type of waffle iron, the light will come on or it will beep when ready.
- Once they are all cooked up, it's time for toppings!
- Top waffles with chili, shredded lettuce, diced tomatoes, sour cream and shredded cheese.

Next time you grill out or grill in, throw on a few extra pieces of steak to use for another day. You are not limited to just steak; chicken, pork, roast, turkey would also work great. This is a drier version of chili that I like to serve over cornbread waffles. Hope you enjoy!

- Most likely you will need melted butter for your cornbread mix. Melt that butter in your skillet, in the oven. Swirl it around the pan and put it in your mix...follow the package directions. (if your mix doesn't use melted butter just melt 1 tablespoon in your skillet)
- Sprinkle the green onions on top of the batter. (you can also sprinkle cheddar cheese on top if you want...you know, for extra!)
