Test Kitchen's Favorite Pate Brisee image

To avoid creating water pockets in your brisee (which will wreak havoc in your dough), make sure to strain the ice out of the water before drizzling it in and processing.

Yield Enough for one 9-inch double-crust pie, or one 10 1/2-by-15 1/4-inch single-crust slab pie

Number Of Ingredients 5

2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons kosher salt
1 tablespoon sugar
2 sticks cold unsalted butter, cut into small pieces
7 to 8 tablespoons ice water

Steps:

  • Pulse flour, salt, and sugar in a food processor until combined. Add butter and pulse until mixture resembles coarse meal with some pea-size pieces remaining. Drizzle 5 tablespoons water over mixture; pulse several times to combine. Add more water,1 tablespoon at a time, and pulse until mixture holds together when pinched.
  • For a 9-inch pie, shape dough into two disks and wrap each in plastic. For a slab pie, shape dough into a rectangle and wrap in plastic. Refrigerate at least 1 hour and up to 1 day, or freeze up to 3 months; thaw overnight in refrigerator before using.

Got this from the internet a la Martha Steward. This particular recipe was invented by Lucinda Scala Quinn. You can chill this 1 hour or over night. It is rich and buttery and very flakey. Fill with your favourite filling and cook acording to directions.

3 c all purpose flour
1 1/4 tsp course salt
1 Tbsp sugar
1 c (2 sticks unsalted butter) cold cut into small pieces
1/2 c ice water, plus more if needed

Steps:

  • 1. In the bowl of a food processor, combine the flour, sugar, and salt; pulse to combine. Add butter, and pulse until mixture resembles coarse crumbs with some larger pieces remaining, about 10 seconds. To do this by hand cominge the dry ingredients in a large mixing bowl, then cut in butter with a pastry blender.
  • 2. With the machine running, add the ice water through the feeding tube in a slow steady stream, just enough until the dough holds together without being sticky or wet. Don not process more than 30 seconds. Test by squeezing a small amount of the dought together. If it is still crumbly add more water 1 tbsp. at a time.
  • 3. Turn dough out onto a clean surface. Divide in half and place each piece in plastic wrap. I made mine into discs. Flatten and refrigerate for 1 hr. to over night.
  • 4. Use this to bake your pie. It will make enough for one 15 by 12" pie.

Yield Makes enough for one 9-inch deep-dish pie

Number Of Ingredients 5

1 2/3 cups unbleached all-purpose flour
2 teaspoons sugar
3/4 teaspoon kosher salt
1 stick plus 2 tablespoons cold unsalted butter, cut into small cubes
4 to 5 tablespoons ice-cold water

Steps:

  • Pulse flour, sugar, and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal with some pea-size pieces remaining. Drizzle 4 tablespoons water evenly over mixture. Pulse until mixture holds together when pinched (dough should not be wet or sticky). If dough is too dry, add more water, 1 teaspoon at a time, and pulse.
  • Form dough into a disk and wrap in plastic. Refrigerate until firm, at least 1 hour and up to 1 day. (Dough can be frozen up to three months. Let thaw in the refrigerator a day before using.

  • Combine flour, butter, and salt in bowl of a food processor. Pulse until mixture resembles small peas, about 8 times. Sprinkle 3 tablespoons ice water over surface of flour mixture, and process 3 seconds. Toss lightly with a fork to mix in any dry particles of flour. If dough does not hold together when pinched, add up to 2 tablespoons water, 1 tablespoon at a time, pulsing 3 times between additions. (Do not overmix.)
  • Turn dough out onto a lightly floured surface, and knead lightly just until it holds together. Shape into a ball. Wrap loosely in plastic wrap, and flatten into a 6-inch disk. Chill 1 hour or up to overnight.
  • Let dough stand at room temperature until malleable, about 10 minutes. Unwrap dough, and roll into a 16-inch circle on a lightly floured surface. Fit dough into a 9-inch springform pan. Press pastry on bottom and up sides of pan; trim off any excess dough. Cover with plastic wrap; chill 1 hour. Transfer to freezer, and freeze chilled pie shell 15 minutes. (Chilling and freezing pie shell helps it to maintain the best shape.)
  • Preheat oven to 425°F. Line chilled pie shell with parchment paper, and fill with pie weights or dried beans, making sure they are pushed up well against sides.
