TERRIFIC TURKEY TETRAZZINI
Leftover turkey gets a boost in this tetrazzini variation--turkey in a creamy mushroom sauce is mixed with cooked spaghetti, topped with Parmesan cheese, and baked until golden and bubbly.

Steps:
- Cut turkey into bite sized pieces. Melt butter in a saucepan, then stir in flour; cooking until it starts to bubble. Gradually add chicken stock, stirring until sauce thickens, then add soymilk; salt and pepper and cheese. Add turkey and mushrooms and slowly simmer.
- Meanwhile cook pasta according to package instructions, drain and stir into the turkey mixture. Pour into a non-stick baking dish. Bake at 450 degrees F until heated through and cheese has melted.

- Melt butter in large pan and cook mushrooms until just tender. Add flour and, while stirring slowly, stir in chicken broth. Cook over medium heat while stirring until mixture starts to thicken. Remove from heat and add half and half, sherry, parsley and salt and pepper to taste. Add turkey and cooked spaghetti and mix well. Pour mixture into an ungreased 13 x 9 inch baking dish and sprinkle with grated Parmesan cheese. Bake in preheated 350 degrees F oven for 35 to 40 minutes.
TERRIFIC TURKEY (OR CHICKEN) TETRAZZINI
After turkey soup, this is my go-to recipe for post-holiday turkey leftovers. It's easy, yet is somewhat more upscale than a plain old noodle casserole. It was created out of necessity but is now made by request!

- In medium saucepan, heat 2 olive oil. Add onion, mushrooms, and celery, and saute until tender, then set aside.
- Meanwhile, cook pasta according to package directions and drain.
- In large skillet, melt butter. Whisk in flour and cook for 1 minute, then slowly add half-and-half, and then broth. Bring to a boil and thicken, stirring constantly. Whisk in sherry and spices, then stir in chopped turkey, frozen peas, and reserved onion mixture. Add pasta and stir until evenly coated with sauce.
- Spray a baking dish with non-stick cooking spray. Pour in noodle and sauce mixture, then top with Parmesan cheese. Bake at 350 degrees for 10 to 15 minutes, until bubbly. You can also just run this under the broiler for a few minutes to brown. Enjoy!

A delicious pasta, turkey, mushroom and cream sauce casserole for your turkey leftovers.

- Preheat oven to 375°.
- Sauté mushrooms in butter in a large saucepan till lightly browned. Add salt and pepper to taste. Deglaze the pan by adding sherry, cooking, and stirring until most evaporates.
- Remove mushrooms and add flour to the pan. Cook for just a minute, then add the chicken broth, whisking to avoid lumps. Cook till the mixture thickens slightly.
- Add the warm cream and stir to combine.
- Remove from heat. Add the turkey, peas, and reserved mushrooms.
- Taste for seasoning, and add more salt and pepper as needed.
- Place pasta into a 9 x 13-inch baking dish (I use a smaller dish for a deeper casserole).
- Add the chicken, mushrooms, and peas, and sauce to the pasta. Mix to combine.
- Sprinkle with Parmesan. (Alternatively, toss the pasta with the sauce, chicken, mushrooms, and peas.
- Bake till lightly browned and heated through, about 15-20 minutes.

- Butter or lightly coat with cooking spray a 9x13-inch baking dish. Preheat oven to 375-degrees F.
