TERIYAKI CHICKEN
A very easy to make chicken and tasty too, with a nice flavor!

Steps:
- Rinse chicken halves, and pat dry with paper towels. Place chicken cut side down in a 9x13 inch baking dish.
- In a medium mixing bowl, combine sugar, soy sauce, grated ginger and garlic. Mix well, and pour mixture over chicken. Cover and refrigerate for at least 3 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake chicken uncovered in the preheated oven for 1 hour, basting frequently. Test for doneness, making sure there is no pink left in the meat. Let cool slightly, then cut into smaller pieces to serve.

TERIYAKI ROTISSERIE CHICKEN
Marinate the chicken during the day, or overnight, and half the work is already done! Flavorful, just two ingredients, and the leftovers are perfect in a stir-fry with some veggies and any leftover teriyaki sauce.

- The night before, or in the morning: Rinse the thawed chicken with cold water and pat it dry with paper towels. (Don't forget to remove the giblets--that's the little bag of stuff inside the body cavity--and rinse the inside, too.) Put the chicken in a large bowl or roasting pan or plastic storage bag and cover it liberally with teriyaki sauce. Seal or cover it tightly, excluding all the air that you can, and put it in the refrigerator until you're ready to start cooking. You might want to turn it about halfway between the time when you put it in the fridge and the time you plan to start cooking. To cook: Truss/tie the chicken according to your rotisserie's instructions. Cook according to your rotisserie's instructions until done. Baste with more teriyaki sauce periodically during the cooking process. Once the chicken reaches a safe temperature (180 degrees), remove it from the rotisserie and let it rest on a serving dish or cutting board until it's cool enough to carve. Serve with steamed veggies and rice.

ORANGE-TERIYAKI INJECTED ROTISSERIE CHICKEN
One day I was making this marinade and wondered how it would work if injected. It was perfect! The marinade has endless variations. I like to add roasted garlic and whirl in a blender or processor. Be sure to strain it before injecting if you do this.

- Mix all marinade ingredients. Using a culinary food injector, inject chicken absolutely everywhere -- including wings and back. Use up as much marinade as possible. The chicken should be overflowing with marinade. Discard any remaining.
- Truss chicken (you could put some orange slices and garlic cloves in the cavity first, if desired). Affix chicken securely to rotisserie spit. Roast about 1 hour or until instant-read thermometer reads 170 to 180 when inserted in thigh. If possible, turn heat off rotisserie and let chicken spin 10 to 15 minutes off the heat. Or remove from spit and let rest, covered, breast side down, 15 minutes before carving.

- Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
- Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

CHICKEN TERIYAKI
Teriyaki is derived from the Japanese root words teri, to shine, and yaki, to broil or grill. That's the way traditional teriyaki looks: shiny and incised with grill marks. In Japan, teriyaki is a mix of soy sauce, sake and the rice wine mirin, which imparts a subtle sweetness. The teriyaki found throughout Seattle, of which this is an adaptation, is a bit more showy. Cooks sweeten with white sugar and pineapple juice. They thicken with cornstarch. Ginger and garlic go into the mix because of the Korean ancestry of many cooks. It is not at all traditional, but it is simple to prepare and addictive to eat. Be sure to plan ahead as you do need to marinate the chicken before cooking. An overnight stay in the fridge is ideal, but many readers have been happy with a quick marinade of an hour or so.

- In a small saucepan, combine all ingredients except cornstarch and chicken. Bring to boil over high heat. Reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool. Discard cinnamon stick and mix in 1/2 cup water.
- Place chicken in a heavy-duty sealable plastic bag. Add soy sauce mixture, seal bag, and turn to coat chicken. Refrigerate for at least an hour, ideally overnight.
- Remove chicken and set aside. Pour mixture into a small saucepan. Bring to a boil over high heat, then reduce heat to low. Mix cornstarch with 2 tablespoons water and add to pan. Stir until mixture begins to thicken, and gradually stir in enough water (about 1/2 cup) until sauce is the consistency of heavy cream. Remove from heat and set aside.
- Preheat a broiler or grill. Lightly brush chicken pieces on all sides with sauce, and broil or grill about 3 minutes per side. While chicken is cooking, place sauce over high heat and bring to a boil, then reduce heat to a bare simmer, adding water a bit at a time to keep mixture at a pourable consistency. To serve, slice chicken into strips, arrange on plates, and drizzle with sauce.
