THE BEST TERIYAKI BEEF JERKY
I am a beef jerky lover. I noticed that Recipezaar does not have too many choices and when I look for ones using Google, it is overwhelming to find one out of millions.....So I decided to create my own and let me tell you...this is the best jerky I have ever had and am glad I can share it with all of you. Plus, this was made in a conventional oven! Please let me know your thoughts by commenting after you make it. Thank you.

Steps:
- Flash freeze beef for 20 minutes on cookie sheet during ingredient mixture.
- Mix ingredients in extra large bowl with whisk until completely blended.
- If beef is more than one inch thick, slice across to create equal thickness.
- Cut beef between 1/8 - 1/ 4 inch thick slices, in addition to trimming as much fat off the meat as possible.
- Incorporate beef into ingredients to cover.
- Marinate beef overnight.
- Pat dry beef slices and skewer beef onto bamboo, ensuring small space between slices for thorough dryness and leaving one inch on each end.
- Hang beef skewers across oven rack so beef hangs freely.
- Cover entire oven rack with skewers of meat.
- Place aluminum foil on oven rack #2 at very bottom of oven to help catch drippings.
- Set oven to lowest temperature (170 degrees in my case) and leave door ajar on hinge, letting beef sit for approximately 5-6 hours or until dry.
- Check beef a few times throughout to ensure it is not actually baking, but simply drying out.
- Once finished,
- Let beef skewers rest for 10 minutes after drying, and then remove skewers from oven rack and let sit on tray until cool.
- Remove beef strips from skewers and store them in an airtight container.

DAD'S JERKY MARINADE
My dad has been making beef jerky for about as long as I can remember. He started on an outdoor smoker before graduating to an indoor dehydrator. He has gotten my husband addicted to it. You can use any type of meat that you like. I usually look for large inexpensive roasts with as little fat and marbling as possible.

Steps:
- Slice the meat into ⅛ - ¼ inch thick pieces, removing as much visible fat as possible. Place in a large zip-top bag and set aside.
- Mix the soy sauce, mirin, brown sugar, minced ginger & garlic, salt, and Prague powder, if using, in a small bowl until the sugar dissolves. Pour into the zip top bag with the meat, taking care to ensure that the meat is evenly coated. Place in the fridge to marinate 12-24 hours.
- After the meat has marinated, place the strips onto your dehydrator trays. Sprinkle with sesame seeds. Dehydrate at 160F for 4-6 hours, until the meat has dried. The general rule of thumb is if you bend a piece and it cracks, it's done - if you bend a piece and it breaks it's been cooked too long.
- Remove from the dehydrator and set aside to cool completely before sealing in a bag or tupperware.
- Jerky that has been marinated with Prague powder or Instacure will last a few weeks in a sealed bag at room temperature. Jerky marinated without any cure will last two weeks in your fridge.

TERIYAKI-JERK MARINADE
I wanted something different than the usual teriyaki sauce/marinades so I came up with this recipe. I have used it on both pork and chicken. Both came out really good. The longer the marinade sits in the refrigerator, the better it gets. I let mine sit in the refrigerator overnight before putting it on the meat and then let the meat marinade in it for several hours or overnight. The jerk sauce in the recipe gives the marinade a bite and enhances the teriyaki sauce. Cooking time is refrigeration time. I do not know how many pieces of meat or chicken the marinade with cover.

Steps:
- Mix all of the ingredients together in a bowl and refrigerate for 8 hours or overnight before using.
- For meats, I have used pork steaks and chicken thighs but you could probably use beef steaks as well and have them come out just as good.
- When you are ready to use the marinade, put pork steaks. beef steaks or chicken pieces into a large soup bowl or gallon sized food storage bag.
- Pour marinade over the desired meat/poultry and marinate for 8 hours or overnight.
- Steps 6-12 are optional and are for meats that I have used for this recipe.
- For pork steaks: Put pork steaks and sauce in a heated skillet.
- Bring to a boil, cover with a lid and turn heat down to medium-low.
- Simmer for 30 minutes or until pork steaks are done and tender.
- Serve with baked potatoes.
- The marinade is really good spooned over the baked potatoes.
- For Chicken: Grill on outside grill or counter top grill, occasionally turning and basting with marinade, until done.
- Serve with Marco Polo Noodles or rice.
- The following steps are optional as well so the 2 ingredients for them are NOT listed in the Ingredients list.
- If you have leftover marinade, and want a gravy, pour it into a sauce pan.
- Bring to a boil, cover with a lid, lower heat, and simmer for about 10 minutes.
- In a coffee cup or measuring cup, Mix 4 tablespoons of water with 2 tablespoons of cornstarch.
- Slowly pour mixture into marinade, stirring or use a wire whisk, until thickened (there may be some leftover cornstarch/water mixture).
- Pour over chicken and Marco Polo noodles or rice.
- For beef steaks: Grill until desired doneness and serve the way you want to.
- I am sure they would be good with baked potatoes too with some of the marinade spooned over them.

- Pick a lean cut of beef and trim off all visible fat. After trimming the fat, place the beef in the freezer for an hour or two to partially freeze.
- While the meat is hardening in the freezer, add all ingredients in a plastic bag or container with a tight fitting lid.
- After meat has hardened, but is not fully frozen, take out of freezer to slice. Using a sharp knife, slice the meat 1/4" to 1/8" thick with or against the grain.
- Add beef strips to your marinade and shake the container coating evenly. Allow 6-24 hours to marinate the jerky. Shake the container every couple hours to allow the marinade to evenly soak in to each piece of meat.

- Marinate the beef. Transfer the sliced beef to a gallon sized zip top bag and pour in the ingredients for the marinade. Massage the marinade into the meat and refrigerate for at least 8-12 hours, or up to 24 hours.
- Preheat your oven or smoker. Preheat your smoker or oven to approximately 170 degrees F. Follow any preheating or preparation instructions if using a dehydrator.
- Smoke the marinated meat. Remove the meat from the marinade and dry each strip thoroughly by laying on paper towels. Transfer the strips to the grill grate, jerky rack, or cooling rack and smoke/cook for 2-3 hours (depending on the thickness of your slices, some thicker pieces can take 4-5 hours). Check often after the first hour to be sure your jerky is drying evenly. You may need to move pieces around on the grates if some are dying faster than others. You are looking for jerky that is firm and still slightly pliable, but not soft and squishy. If you bend your jerky and it breaks, you've cooked it a little too long.
- Steam the jerky, store, and enjoy. Place the finished jerky in a gallon zip top bag while it is still warm. Don't seal closed all the way. The jerky will steam in the bag slightly and this step will make the jerky moist. The jerky will last 2 weeks in the fridge.
TOP 10 PORK MARINADE RECIPES - THE SPRUCE EATS
From thespruceeats.com
- Pork Chop Marinade. This Asian-style marinade works well on all cuts of pork but yields particularly moist and tasty pork chops. It is reminiscent of a teriyaki marinade with a hint of heat from the chili sauce.
- Pineapple Marinade. This sweet, fruity marinade works great on any cut of pork. You'll get a great Hawaiian-teriyaki flavor, perfect for when you're serving a simple pork-over-rice dish.
- Pork Chop and Tenderloin Marinade. Ideal for either chops or tenderloin cuts, this Asian-inspired marinade combines the best of savory flavors (peanuts, soy, and Worcestershire sauce) with fresh ginger and earthy liquid smoke.
- Jamaican Jerk Marinade. Jamaican jerk seasonings and jerk rubs provide amazing Caribbean flavors to the outsides of meats, but our marinade gets that great jerk flavor deep into the meat.
- Mustard-Vinegar Marinade. Like a delicious mustard-based salad dressing, this marinade is a nice break from the typical. The acidity of the vinegar and Dijon mustard tenderize the meat, adding flavor while the porks marinates.
- Teriyaki Marinade. Avoid all the preservatives in store-bought Teriyaki sauces by making your own in a snap. Our marinade doubles as a sauce. Simply cook it until it's thickened and use on top of your cooked pork or any other meat.
- Boston Butt Injection Marinade. Injecting is a method for adding flavor and moisture right into the meat. They're great in pork roasts that will be smoked and pulled, but you need to grind the herbs and spices in the sauce carefully so they won't clog the injection needle.
- Pork Rib Marinade. By using a pre-made pork rub and combining it with vinegar and water, the rub "magically" turns into a marinade! This is a great way to add flavor to ribs, regardless of how they are cooked.
- Bourbon Marinade. This sweet bourbon marinade is amazing on any type of meat. Although it is comprised of strong flavors like bourbon, brown sugar, mustard, oil, and Worcestershire sauce, the end result is actually somewhat mild.
- Pork Marinade for Stir-Fry. Our quick Chinese marinade for stir-fry will add wonderful notes of sherry (or Chinese rice wine) to your pork. If you're pressed for time, use this recipe and have wonderfully flavorful pork in no-time.
