TUNA TERIYAKI KABOBS

1-1/2 pounds tuna steaks, cut into 1-1/2-in. chunks
2 medium sweet red peppers, cut into 1-in. pieces
1 large sweet onion, cut into 1-in. pieces
MARINADE/DRESSING:
1/4 cup minced fresh cilantro
1/4 cup sesame oil
3 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons extra virgin olive oil
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
SALAD:
1 package (5 ounces) fresh baby spinach
1 medium sweet yellow pepper, cut into 1-in. pieces
8 cherry tomatoes, halved

Steps:

  • Thread tuna chunks onto 4 metal or soaked wooden skewers. Thread pepper and onion pieces onto 4 more skewers. Place skewers in a 13x9-in. baking dish., Whisk together marinade ingredients. Reserve half of mixture for salad dressing. Pour remaining marinade over skewers; refrigerate, covered, 30 minutes., Grill kabobs, covered, on a greased grill rack over medium heat, turning occasionally, until tuna is slightly pink in center for medium-rare (2-3 minutes per side) and vegetables are crisp-tender (10-12 minutes). Remove tuna kabobs from direct heat and keep warm while vegetables finish grilling., For salad, toss spinach, yellow pepper and cherry tomatoes with reserved dressing. For each portion, serve a tuna kabob and vegetable kabob over salad.

1 lb swordfish steaks or 1 lb skinless chicken breast half
1 large red bell peppers (or mix of both) or 1 large green bell pepper (or mix of both)
4 green onions
1 (8 ounce) can pineapple chunks (optional)
1 (5 ounce) package chicken and broccoli flavor Rice-a-Roni
1 1/2 tablespoons soy sauce
2 tablespoons dry sherry or 2 tablespoons water
1 tablespoon sesame oil
1 garlic clove, minced

Steps:

  • Cut fish, red or green pepper, and onions into 1 inch pieces.
  • Alternately thread fish, red or green pepper,onions, and pineapple chunks, if using, onto 4 large skewers; set aside.
  • Prepare Rice a Roni mix as package directs.
  • While rice is simmering, combine soy sauce, sherry, oil and garlic.
  • Brush kabobs with soy sauce mixture.
  • Grill over medium coals 14 minutes or broil 5 to 6 inches from heat 10 minutes, or until seafood is opaque, turning once and brushing with remaining soy sauce mixture.
  • Serve rice topped with kabobs.
  • Enjoy!

TERIYAKI GINGER TUNA SKEWERS

15 ounces teriyaki sauce (average 2 grams sugar per serving)
3 ounces sesame oil
1 tablespoon fresh ginger, minced
1 teaspoon fresh garlic, minced
1 lemon, juiced
1 tablespoon sugar substitute (recommended: Splenda)
2 pounds fresh tuna steak, cut into 1-inch cubes
1 tablespoon sesame seeds, toasted

Steps:

  • Soak bamboo skewers in water for 30 minutes to 1 hour. (This will keep them from burning later). Mix all marinade ingredients together in a bowl. Submerge tuna cubes in marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat a grill or grill pan to high.
  • Remove tuna from marinade and skewers from water, and thread tuna onto skewers. Place skewers on the edges of the grill with the longest part of the stick hanging off the edge away from the fire. Stay close by and turn the sticks by hand to keep from burning. Brochettes are done in just 3 to 4 minutes.
  • Sprinkle with sesame seeds before serving.

This a recipe that I cut out of a magazine, I think TOH, but not sure. It has ingredients that I have on hand all the time and I love teriyaki flavored meats. This would be great served with rice or a potato dish and salad. Time to make doesn't include marinade time.

1/3 cup soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon seasoning salt
1 1/2 lbs boneless sirloin steaks, cut into 1 1/4 inch cubes
12 fresh mushrooms (whole)
1 large green pepper, cut into pieces
1 large onion, cut into wedges
12 cherry tomatoes

Steps:

  • In a bowl, combine soy sauce, oil, brown sugar, garlic, ginger and salt; mix well. Pour half of the marinade into a large resealable plastic bag; add beef and turn to coat. Seal; refrigerate for 4-8 hours, turning occasionally. Cover and refrigerate remaining marinade.
  • Drain meat, discarding marinade. On metal or soaked wooden skewers, alternate meat, mushrooms, green pepper, onion and tomatoes.
  • Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness.

Hawaiian Teriyaki Shish Kabobs Two Ways (with Field Roast or Beef and Chicken Sausage) image

A sweet and savory marinade adds flavor to colorful bell peppers, button mushrooms, sweet onion wedges, and fresh hunks of pineapple plus slices of Field Roast for the vegetarian or vegan; sirloin and chicken sausage for the meat-eaters. Note: This recipe requires some make-ahead steps, so please be sure to read through the directions before starting the recipe!

1 cup soy sauce
½ cup vegetable oil
1/4 cup pineapple juice + 1/2 cup pineapple juice (divided)
3 tablespoons brown sugar
2 tablespoons dry sherry
4 medium cloves garlic (minced (about 1 tablespoon))
2 tablespoons minced fresh ginger root (about one thumb-sized hunk)
1/2 teaspoon dry mustard
1 tablespoon cornstarch
2 tablespoons water
1/2 pound white button mushrooms (wiped clean with a damp paper towel)
1 small green bell pepper
1 small red bell pepper
1 cup fresh pineapple chunks (about half a small pineapple)
1 medium sweet onion (cut into large wedges (cut in half, then quarters, then eighths))
Cooked rice to serve alongside (if desired)
1 Field Roast "sausage" link (I like the smoked apple sage flavor for this recipe, cut into 1-inch slices)
1/2 pound petite sirloin (cut into 1-inch square chunks)
1 sausage of your choice (my guy likes Aidell's pineapple bacon chicken sausage, cut into 1-inch slices)
12 12- inch wood/bamboo skewers
Outdoor bbq or grill pan

Steps:

  • In a medium bowl, whisk together the soy sauce, vegetable oil, 1/4 cup pineapple juice, brown sugar, sherry, garlic, ginger, and dry mustard until blended. Reserve 1 1/2 cups for basting and marinating.
  • Place the remaining marinade in a small saucepan. Add 1/2 cup pineapple juice and heat over medium heat, uncovered, stirring frequently to prevent scorching. Stir cornstarch and water together in a small bowl. As soon as it comes to a boil, whisk in cornstarch and water, stirring constantly until sauce thickens. Remove from heat and allow to cool, then refrigerate in a sealed container until ready to serve.
  • Place cut-up steak in a quart-size or larger zip bag. Pour 1/2 cup of marinade over the steak and seal well, swishing the meat and marinade to help ensure even coverage. Place in the refrigerator for at least 2 hours (up to 12 hours).
  • Soak the skewers. Fill a long baking dish about 1/3 full with water and lay skewers in the water. Allow to soak for about 15 minutes. This helps prevent the skewers from burning once on the grill.
  • Carefully thread veggies, pineapple, and Field Roast or meat onto skewers in whatever order you like. I like to use bell peppers on the ends because they help keep everything on.
  • Heat your grill to about 350 - 375 degrees (medium direct heat). Place shish kabobs on grill. Baste with the reserved marinade (segregating portions for meat/non-meat kabobs if desired). Cook, turning occasionally to help ensure even cooking and continuing to baste occasionally, for about 15 minutes until vegetables are tender and meat is cooked through.
  • Serve with rice (if desired) and teriyaki sauce for dipping/drizzling as desired.

SHRIMP TERIYAKI KABOBS

You can add bell pepper or onion to these kabobs. I served them at a party so I used the 21-25 count shrimp and they were devoured. Can be an appetizer or a main dish, depending on your presentation.

1 lb large shrimp, shelled and deveined (I used 21-25 per pound)
1/3 cup teriyaki marinade (homemade or bottled)
1 green onion, finely chopped
1 -2 garlic clove, finely minced
1 teaspoon lemon zest
1/2 teaspoon sugar
1 (20 ounce) can pineapple chunks (I used the chunks in pineapple juice, not heavy syrup)

Steps:

  • In a large zip-lock bag combine teriyaki sauce, onion, garlic, sugar, zest and a splash of pineapple juice from the chunks.
  • Add shrimp and toss to coat.
  • I let them set in the fridge all day till I was ready to skewer them to grill.
  • Be sure and soak your skewers if you are using wood!
  • Place a pineapple chuck in the curve of each shrimp and place on a skewer, going through the "head" of the shrimp, the pineapple and then the "tail".
  • I was able to get about 4 on each skewer.
  • Grill about 2-3 minutes on each side or until shrimp is pink.
  • You can baste with the marinade if you want but I did not.
  • You can also broil this if you don't have a grill.
  • I removed from the skewers for my guests but would probably serve on skewers if I had fancy ones.

1 cup reduced-sodium soy sauce
1 cup ketchup
2 teaspoons garlic powder
2 teaspoons ground ginger
2 pounds beef top sirloin steak, cut into 1-1/2-inch cubes
2 to 3 small zucchini, cut into 1-inch slices
1/2 pound medium fresh mushrooms
1 large green or sweet red pepper, cut into 1-inch pieces
1 small onion, cut into 1-inch pieces
2 cups cubed fresh pineapple

Steps:

  • For marinade, mix first five ingredients. Place beef and half of the marinade in a large resealable plastic bag; seal bag and turn to coat. Cover and reserve remaining marinade. Refrigerate beef and marinade overnight., On metal or soaked wooden skewers, thread vegetables and, on separate skewers, thread beef with pineapple. Discard remaining marinade in bag. Grill, covered, over medium heat until vegetables are tender and beef reaches desired doneness, 12-15 minutes, turning occasionally., In a small saucepan, bring reserved marinade to a boil, stirring occasionally; cook 1 minute. Remove vegetables, pineapple and beef from skewers before serving. Serve with sauce.

Steps:
